Angry Wings

I was big time happy with these angry chicken wings. ‘Angry’ because they pack a little kick, but not so much that your mouth is on fire. A very nice kick. This was my first time cooking with gochujang chile paste, and I really loved it. It’s sort of savory, sort of sweet, and sort of spicy. It contains fermented soybeans but the flavor isn’t overwhelming. A little gochujang does go a long ways, but it sure makes for one fantastic wing sauce.

Spread The Angry Around

The angry chicken wing sauce would also be good on grilled pork chops or grilled ground chicken or turkey burgers. Just dab a little on top before you dig in. If you make the sauce ahead of time and keep it in the fridge, it might thicken up a bit. Just add a few drops of water and stir to get the desired consistency.

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

Ancho Peach Wings

I was sad. Sad because I definitely did not make enough wings. Tossed with ancho peach sauce, these wings were so good it would be almost impossible to eat too many. Slightly smoky. Slightly sweet. And a little heat. And the perfect consistency to stick to the wings and not to the bottom of the plate. Grab some napkins and get ready… there’s nothing but great stuff here!

Try different preserves

Apricot preserves also make for a great ancho wing sauce, so feel free to mix things up a bit. I strongly recommend doubling the sauce. Any leftover can be used on grilled chicken, smoked ribs, pulled pork, you name it. It’s just all-around great and not just on ancho peach wings.

Alfredo Chicken Wings

These Alfredo chicken wings are proof that sometimes its a good idea to step outside of your wing comfort zone and try something you’d never thought you’d try. Sure, I’m a big fan of chicken alfredo. It’s on my menu rotation often around here. But for some reason I’d never thought of saucing wings in that wonderfully creamy rich sauce. Well, let me tell you folks! These are great wings! Totally different. Totally great! And boy, talk about a ‘wow’ factor!

You can cook the wings any way you want. Oven. Deep fryer. Air fryer. It doesn’t really matter. Just get them in that delicious, creamy, rich cheesy sauce and get to eating! (And smiling!)

Alfredo Chicken Wings

Homemade. Or From A Bottle.

I’ve included the ingredients and steps to make a quick and easy Alfredo sauce from scratch. And it’s great stuff on these Alfredo chicken wings. But you don’t have to make your own if you don’t want to. Just grab a bottle of your favorite sauce from the store and warm it up. Boom. Instant creamy wing sauce. Who knew?

Just A Tad, Thanks

Now, I like a good bit of sauce on my chicken alfredo. But on my wings, I went a bit lighter. I still wanted to taste that delicious wing. Next time, I might serve a little extra warmed sauce on the side, for dipping. Heck, ‘might’ nothing. I will.

For the wings

  • Note: These instructions are for cooking the wings in the oven. You can cook the wings any way you like, like in an air fryer or deep fryer, and coat in the sauce before serving.
  • Preheat oven to 375 F.
  • Season the wings with salt and pepper. Place on a foil-lined baking sheet that has been lightly sprayed with non-stick spray.
  • Bake wings for 20 minutes.
  • While the wings are cooking make the sauce. Keep the sauce warm while the wings finish.
  • Flip the wings and bake another 20 minutes.
  • Flip one more time and finish cooking for 15 more minutes.
  • If you want more crisp or color to your wings you can place them under the broiler for a few minutes. Keep an eye on them while using the broiler.
  • Transfer wings to the sauce (working in batches as needed) and turn to coat.
  • Serve garnished with chopped parsley and more parmesan.

For the sauce

  • Melt the butter in a medium pan over medium heat.
  • Slowly whisk in the whipping cream.
  • Season with salt and pepper, stir and let come to a slow boil.
  • Turn heat down to low and let simmer 3-5 minutes or until the sauce thickens.
  • Add the cheese and stir.
  • Keep warm until ready to use.

Notes

You can substitute 2 cups of store-bought Alfredo sauce. Just warm it slightly while the wings are cooking.
If you like your wings extra saucy you may want to double the sauce recipe. You can always use any leftover sauce (if there is any) over pasta.

Aji Amarillo Wings

Aji amarillo is an orange-colored pepper from Peru. I haven’t been able to find it in the US in pepper-form, but you can find a paste made from pureed aji peppers in some foreign food markets. Aji amarillo rates between 35,000 and 50,000 on the Scoville scale, meaning it’s about as hot as Tabasco sauce. It has a nice fruity flavor that reminds me a bit of habanero, but without the scorching heat. I encountered aji amarillo often in dishes throughout Peru when I lived there long, long ago.

Aji pepper flavor

Since I love chicken wings, I decided to cook up a batch and instead of saucing them with just a traditional Buffalo sauce, I made a variation that adds aji amarillo paste. The end result was just a bit spicy, with a fantastic fruity pepper flavor.

Kick it up!

These were fantastic wings, and definitely a nice twist on the usual. If you like your wings to be a bit spicier, just add more of the aji amarillo paste. Since it’s not overwhelmingly hot you don’t have to worry about a-little-goes-a-long-ways: you can add quite a bit and still get great flavor without burning the roof of your mouth.

Adobo Buffalo Wings

Nothing makes me happier than discovering a wing sauce that can be used on much more than ‘just’ wings. The sauce on these adobo Buffalo wings packs some mild heat, just enough and just right. There’s a little sweetness, a little smokiness, and my favorite, a hint of soy sauce. Each bite is a wonderful combination of flavors.

The sauce on these adobo Buffalo wings is thick, thick enough for sticking to smoked or grill ribs, chicken, burgers… you name it. I’d definitely recommend doubling the sauce.

For the glaze

  • Combine all ingredients except for the cornstarch in a large saucepan over medium-high heat. Bring to a boil then reduce to a simmer and continue simmering, stirring, for 15-20 minutes.
  • Add salt to taste.
  • Combine the cornstarch with water. Slowly whisk into the glaze.
  • Remove from heat and let cool slightly before pouring thru a whisk.
  • Keep warm over low heat until ready to use. If too thick stir in a little (very little!) water a time to get the desired consistency.

Notes

If you end up with leftover sauce, just place it in a resealable container in the fridge. Warm the sauce over medium heat before using.

Taco Sauce Wings

I wasn’t really bored with my usual hot sauce-based wing sauces. Heck, I have tons of different hot sauces I can use to make a quick good wing sauce. Nope, I just happened to open the fridge, saw a bottle of taco sauce, and made the quick decision that I needed it on some wings. And that’s what I did. I made taco sauce wings. Good wings made better with a little spiciness and great flavor. Nothing fancy. But tasty.

Which Way To Go?

Your taco sauce wings can take a few different directions. Mild. Medium. Hot. You can make the mild milder. Or the hot hotter. It’s up to you. Just vary the amount and style of taco sauce, and the amount of butter. Easy. Uncomplicated.

Want More?

If you want, you can add a little more ‘stuff’ to your taco sauce-based wing sauce. A pinch of cayenne stirred in is a good place to start. Some chile powder doesn’t hurt either. Heck, sneak in some Fajita seasoning. Just don’t go crazy with it. Add it, but don’t make it overwhelming.

British Pub-Style HP Brown Sauce BBQ Wings

It didn’t take me long to become a huge fan of HP Brown Sauce. To describe it I guess I’d call it like a thick A-1 steak sauce. But also kind of Worcestershire-sauce like. It’s almost like a BBQ sauce, but without the seasoning. Add a few extra ingredients and it makes for a tremendous wing sauce. These British pub-style HP sauce BBQ wings take little time to prepare. And even less time to devour. I loved them!

I loved using a honey BBQ sauce that had a little smokiness to it. Use a spicy sauce for even more heat. The HP brown sauce is a wonderful base that you can tinker with a bit. No matter what, you’ll love the sauce.

Oh yes, this sauce is fantastic on smoked pulled pork or ribs and of course, chicken!

Easy Steakhouse Wings

I actually surprised myself. I was not expecting to fall in love with these easy steakhouse wings. Heck, I thought they’d be too ‘steak-saucy’. You know, like that time as a kid when you dumped half a bottle of steak sauce on your steak at Howard Johnsons. Ok, maybe that was just me. But still, too much steak sauce is…. too much… for me. But not here. I loved these wings. I went light on the sauce and the flavor came out perfect.

Easy Steakhouse Wings

Air-Fried Wings Or Whatever Wings

I made a batch of my standard air-fried wings when I made some easy steakhouse wings for lunch. You can also toss them into the oven at 400 F for 30-40 minutes. Or deep fry them. Whatever you want. The key here is to make wings that aren’t going to ‘fight’ the steak sauce. No fancy seasonings. Keep it simple. Salt and pepper is all you need. Just like cooking a steak, fancy is not required.

  • Lightly spray the basket of your air fryer with non-stick spray. Preheat per manufacturer’s recommendation.
  • Toss the wing flats and drumettes with salt and pepper.
  • Add the wings to the basket (be careful it’s hot!). If you have trouble fitting them without overlapping, stand the drumettes along the sides of the basket.
  • Cook at 360 F for 12 minutes for large wings, 10 minutes for smaller ones.
  • Carefully flip the wings (rotate the drumettes if they are standing) and cook another 12 minutes again (10 minutes for smaller wings) at 375 F.
  • Flip the wings one last time. Increase the temperature to 390 F and cook another 6 minutes (4 minutes for smaller wings).
  • Remove wings to a bowl and drizzle with steak sauce. Toss to coat.
  • Serve.

Roasted Honey Chicken Wings

I’m usually a little leery of baked wings that are marinaded in anything with sugar or honey in it. High heat tends to make the marinaded skin char easily. That’s why I went into making these roasted honey chicken wings with a little bit of worry. Well, whew, they came out great! Oh yeah, a little longer in the oven would’ve been bad news, but the cook time was spot-on. I ended up with super-tasty wings that were cooked just right. No char flavor at all, just yumminess! Lightly sweet, with a Asian-inspired taste, these are really great baked wings.

Turn Once And Enjoy

The process for making these roasted honey chicken wings is pretty straightforward. Make marinade. Add the wings. Go do something for 3 hours. Come back. Put the wings in the oven. Flip the wings once while cooking. Eat. Seriously, how much easier can you get?

I used a silicone mat on a baking sheet when I made these wings. The nice thing about it is that it saves me a few cents on foil. The downside is there is a little cleanup involved. Foil works just fine and honestly, I’m leaning towards using that the next time. You could use parchment paper instead if you want.

Crispy and Juicy Oven-Baked Chicken Wings

According to my calculations, these crispy and juicy oven-baked chicken wings were 16.8 times better than I’d ever expected. Or hoped for. I could not get over how much I loved these wings. That’s saying a lot because I’m not always a baked wing fan. Well, out the window goes that thought because these wings were flavorful, lightly crispy, and just flat-out great.

Saucy. Or Not…

I tossed my crispy and juicy oven-baked chicken wings in a little bit of bottled Buffalo wing sauce before serving. I used very little sauce. The flavor on the wings is so great that I didn’t want to bury them. I could’ve easily just served them right out of the oven, sans sauce as we say. These wings would be perfect for a party. Easy to make, and delicious. And, by using different sauces, you can satisfy anyone’s tastes.

  • If desired, place the wings under the broiler for 2-3 minutes to brown slightly. NOTE: This only applies if you are using aluminum foil. DO NOT put silicone mats under the broiler.
  • Remove wings and transfer to a large bowl. Drizzle with the sauce and toss to coat. Click here for our guide on how to sauce your wings.

Notes

Serve with your favorite dipping sauce on the side, if desired.
Substitute smoked paprika for a smoky flavor.
Add cayenne (a teaspoon or so) for a little heat.
