Deep-Fried Dill Pickle Wings

Dill pickle. More dill pickle. And then, yes, even more dill pickle! These deep-fried dill-pickle wings satisfied my dill pickle craving in four ways! A wonderfully-seasoned fried wing coated in flour and of course, dill pickle seasoning. Sprinkled with more seasoning hot out of the fryer. A little cool dill pickle dipping sauce. And of course, a few dill pickle slices. These are my kind of dill-icious wings!

Light On The Batter, Heavy On The Flavor

I didn’t go crazy with the batter on these deep-fried dill pickle wings. Just enough to get a good little crunch in every bite. And lots of dill flavor. I seasoned the flour heavily. I wasn’t shy at all. Experience has taught me that more is always better when it comes to seasoning flour. After all, these aren’t called deep-fried flour wings. So load up on the dill pickle yumminess!

Deep-Fried Dill Pickle Wings

Instructions

For the creamy dill pickle dipping sauce

  • Combine all ingredients. Refrigerate until ready to use.

For the wings

  • Combine the flour and seasoning in a large bowl.
  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the flour mixture and turn to coat well. Transfer to a plate and place in the fridge for 30 minutes.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.
  • Remove wings to a bowl and sprinkle with more of the seasoning. Toss to coat.
  • Serve.

Notes

For even more dill flavor, season the naked wings with the dill pickle mix and let set it at room temperature for 30 minutes before battering and frying.

I’m a huge fan of dry wings. It’s hard for me to resist super-seasoned wings with that great crunchy skin. Usually, I season my wings before cooking and then again after for extra flavor. For these wings, however, I go with one good, healthy seasoning beforehand. That’s it. No post-cook seasoning required or needed. These are great wings without it.

Instructions

  • Combine the Dan-O's seasoning and garlic salt.
  • Season the wings with the mix. Let rest 30 minutes.

For the air fryer

  • Preheat your air fryer to 350 F.
  • Working in batches if needed, air fry the wings for 12 minutes.
  • Flip the wings and air fry another 12 minutes.
  • Turn the air fryer temperature to 400 F and fry another 6 minutes or until the wings are golden brown.

For the oven

  • Preheat oven to 400 F.
  • Lightly spray a baking sheet with non-stick spray. Or line with foil.
  • Add the wings and cook 20 minutes.
  • Flip and cook another 20 minutes.
  • Check for doneness. For crispier wings, flip and cook another 10-20 minutes.

Notes

I prefer to season my wings immediately after cooking them. The seasoning will stick to the surface of the hot wings better than if you wait until they cool off.

Crispy Wings using a Griddle

Wowsa. I really wasn’t expecting that these crispy wings using a griddle would be so tasty, so moist, and so tender. Really, I’m not sure what I expected. Not greatness, that’s for sure. But I really enjoyed them. This was my first time using my outdoor griddle for wings, and I can definitely say it won’t be the last. Not even close. What a great way to make fantastic wings, with minimal fuss, and great results.

Any Griddle Will Do

I decided to make these crispy wings using a griddle using a griddle insert on my large gas grill. I could’ve used one on a charcoal grill. Or a dedicated griddle. Or even a cast iron pan on the grill would work. Heck, any place where you can heat up a bit of oil and fry some wings will produce the same great results. I’m sure I’ll try these on my griddle inside too. The only downside to making them indoors is that they will splatter a bit.

An All-Around Great Approach

The overnight dry brine of the wings is what gives them that crunchy skin. And it also imparts a lot of flavor. Don’t cut corners on it. You can use the same dry brining for cooking wings in a variety of ways, too. Not just on a griddle. These are great baked in an oven, grilled, or in an air-fryer. It’s a solid approach that won’t let you down.

Crispy Wings using a Griddle

You can't go wrong with these wings.

Instructions

  • Pat the wings dry and place in a large bowl.
  • Sprinkle the wings with salt, baking powder and garlic powder. Toss to coat.
  • Place in the fridge (uncovered!) overnight.
  • Heat your griddle over medium heat.
  • Drizzle the wings with 1 tablespoon of the oil and toss to coat.
  • Add the wings to the griddle, being careful of the oil splattering.
  • Cook the wings 20-30 minutes, flipping often, until the skin starts to darken. If the wings get too dry add a bit more oil, again watching out for splatter.
  • You want to cook the wings to at least 165 F. For the best results, though, and the crunchiest skin, cook them to 195 F or even a bit higher.
  • Remove wings and toss with your favorite seasoning add back to the griddle, turning once, for 3 minutes total.

Notes

If you’re saucing your wings with a refrigerated sauce, make sure you bring it to room temperature first or warm it over medium heat.

Crispy Air Fryer Parmesan Wings

Well, here I go again. Another wing variation that I just cannot get enough of. Give me an excuse to use a lot of Parmesan and I’m going to go all-in. And that’s what I did with these crispy air fryer Parmesan wings. Perfectly crunchy bite-thru skin. Like crazy perfect. Great by itself, but add an easy garlic-flavored Parmesan topping and I’m going full bulldog on it. I loved these wings. They are perfect!

Oh So Cheesy!

The original recipe for these crispy air fryer Parmesan wings called for adding chives. I love chives. Chives would’ve been great on these wings. But sadly, no chives were to be found near me. So I went with just a little parsley, mostly for color. I was ok without the chives since I was in town for the Parmesan!

Nice and Crispy

You can use the approach in this recipe for making crispy skin on any air fryer wing recipe. Whether you are using a store-bought seasoning or just salt and pepper, add a bit of baking soda before cooking the wings.

  • Combine all ingredients.

For the wings

  • Lightly spray your air fryer basket with non-stick spray. Preheat per manufacturer's recommendation to 400 F.
  • Place wings in a large resealable baggie or container.
  • Combine the baking powder, salt and pepper and add to the bag.
  • Seal and shake to coat.
  • Add to the air fryer basket and cook for 10 minutes.
  • Flip the wings and cook another 10 minutes.
  • Remove wings from the air fryer and place in a large bowl.
  • Drizzle with the melted butter and toss gently to coat.
  • Sprinkle with about 2/3rds of the garlic parmesan mix. Toss gently to coat.
  • Transfer to a serving platter and sprinkle with remaining garlic parmesan mix, garnish with parsley, and serve.

I personally feel like more garlic parmesan mix is better so I almost doubled it.

Blue cheese. Ranch. Blue cheese. Ranch. I don’t care which side of the fence you might be on when it comes to having a dipping sauce for your wings. Me, I switch it up depending on the wings and my mood. Today, I was in the mood for a really good, cold, kinda funky creamy cool blue cheese wing dipping sauce. And this is it. This is about the easiest sauce you can make. The only thing easier would be to just open a bottle. This is better.

The Right Sauciness

What (besides great flavor) makes this creamy cool blue cheese wing dipping sauce so good? Consistency. The right consistency. Too runny of a sauce and you end up with more sauce on your lap than you do on your wings. Too thick and you end up with a ‘fondue’ wings. You know, so much sauce you can’t even see the wings.

I use these little sauce cups for dipping my wings. They are appetizer-sized in that I can easily get enough sauce for 6-10 wings in them. And they’re just the right size for getting a wing in there, too. Boy, there’s not much worse than having a cup so small you can’t dip your wing.

Sure, I can dip wings in blue cheese or Ranch dressing all day long. But sometimes I want something a bit different. When I first came across this recipe for a creamy Asian wing dipping sauce I knew I was going to like it. There’s nothing in it that I don’t like. It’s nice and creamy. Copycat Wingstop Blue Cheese Dressing

I’m a fan of dipping wings (especially spicy ones) into a nice cooling dressing. Blue cheese, Ranch, either will do. But, when I go for the blue cheese I am a tad bit picky. I can’t do the big cheese crumbles. I love them on salads, but they aren’t really for wings. For one reason: they fall off. Smaller crumbles stick to the wings and make for a better experience. That’s why I like making a copycat Wingstop blue cheese dressing at home. I can get those crumbles just like I like them.

The Right Crumble

Now as much as I said I like the crumbles in my copycat Wingstop blue cheese dressing to be small and not huge, there’s a limit to it. Too small and you lose that great texture. Sure you’ll still get great blue cheese and Ranch flavors, but that’s about it. So don’t go crazy. We aren’t making blue cheese soup here. We do still want some thickness to it!
