Nightmare Wings

Our neighbor gave me a bottle of dried powdered Carolina Reaper pepper. I knew exactly what I was going to make with it: Nightmare wings. What I didn’t know, though, was would I survive?

Well, I’m still here! These Nightmare wings definitely packed a serious kick. But beyond that, they also had great flavor. These wings aren’t just about the heat. And if you prefer, you can certainly adjust the spiciness to your tastes. Jalapeno powder itself has just the right kick, while habanero powder brings just a bit more.

A Serious Punch. Just What You Expected.

I enjoyed my Nightmare wings ‘dry’. That is, without sauce. The rub has such a great flavor that I really didn’t want to hide it under a sauce. Now, true, I did have plenty of Ranch dressing on hand for dipping. I needed something to help cool off the heat from the Carolina Reaper peppers. At 1.5 million Scoville units, they pack a serious punch.

I like to make my spice, rub and seasoning mixes in big batches and keep them in large bottles with easy-to-pour shaker lids.

Duck Fat Chicken Wings using the Vortex

Chicken wings cooked on a charcoal grill (I love my trusty Weber grills!) using a Vortex are the best. Not only do you get great flavor and crunchy skin, you get a light (or heavy.. It’s up to you, you can control it!) smoky flavor. You can’t go wrong with them. But you can make them even better using duck fat spray. What a difference it makes, too. Duck Fat Chicken Wings using the Vortex

Instructions

  • Place the Vortex into the center of your grill and add in the charcoal. Open the bottom vents on your grill by 1/3.
  • Light a charcoal chimney full of charcoal. Alternatively you can fill your Vortex with charcoal and light them inside the unit.
  • Let the charcoal get fully ashed over then add to the Vortex.
  • If you want extra smoke flavor, place a small wood chunk or two over the center of the Vortex and let it ignite and smoke.
  • Place the wings into a large bowl. Spray lightly with the duck fat while tossing. Don't get them soaking wet, you're looking for a light coating. Think 'squirt squirt' and not 'fence painting'.
  • Add the chicken as shown in the picture above.
  • Close the grill and cook for 45 minutes. If you are using a large charcoal grill (22" or bigger) you might want to rotate the lid 90 degrees every 15 minutes. I haven't found this to be necessary on smaller (18" and 14") grills.
  • Transfer wings to a bowl and toss with your favorite seasoning and sauce as desired.

Notes

If you’re saucing your wings with a refrigerated sauce, make sure you bring it to room temperature first or warm it over medium heat.

Blonde Beard’s Chicken and Waffles Wing Sauce Wings

I’m not sure, but I might have teared up a bit the first time I saw an ad for Blonde Beard’s sauces and rubs. Everything looked so good. And the flavors? Yowsa! IPA Buffalo! Black Magic! Holy Hell! And Chicken and Waffles! I quickly cracked open the sauce, gave it a taste, went ‘mmmmm’, and drizzled it on my hot-out-of-the-fryer wings.

It’s not breakfast

The sauce is based on a mild traditional vinegar Buffalo wing sauce. Not too much heat (thanks to cayenne), but enough to be noticed. Then comes the sweetness from maple syrup. Oh yeah. My mouth was telling me I was having wings for breakfast but it was definitely lunch time.

I suspected that I’d love Blonde Beard’s Chicken and Waffles wing sauce before I ever opened it and I was right. I’m a big Buffalo sauce fan, and an even bigger maple syrup fan (it’s scary how much I can put on my waffles!). The sauce is thin, like any vinegar-based sauce tends to be, but you don’t need much to get that great mildly spicy sweetness.

Anchor Bar Barbecue Wing Sauce Wings

Of course, the Anchor Bar is famous as being the creator of what we now call traditional Buffalo wings. But, not all of their wing sauce flavors are based in vinegar or butter or hot sauce. Anchor Bar Barbecue wings are just as fantastic as the classic. Tomato based, this sauce is lightly smoky, lightly sweet, and has just a slight bit of a spicy kick to it. It’s perfect on wings.

It’s Not Just Great on Wings!

Anchor Bar Barbecue wing sauce is equally as great on a smoked rack of ribs or a grilled chicken breast as it is on deep-fried chicken wings. It has the right consistency, the right flavors to make it a great straight-up BBQ sauce.

Remember that if you have to refrigerate your open bottle of wing sauce to let it sit out on the counter for at least 30 minutes before using. You don’t want to ‘shock’ hot, just-cooked wings with a cold sauce.

Anchor Bar Hot Buffalo Wing Sauce Wings

I’m pretty sure that if you make your own wings at home, by law, you have to have a few bottles of Anchor Bar Hot Buffalo wing sauce on hand at all times. The medium heat version is a great sauce to serve a crowd. But sometimes someone, maybe you, maybe not, wants some more kick. Well, say hello to the Anchor Bar hot Buffalo wings sauce. I wouldn’t call the spicier version of the classic sauce over-the-top spicy. It’s a great sauce with a great kick. It hits you then it sneaks off, leaving you with great flavor and great wings. Anchor Bar Hot Buffalo wing sauce wings are really good. Finger-licking good. Get a few bottles and keep some on hand at all times. It’s the law!

Wing-Time Thai Chili Buffalo Wing Sauce Wings

I, like a lot of people, am a big fan of the Buffalo wing sauces from Wing-Time. They’re creamy, delicious, and come in different heat levels so they’re great for anyone and any occasion. So I was excited when I came across the Wing-Time Thai Chili Buffalo wing sauce in the grocery store. But, honestly, the first taste killed that excitement pretty quick. For a Buffalo sauce, this is another great sauce. But I got no Thai Chili flavor at all. I tried, too. I even asked others to taste it. Nothing. What happened? I don’t know. So, good Buffalo sauce, but not a Thai Chili sauce in my opinion.

I’m Kinda Sad. Actually, I Am Sad.

I couldn’t find any contact info for Wing-Time online. Their website is gone. Their Facebook page is inactive. Fortunately, though, the manufacturer of their sauces, Allied Old English, is still around (but didn’t respond to a DM on FB). Boy, I sure hope this means that their sauces will still be available online and in stores. I also hope that my experience with the Wing-Time Thai Chili Buffalo wing sauce was a fluke! Because I sure do love their other sauces. Maybe my bottle got mis-labelled!

True story. Goldilocks and the Three Bears was originally written about Nashville hot wing sauces! Wing Master Ranch Wing Sauce Wings

Whenever my wife and I are in the Gatlinburg, Tennessee, area we always make it a point to swing by a Pepper Palace store. They have several stores in the area, including a new one in Sevierville in an area called The Island. We also usually end up at one of the stores in downtown Gatlinburg. The stores always seem busy. People everywhere are enjoying samples of the hot sauces and salsas, from the hot to the mild. Me, I headed straight to the wing sauces and in particular, Pepper Palace’s own line of Wing Master sauces, including this Ranch wing sauce.

So, as soon as we returned from our trip I threw a few seasoned wings onto my Weber Performer grill outfitted with the Vortex insert. When the wings were done I tossed them with the Ranch sauce and dug in. The sauce is mellow with a hint of Ranch flavors. There’s a slight wing sauce kick, but again, not overwhelming. It’s a very enjoyable sauce, that won’t scare off anyone that doesn’t like hot hot wings.

A Wonderfully Tasty Mellow Sauce

Pepper Palace has a wide range of sauces, from the extremely hot to the nice and mellow. The Ranch wing sauce is nice and mellow with not a lot of heat. I seasoned the wings with your standard Ranch dressing seasoning mix, which complimented the sauce flavors perfectly. And since I was on a Ranch theme, might as well have some Ranch salad dressing for dipping!

Pepper Palace makes a ton of great sauces and seasonings, not just for wings. Find a store near you and spend an hour or two wandering the shelves. They always have an area where you can sample sauces and spices, too. It’s like flavor heaven. Instead, if there’s not one near you, take a road trip (it’ll be worth it) or order online.

If you’re a fan of Nashville hot chicken (and boy, am I ever) and you’re in the market for an organic alternative to the other Nashville hot chicken wing sauces on the market, then Whole Foods Organic Nashville wing sauce is right up your alley. If I am serving my wings with Ranch or blue cheese or some other sauce, I use these little sauce dipping cups. They’re the perfect size for dipping wings, nuggets, tenders and even vegetables. And they’re easy to clean, too!
