It pays to branch out when looking for new wing sauces. Make your own. Buy the national brands. Try a few local ones too. And absolutely, positively make sure you seek out great wing joints that also sell their sauces. The best sauces often come from smaller market restaurants and bars. They pay attention to taste and quality. They have to. There’s a lot of competition out there. You gotta make good stuff to stand out and succeed. And that’s how I came to find The Dirty Buffalo, a more-than-just-a-wing-joint around Norfolk, Chesapeake and Virginia Beach in Virginia. So I ordered a huge bunch of their sauces. Darned near everything they make. And oh, was I excited when they arrived and I made my first batch of wings: The Dirty Buffalo Hot Buffalo wing sauce wings. This (and the rest I got from them) is one fantastically great sauce. THIS is why you seek these places out.

Deep-Fried For Wing Perfection

I started out with my favorite deep-fried wings. You can make any wings you like. Just don’t go seasoning them so heavy that you’re going to bury the flavor and heat from these The Dirty Buffalo hot Buffalo wing sauce wings. The sauce is the winner here. A big winner.

Great Heat. Great Flavor.

The balance between heat and flavor is perfect in this sauce. This is easily one of the best kicked-up Buffalo wing sauces I’ve had. Traditional flavor, perfect consistency and the right amount of heat. I loved it. I’m glad I picked it first from my big box of bottled sauces. This is one great start on my journey through the sauces from The Dirty Buffalo.

Remember that if you are using a refrigerated sauce on your hot wings, make sure you let the sauce come to room temperature before using it. Nothing is sadder than a cold sauce on a hot wing.

  • Combine the flour, salt, cayenne and paprika in a large bowl.
  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the flour mixture and turn to coat well. Transfer to a plate and place in the fridge for 30 minutes.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.
  • Transfer wings to a large bowl. Drizzle with the sauce and toss gently to coat. Serve with blue cheese or ranch dressing. Click here for our guide on how to sauce your wings.

If you prefer to air fry your wings, use my extra-crispy air fryer wing recipe to cook the wings then sauce with the Dirty Buffalo sauce when done.

I’m not really sure what happened. I had made a batch of wings for my lunch like I so often do. I sauced them. And I swear I blinked and they were gone. Just bones left. I checked under the table and nothing. That’s what happens when you make these The Dirty Buffalo Garlic Lemon Pepper wing sauce wings at home. I’m pretty sure it happens at the restaurants too. They’re probably used to it by now. Man, is this ever a great sauce. And a bit different too.

Seek Out Something New

This is not a Buffalo wing sauce. These are not Buffalo wings. These The Dirty Buffalo Garlic Lemon Pepper wing sauce wings are kissed lightly with garlic. And lemon. Ditto, just the right amount. And pepper. Plenty of it but not too much. You might think you’re putting salad dressing on your wings. Don’t let your brain get in the way of having fantastic wings. Grab a bottle of this sauce and go back some wings! This is great stuff and like mine, your wings will disappear like that!

Just Make Some Wings!

I used my simple air fryer recipe for these wings. But any wings will do as long as they aren’t seasoned heavily. You don’t want anything to fight with the great flavors from this sauce. So keep the wings simple. And enjoy the sauce!

  • Lightly spray the basket of your air fryer with non-stick spray. Preheat per manufacturer's recommendation to 350 F.
  • Lightly salt the wings on all sides.
  • Add the wings to the basket (be careful it's hot!).
  • Cook wings for 12 minutes.
  • Flip the wings and cook another 12 minutes.
  • Increase the air fryer temperature to 400 F and cook another 6 minutes.

  • Remove wings from the bowl and serve immediately.

Notes

Note: If your wing sauce is refrigerated, set it out on the countertop before starting the wings so that it warms up a bit. You don’t want to put cold sauce on hot wings.

Charcoal Grilled Crispy Cajun Wings

I’ve been wanting to make these charcoal grilled crispy Cajun wings for a while. It’s not that I don’t make wings over charcoal often. I do. But I use a thing called a Vortex BBQ. It helps me get amazingly crispy skin using very high temperatures. That’s not what I’m doing here, though. I wanted to prove that I can make fantastically crunchy skin wings without my Vortex. And boy did I. These great wings take just a little effort, just a little time, and come out fantastic. And the sauce is nothing to sneeze at either! These are great tasting wings too!

Charcoal Grilled Crispy Cajun Wings

It’s Super Easy

There are just two simple steps to making charcoal grilled crispy Cajun wings. First, you need to air dry the wings coated in seasoned baking powder (not baking soda) overnight in a fridge on a wire rack. This helps dry out the skin, making it easier to get it crispy later. And second, when it comes time to cook the wings, make sure you have a pile of super-hot coals on just one side of your grill. That leaves you a less hot zone, called indirect grilling, to cook your wings without worrying about burning them. The high heat circulates around the wings helps crisp up the skin. And of course charcoal adds such a great flavor that you just can’t get in an air fryer, deep fryer or oven!

Don’t Forget The Sauce

Sure, you can use any sauce you want on these wings. But you’ll want to keep that Cajun theme going and make a batch of the sauce below. It has a nice spicy kick to it with a great flavor that compliments the seasoned wings perfectly.

I do still highly recommend a Vortex BBQ. It’s not only great for wings but also ‘fried’ chicken, ribs and oh so much more!

  • Place the wings in a large bowl or resealable container.
  • Combine the baking powder and Cajun seasoning.
  • Sprinkle half of the seasoning mix over the wings. Using your hands, toss the wings to coat.
  • Add the remaining seasoning and repeat.
  • Transfer the wings to a wire rack over a baking sheet. Place in the fridge 12 hours or overnight to dry out the skin.
  • Load up the charcoal chimney about 3/4ths of the way with charcoal and light. Once the charcoal is all lit and lightly covered in ash, dump the coals into the grill along one side. This will create two zones: a hot direct heat zone over the coals and a cooler indirect heat zone for the wings.
  • Add the charcoal grate and close the grill. Open the top and bottoms vents all the way. Let the grill preheat for 5.
  • Place the wings on the indirect heat side of the grill. Close the lid and turn so that the vent is above the wings.
  • Cook until the wings are lightly browned and crispy, usually 45 minutes. While the wings are cooking make the wing sauce.
  • Transfer the wings to a large bowl. Pour as much sauce as desired over the wings and toss to coat. Serve hot.  Click here for our guide on how to sauce your wings.

  • Melt the butter in a small saucepan over medium heat.
  • Stir in the hot sauce and Worcestershire.
  • Reduce heat and keep warm until ready to use.

Do it. Go down the aisle of your local grocery store where they keep the chicken fry mixes. There’s usually quite a few. Hot. Mild. Crunchy. Extra crunchy. All sorts of them. Grab some. Grab them all. And go home and make some wings! I highly recommend you start out with some Louisiana Fish Fry Spicy Fried chicken wings. It’s the perfect batter, the kind that sticks to the wings. All over. Crunchy. Oh so crunchy. Seasoned perfectly with a little spicy kick.

Yep, you sure could eat these Louisiana Fish Fry Spicy Fried chicken wings ‘naked’. No, no, not without clothes on! I mean without any sauce! Me, I wanted a little Buffalo feel to mine. A little more heat. So I served a little cup of Buffalo wing sauce on the side for dipping. I recommend dipping these wings instead of putting them in a bowl and dousing them with sauce and tossing. Tossing will knock that beautiful, delicious, crunchy coating off. What good would that be? So don’t do that. Dip them, if you want.

  • Heat 2-3" of oil in a deep fryer or Dutch oven to 350 F. While the oil is heating, prepare the wings.
  • Combine the 2 1/2 tablespoons of mix and water in a small bowl. I like to use a whisk to get the mix well distributed.
  • Place the 1/4 cup of mix in a flat bowl such as a small salad bowl.
  • Working in batches as needed, first coat the wings in the wet mix. Get them all good and wet on all sides.
  • Transfer the wings to the dry mix and roll them around, pressing lightly, to coat completely. Add more mix if you need it. Don't be shy!
  • Fry the wings 8-12 minutes or until they reach 165 F. Remove to a paper towel-lined plate to drain.
  • Serve with your favorite sauce for dipping.

Notes

I recommend dipping your wings in sauce instead of tossing them in the sauce. Tossing will knock off that beautiful crunchy batter!

Wing Master Vinegar Wing Sauce Wings

Someone over at Pepper Palace (makers of the Wing Master sauce line and whole lot more) had a brilliant idea. Take the traditional Buffalo wing sauce recipe and turn it on its head and invent Wing Master Vinegar wings. Usually, Buffalo sauce is based on cayenne pepper sauce and seasonings. Not this one. This vinegar wing sauce is based heavily on vinegar, with cayenne peppers and seasonings added in. The nuance may be small, but the flavor difference is huge. I fell in love with this sauce with the first bite.

We spent a few days in Sevierville, TN, this summer, enjoying ourselves at the DreamMore resort. Nearby, thankfully, is a Pepper Palace store. Located at The Island, it’s always at the top of my gotta-go-there list. And as always, I backed up the truck and loaded up with a ton of sauces. Including this crazy-good, amazing sauce for Wing Master Sweet Chili wing sauce wings. It’s different. It’s Buffalo wing sauce inspired, but with a great pepper twist. And a little sweetness. Not very spicy, but it has just a little kick to it. It’s not thick, and it’s not too thin. This is a great wing sauce, and one I would gladly devour again. And again.

For me, going to a Pepper Palace store is like going to Disney World. I walk through the doors and I start to smile like a kid. So many sauces (and other things). I’ve been to several Pepper Palace stores and I’ll be to more to pick up great sauces like their Wing Master Mango Habanero wing sauce. Wing Master Garlic Parmesan Wing Sauce Wings

Whenever my wife and I are in the Gatlinburg, Tennessee, area we always make it a point to swing by a Pepper Palace store. They have several stores in the area, including a new one in Sevierville in an area called The Island. The store, as always, was busy, with people everywhere enjoying samples of the hot sauces and salsas, from the hot to the mild. Me, I headed straight to the wing sauces and in particular, Pepper Palace’s own line of Wing Master sauces, including this Garlic Parmesan wing sauce.

I couldn’t wait!

As soon as we returned from our trip I threw a few seasoned wings onto my Weber Performer grill outfitted with the Vortex insert. When the wings were done I tossed them with the Garlic Parmesan wing sauce and dug in. The sauce is mellow, cheesy, and definitely garlicky. Not overwhelmingly garlicky, but really good. Yes, there’s a slight wing sauce kick, but again, not overwhelming. It’s a very enjoyable sauce, and a favorite around our house. Furthermore, I definitely wish that I’d picked up a few more bottles!

Wing Master Honey Garlic Wing Sauce Wings

I always swing by a Pepper Palace store whenever I can. Last time, I was in Sevierville, TN, which meant time to spend some quality time at the store at what is known as The Island. Boy did I ever back up the truck on sauces, including this Wing Master Honey Garlic wing sauce. This could easily be one of the best wing sauces I’ve ever had. I cannot get enough of it. The Asian-inspired, slightly sweet, lightly spicy flavors are amazing. This is truly a finger-licking good wing sauce.

Garlicky Sweetness

Pepper Palace’s Wing Master Honey Garlic wing sauce is great for dipping nuggets too. Or slathered on grilled chicken. On grilled veggies. Pretty much anything is better with this thick (but not too thick) sauce on it, in it, or dipped in it.

And yes, I lick up any sauce on the bottom of my plate after I finish off my wings. I’m not letting any of this stuff go to waste!

Three Ingredient Buffalo Wings

This is how I do it. I make a batch of this sauce, toss in some right-out-of-the-fryer wings, and get to it. Heck, the wings can be cooked in any way as long as I’ve got this sauce to toss them in. Air fryer. Baked. Grilled. I don’t care. Just give me some sauce and big ole stack of napkins. I love me some three ingredient Buffalo wings. I want sauce dripping down my arms and I want it on my shirt. And all in my beard. Yeah, it’s not pretty, I know that. But it’s good. Darned good.

No one is going to judge you when you devour some three ingredient Buffalo wings. They know you’re eating the best there is. The classic. Buttery. Crazy good cayenne flavor with yummy spices added in. And a hint of garlic. So good and yet so simple.

Pro tip: I like to dip fries or potato chips in any sauce that drips down onto my plate.

For the sauce

  • 8 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • ½ cup Frank's RedHot Original Hot Sauce

For the wings

  • 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock

Instructions

For the sauce

  • To make the sauce, combine the butter, garlic powder and hot sauce in a small saucepan over medium heat.
  • Whisk until melted.
  • Keep warm until ready to use.
