Buttery Popcorn Wings

There are times in your life when you just kick back for a second and think ‘oh yeah, that’s what I needed’. And you smile. Hopefully that happens often for you. It did for me as soon as I took a bite of my buttery popcorn wings. I often have popcorn for a side with my lunch. It’s tasty and low-carb. And I even might squirt a little buttery popcorn oil on it. Well, the other day I was sitting there enjoying a hot-out-of-the-air-fryer dry wing and looking at my bowl of popcorn and boom! Duh! I sure love that buttery flavor, I thought. I looked at my wings. And I looked at the popcorn. I looked back at the wings. Then back at the popcorn. The next, as they say, is history. Great history. Wing history!

Extra Butter And Napkins, Please

Yeah, I’ve seen it. And I’ve done it. Asked the person at the concession stand at the movie theater to put a couple extra pumps of butter on my popcorn. You can do that with these buttery popcorn wings too. Heck, you’re at home. No one’s watching. Load up. But, really… Don’t do it. I think there is a such thing as too much butter. Just this one time. Every other time, yes, load up. Here, you’re going for the kiss of buttery flavor goodness. And a great wing seasoning, too. The two go together well. Don’t drown them. Trust me.

Just Make Some Wings

Go make some wings! It’s not that hard to do! My go-to method is to air-fry them. A little seasoning first. Air-fried to perfection. Fantastic aroma as they cook. Crispy skin. Juicy meat. Tender. Ready for a sauce. Air-fried wings can hold up to being tossed with sauce, so that’s what I do. If they were deep-fried with a batter I wouldn’t abuse them like that. I’d gently brush the sauce on. Or serve it on the side, for dipping.

Buttery Popcorn Wings

For the seasoning (makes extra)

For the seasoning

  • Combine all ingredients.
  • Keep in an air-tight container until ready to use.

For the wings (air fryer)

  • Lightly spray the basket of your air fryer with non-stick spray. Preheat per manufacturer's recommendation to 350 F.
  • Lightly rub a little of the popcorn butter oil onto the wings. Don't go crazy with it, just get them wet.
  • Lightly season the wings on all sides with the mix.
  • Add the wings to the basket (be careful it's hot!).
  • Cook wings for 12 minutes.
  • Flip the wings and cook another 12 minutes.
  • Increase the air fryer temperature to 400 F and cook another 6 minutes.
  • Remove wings from fryer and place in a bowl.
  • Drizzle with some of the butter oil and toss to coat.
  • Serve.

For the wings (baking)

  • Preheat oven to 375 F.
  • Lightly rub a little of the popcorn butter oil onto the wings. Don't go crazy with it, just get them wet.
  • Lightly season the wings on all sides with the mix.
  • Place wings into a baking dish skin-side down.
  • Bake for 45 minutes.
  • Turn the wings and cook another 20 minutes or until browned.
  • Remove wings from dish and place in a bowl.
  • Drizzle with some of the butter oil and toss to coat.

For the wings (other)

  • You can use your favorite technique to cook the wings. Just season oil and season a bit before cooking. Then when the wings are done, toss them in a little more of the oil and serve!

Dry. Or Wet. Or Both

I like to eat my Andy’s Hot N Spicy Chicken Breading wings just as they are, right out of the fryer. If I want, I’ll put a little Buffalo wing sauce on the side to dip my wings into as I go. Might be mild, might be spicy, it just depends on the mood I’m in that day. The only thing I don’t do is toss my wings in sauce. Tossing knocks all of that wonderful breading off the wings. That defeats the purpose of breading them to start with! So I dip my wings instead.

  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the fry mix and turn to coat well. I like to press the wings into the mix several times to make sure I don't get any 'bald spots'.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.
  • Serve.

HP Brown Sauce Wings

I’ve never had HP Brown Sauce. It’s always intrigued me. Finally, I found it on sale (I’m cheap) and headed straight to making a wonderful wing sauce. This sauce is amazing. I loved it. Really loved it. And I’ve had a ton of wing sauces, both homemade and store-bought. The base sauce is thick and savory. Almost like a thick Worcestershire sauce. And almost BBQ sauce-like, but without the smokiness or seasonings. So I added a little of that. In the end I got a nicely thick, slightly spicy and slightly sweet sauce that was absolutely fantastic. These HP Brown Sauce wings are fantastic!

Sauce-o-rific

These HP Brown Sauce wings really hit the spot. Honestly, the wings themselves are a bit secondary. You just cook up some wings. Doesn’t really matter how. Grill. Deep-fryer. Oven. Air-fryer. Doesn’t matter. Just season them lightly. Don’t introduce flavors that fight this sauce. It’s money. It’s great. Don’t ruin it. Like by putting it on lemon pepper wings!

Dippin’ Or Saucin’

I’ve started leaning more towards dipping my wings in sauce these days. As opposed to drizzling them with sauce and tossing them around to get them coated. Dipping as I go, right before I take a big bite, helps keep the wing skin crispy and crunchy up to the last second. In fact, the sauce is really only on the wings for mere moments before into my mouth it goes. It’s the best of all worlds. Maximum sauce on my wings. Maximum crunchy skin.

For the dipping I use condiment cups. They’re just a few ounces in size. They’re perfect for dunking flats or drumettes. They tops are wide enough to get almost any sized wing in there. All the way to the bottom. Well-coated in sauce. I also use them to hold my blue cheese or ranch dressings!

Buffalo Wild Wings Sweet and Sour Wings

I have had my share of store-bought (and restaurant-bought) wings. So many that I have compiled a huge list of them just to keep track. Many have been good. Several have been amazing. These Buffalo Wild Wings Sweet and Sour wings fall into the ‘amazing’ category for me. Without any doubt, this is easily one of my favorite slightly-sweet, slightly tangy, mild-heat sauces. Load up on this sauce because you can’t find it in the restaurants.

This isn’t some complicated thing here. I made some wings in my air fryer. All I did was season them lightly. I didn’t use anything that would ‘fight’ the sauce. Heck, a little salt and pepper is just fine here. The sauce is the boss. These Buffalo Wild Wings Sweet and Sour wings are a real winner. I was sorry to see the last drop of sauce disappear.

My Trusty Wingman

My air fryer isn’t fancy. It doesn’t have any bells and whistles. Well, ok, it does have a bell when the timer goes off but that’s it. I don’t even use the timer actually. I use a timer on my phone that has two countdowns: one for 12 minutes and one for 6 minutes. That’s all I ever need to get perfect wings each and every time!

Brrrrrrrrr!

Put any leftover sauce in an air-tight container and keep it in the fridge until the next time you make wings. When it’s time to sauce your wings don’t just pour that cold sauce over them. You’ve spent all that times getting your wings perfect. Crispy skin. Perfect coating. Hot. No matter how you cooked them, you devoted time to making sure they are spot-on delicious. Do not ruin them by adding a cold sauce. First, obviously, it’ll make them cold. In an instant. And secondly, and just as important, cold sauce will make that crunchy skin un-crunchy even quicker than a hot sauce.

So bring your sauce to at least room temperature before using it. If you want, warm it on the stovetop. I’m not a fan of using a microwave to warm sauces, but you can do that if you want.

Buffalo Wild Wings Sweet and Sour Wings

  • Lightly spray the basket of your air fryer with non-stick spray. Preheat per manufacturer’s recommendation.
  • Combine the baking powder and wing seasoning. Sprinkle over the wings and toss to coat.
  • Add the wings to the basket (be careful it’s hot!). If you have trouble fitting them without overlapping, stand the drumettes along the sides of the basket.
  • Cook at 360 F for 12 minutes for large wings, 10 minutes for smaller ones.
  • Carefully flip the wings (rotate the drumettes if they are standing) and cook another 12 minutes again (10 minutes for smaller wings) at 375 F.
  • Flip the wings one last time. Increase the temperature to 390 F and cook another 6 minutes (4 minutes for smaller wings).

Whataburger Buttermilk Ranch Dressing (Copycat Recipe)

I always get really excited whenever I find a good new recipe for blue cheese or ranch dressing. Yeah, sure most people might think ‘salad’ but I think ‘wings’. I like them easy and I like them tasty. This copycat recipe of the Whataburger buttermilk ranch dressing is spot-on fantastic for dipping wings.

This dressing would probably be good on a salad, too. I dunno. I do wings. I think about wings all of time. So would I go to a burger place for their wings? Nope. But I’d go there for their ranch dressing for MY wings!

Stop At The Light

I gotta say, and I can’t say it enough… don’t go light when you’re making any kind of dressing for dipping your wings. Well, I can’t tell you what to do, so I’ll say I ‘recommend that you don’t use light ingredients’. We’re here to enjoy great wings with a great dipping sauce to help cool us off a bit so we can get back to the wings. Ok, yeah, maybe there’s a carrot stick or a piece of celery we can drag through it too. But we’re here for great wings and a great dressing. Use the ‘heavy ‘stuff. It’s what makes this copycat recipe of Whataburger buttermilk ranch dressing so amazing!

And yep, you can use fresh parsley and chives if you want. Our grocery store is hit-and-miss on both a lot. It was ‘miss’ this week, so I went with dried ingredients.

I serve this dressing on the side in condiment cups. They’re the perfect size for a batch of personal-sized wings. They’re wide enough to dip flats or drumettes. They’re also great for portion control if that’s your thing. Sometimes it’s supposed to be my thing.

I like to eat my Andy’s Mild Chicken Breading wings ‘dry’…. and I like them ‘wet’. Dry wings, served without any sauce, let me enjoy that great seasoning. It’s really good stuff, and worthy of enjoying on its own. But there’s also nothing wrong with having them dipped in sauce (‘wet’), either. Not tossed in sauce, though. I’m not a fan of tossing deep-fried battered wings in sauce for two reasons. One, all that tossing knocks off that crunchy delicious coating! And two, the wet sauce makes the coating soggy! So I usually dip my wings instead.

It’s BBQ wing time! One of my favorite things to have is wings coated in BBQ sauce. I’m not hung up on only saucing them with bottles that say ‘wing sauce’ on the front. BBQ sauces make for perfect wings! Like these Traeger Grills Texas Spicy BBQ sauce wings. This is one great sauce. And it’s really great on wings. It has a hint of smoke. It’s a little sweet but has a nice vinegar tang. The heat level isn’t too high, but you’ll notice it.

This sauce isn’t messing around. It sticks to your wings. That’s good news. No one wants a ‘sauce pool’ on the bottom of their plate. Taco Sauce Wings

I wasn’t really bored with my usual hot sauce-based wing sauces. Heck, I have tons of different hot sauces I can use to make a quick good wing sauce. Nope, I just happened to open the fridge, saw a bottle of taco sauce, and made the quick decision that I needed it on some wings. And that’s what I did. I made taco sauce wings. Good wings made better with a little spiciness and great flavor. Nothing fancy. But tasty. With that great southwestern flavor. Heck yeah these were great. And definitely different!

Which Way To Go?

Your taco sauce wings can take a few different directions. Mild. Medium. Hot. You can make the mild milder. Or the hot hotter. It’s up to you. Just vary the amount and style of taco sauce, and the amount of butter. Easy. Uncomplicated.

This is the same recipe I use for my Buffalo wing sauces. But using taco sauce instead of hot sauce. Life is great sometimes. Sometimes the best ideas are the simplest. And they’re right there in front of you just waiting to be discovered.

If you want, you can add a little more ‘stuff’ to your taco sauce-based wing sauce. A pinch of cayenne stirred in is a good place to start. Some chile powder doesn’t hurt either. Heck, sneak in some Fajita seasoning. Just don’t go crazy with it. Add it, but don’t make it overwhelming.

If you want a bit of smokiness, add a few good pinches of chipotle chili powder. It’ll add a touch of heat too. Not a lot. Let’s not go crazy here and drown out the taco sauce flavors.

Just Make Some Wings

How you make your wings is up to you. Bake them. Air-fry them. Deep-fry them. Grill them. It really doesn’t matter. Just cook them and get some sauce on them and get happy!

Frank’s RedHot Korean BBQ Sauce Wings

I was trying to be good. I was trying to cut back a little on my bottled wing sauce purchases. At least until I reduced the number of open bottles of sauces in my ‘wing fridge’. Well, that idea didn’t last long. I saw a bottle of Frank’s RedHot Korean BBQ sauce at the store and had to grab it. I had to make wings. So I did. And boy, were they ever great! A little sweet. A little heat. Pear juice, soy sauce and other goodies come together in a sauce that is not only great on wings, it’s perfect on darned near anything grilled. Or fried for that matter.

Air-Fried. Deep-Fried. Anyway You Want It.

First time I made these Frank’s RedHot Korean BBQ wings, I did it using some air-fried wings. They only take about 30 minutes to make. Perfect for my lunch-time meal. The sauce was the winner here. I didn’t do much of anything to the wings other than cook them. I didn’t want any fancy seasoning ‘fighting’ this sauce. It’s crazy yummy. Why mess with it?

The second time, I went deep-fried on the wings. But again, I kept it simple. An easy coating meant to just crisp up the wings. No fru-fru seasonings. Wings cooked, wings sauced. It’s not complicated! And again, great wings were enjoyed!

I loved dipping these wings in ranch dressing. You can use blue cheese. Or nothing. I liked the combination of the Korean BBQ sauce and the ranch. It really hit the spot for me. I serve it in little condiment cups on the side.

You can also serve your wings ‘naked’, without any sauce. Put the sauce on the side, again in condiment cups. They’re great for dunking wings in sauce. Any sauce!

For the air fryer

  • Lightly spray the basket of your air fryer with non-stick spray. Preheat per manufacturer’s recommendation.
  • Combine the baking powder and salt and pepper Sprinkle over the wings and toss to coat.
  • Add the wings to the basket (be careful it’s hot!). If you have trouble fitting them without overlapping, stand the drumettes along the sides of the basket.
  • Cook at 360 F for 12 minutes for large wings, 10 minutes for smaller ones.
  • Carefully flip the wings (rotate the drumettes if they are standing) and cook another 12 minutes again (10 minutes for smaller wings) at 375 F.
  • Flip the wings one last time. Increase the temperature to 390 F and cook another 6 minutes (4 minutes for smaller wings).

For the deep fryer

  • Combine the flour and salt and pepper in a large bowl.
  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the flour mixture and turn to coat well. Transfer to a plate and place in the fridge for 30 minutes.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.

Shore Lunch Spicy Cajun Style Wings

I like grabbing a breading box out of my pantry and making deep-fried wings. It’s easy. And luckily, there are several really tasty breading brands on the market. One of my favorites is Shore Lunch. And in particular, their Cajun-flavored breading. I know, the box says ‘fish breading’. You can ignore that. I did, and I used it to make some wings! Crunchy and flavorful, you’ll quickly realize that the box doesn’t have to say ‘chicken’ to be great for chicken!

Today, I wanted something with a bit more kick. So I ’embellished’ the breading and made some Shore Lunch Spicy Cajun Style wings. Same great flavor as the original, but with some heat. Oh yeah, these are my kind of easy wings!

No Sauce Required

These Shore Lunch Spicy Cajun Style wings don’t require a sauce. They’re great just as they are, right out of the deep fryer! But, if you’re craving a little sauce, a little something more, serve them with some Buffalo sauce on the side. Or your favorite dressing. But honestly, the wings are so good without it you won’t miss it if you just eat them ‘naked’.

For the wings

  • Add enough oil to a deep fryer or Dutch oven to cook the wings. Bring to 350 F.
  • Rinse wings and pat dry. Transfer to a large bowl.
  • Place breading mix into a large resealable baggie and add the cayenne. Seal and shake. Work in batches if you don't have a large enough bag.
  • Crack the eggs into a small bowl and beat lightly.
  • Working in batches, coat the wings in the eggs then place into the bag. Seal and shake to coat.
  • Fry wings 8-10 minutes or until 180 F internal temperature. Remove to a wire rack or paper towel-lined plate to drain.
  • Remove to a paper towel-lined plate then to a wire rack to cool slightly.
