I love chicken wings. Any flavor, any time, but in particular, I love wings with some kick. Not over-the-top, kick-me-in-the-gut hot, but just spicy enough to wake you up. These Cajun wings with dipping sauce bring the heat thanks to Louisiana hot sauce.

Great No Matter How You Cook Them

I prefer to cook my Cajun wings in my Char-Broil Big Easy oil-less fryer then finish them off on the grill to get a nice crunchy skin. But, they’re just as great cooked in the oven or on a grill. Cajun Butter Wings

These Cajun butter wings take a little more effort than some wings to prepare. But, oh me, are they ever worth every single minute. First you fry the wings until they are mostly done. Then you toss them in a super yummy super easy sauce. Yeah, it’s just butter and Cajun seasoning. But that’s two of my favorite things. Bake the wings a bit. Add more butter sauce. Bake some more until the wings are done and skin is just nice and crispy. Then you devour them. And you lick your fingers. A lot.

The Perfect Sauce for us Butter-a-holics

You can make the Cajun spice mix for these Cajun Butter wings using the recipe below. Or you can just grab some pre-made stuff out of the pantry, such as Slap Ya Mama brand. Me, I love Cajun seasoning flavors, so I use a bit extra. To me these wings are kinda like Cajun buttered shrimp, and I can eat a ton of those too!

I really liked the texture of these wings. If you’re in a hurry you could just deep fry them and toss them in the sauce. But I think the baking and extra basting with the sauce adds a whole lot more flavor.

For the Cajun butter

Instructions

  • Heat a few inches of oil to 350 F in a deep fryer or Dutch oven.
  • Season the wings lightly with the salt. Working in batches if necessary, fry the wings for 8 minutes, flipping once. They do not need to be fully cooked.
  • Meanwhile, preheat oven to 350 F and prepare the Cajun butter mixture (recipe below).
  • Remove the wings to a paper towel-lined plate to drain.
  • Line a large baking sheet with aluminum foil.
  • Transfer the wings to the baking sheet. Brush all sides with half of the Cajun butter.
  • Bake for 20 minutes.
  • Brush all sides of the wings with the remaining Cajun butter and bake for another 10 minutes.
  • Serve immediately.

For the Cajun butter

  • Melt the butter in a small sauce pan.
  • Using a mortar and pestle, grind together the remaining ingredients until a fine consistency is achieved. Add to the butter and stir.
  • Keep warm until ready to use.

Notes

You can substitute 2 teaspoons of store-bought Cajun seasoning for the spice mix.

Cajun Buffalo Wings

I admit, not everything in this sauce screams Cajun, but these Cajun Buffalo wings are so darned tasty I didn’t care. Everything I love is in this sauce which explains my addiction to it. I cannot stop eating wings tossed in it. A little heat, lots of (yummy) garlic, and just the right amount of traditional Buffalo flavor, this sauce is a real winner.

The simplest of wings can often be the best. Like these Buffalo teriyaki wings. Just a few ingredients and a little cooking time and I’m enjoying great wings. No fancy batters or marinades or anything. Just cooked plain wings tossed in a great sauce. I cooked my wings in the air fryer but any technique will do. I make the sauce while the wings are cooking since it doesn’t take long to prepare. The end result is lightly sweet and lightly spicy. It’s a great combination of Asian-inspired and traditional wing flavors. These are finger-licking good wings!

You can use whatever teriyaki sauce you like to make these Buffalo teriyaki wings. But for me, my go-to teriyaki sauce is from the fine folks over at Bourbon Barrel Food. They have two versions actually. The Kentuckyaki sauce is a wonderfully bourbon-infused sauce that has such a great, deep flavor. It’s great anywhere I need a teriyaki sauce. And of course their spicy version is … spicier! It also makes for a great sauce for these wings!

Buffalo Supreme Wings

Buffalo wings, blue cheese, and celery. Very traditional and very good and usually, each component is served separately. Everything You Need in one Bite

I really enjoyed chowing down on Buffalo supreme wings. They didn’t last long at all, that’s for sure. It was bordering on embarrassing, but I couldn’t help myself. That happens with me and wings a lot. I used the classic, Frank’s RedHot Original Cayenne Pepper Hot Sauce, but you can actually substitute your favorite.

Big Game Hot Wings

These Big Game Hot Wings were some of the best, if not the best, homemade wings I’ve had. The sauce really hit the spot for me. It’s the perfect combination of a little sweet and a little heat, with a little vinegar and mustard tang to it. It’s beyond finger-licking good. And since it’s homemade, I got to adjust the heat to my liking. That meant that I added a bit more hot sauce than the recipe calls for. You can use more. Or less. This sauce would be great for the Big Game. You can make a huge batch of sauce without a lot of fuss or trouble. If you’re worried about the heat scaring off some of your guests, just make two different batches. One with the pepper flake and hot sauce, and one without.

Bayou Bourre Louisiana Boil Wings

I’ll never look at a bottle of hot sauce the same way again. The fine folks over at Bayou Gotham changed my world when they came out with Bayou Bourré Louisiana Boil sauce. Heat-wise, this sauce has just a little nice gentle kick to it. But flavor-wise, this sauce is insanely great. I devoured my Bayou Bourre Louisiana Boil wings in no time at all.

Crab Boil Heaven

I am a crab boil addict. I love the flavors. This sauce brings all that. It’s a wonderful combination of spiciness (but not super spicy at all!), citrus, onions, celery, corn and potatoes. Yes, you read that correctly. It’s all in these Bayou Bourre Louisiana Boil wings. You see it all in the bottle. It looks good just sitting there. It’s like flavor art in a bottle.

Butter Up. Or Don’t.

I usually mix a little melted butter with my hot sauce before saucing on my wings. It’s what I call my Two Ingredient wing sauce. Pretty sneaky naming, huh? Well, sometimes you run into a hot sauce where you may not want to do this. Bayou Bourré Louisiana Boil sauce is a good example. So here’s what I recommend. Taste the sauce. If you love it out of the bottle (and you will), just pour it on your wings. No need to add butter. But if you want a little buttery flavor (ala classic Buffalo wing flavors), add a little. Not a lot. Heat it and melt it and stir. Taste. Good? Put it on your wings. Want more butter? Go for it.

There’s no wrong here. This sauce makes for amazing wings no matter if you add butter or not.

Baked Wings with Garlic Butter Sauce

It was time for something different. Time for a departure from my ‘usual’ wings, usually air-fried or deep-fried. Time for a departure from my ‘usual’ wing sauces, usually spicy but occasionally sweet. Yep, time for some baked wings with garlic butter sauce. These definitely are not my usual wings. The skin gets nice and crispy in the oven. Next, time for a toss in a very garlicky, very yummy sauce that is loaded with buttery tasty goodness. These are finger-lickingly good wings for sure!

You know, there’s absolutely no one that’s going to judge you if you decide you want even more garlic flavor when you make your baked wings with garlic butter sauce. I definitely guarantee that as the recipe is written you’re going to be getting a lot of garlic flavor. But I know there are people out there that want even more, so load up! Now’s the time to bring it!

Want your wings a little darker in color? Just put them under the broiler for a few minutes after they are fully cooked. Just keep an eye on them while you broil them. Never leave anything unattended under such high heat.

For the garlic butter sauce

  • 1 stick unsalted butter
  • 2 tablespoon olive oil
  • 2 teaspoons garlic minced
  • 1 tablespoon parsley finely chopped
  • ¼ teaspoon kosher salt

Instructions

For the wings

  • Preheat oven to 250 F.
  • Cover a baking sheet with foil.
  • Spray the foil with non-stick spray.
  • Pat the wings dry with a paper towel.
  • Place baking powder and salt into resealable bag or container. Add the wings. Seal and shake until the wings are coated.
  • Transfer wings to the baking sheet.
  • Bake for 30 minutes.
  • Increase the oven temperature to 425 F and cook the wings another 40-50 minutes or until golden brown, rotating the tray once.
  • Remove wings from oven and let cool for 5-10 minutes, while making the sauce.

For the garlic butter sauce

  • Melt butter in the oil over medium heat in a small saucepan.
  • Add the garlic and saute for 2 minutes to cook.
  • Reduce heat to low. Stir in parsley and salt. Keep warm until ready to use.

Notes

Feel free to add more garlic.
