Legend Larry’s Sweet Thai Chili Wings

Legend Larry’s Sweet Thai Chili wing sauce is fantastic. I am not surprised, though, because every sauce I’ve had from Legend Larry’s has been fantastic. Always the right consistency. Never overpowering. Just flat-out fantastic. This sauce has a slight kick, but not too much. You just notice it. It’s slightly sweet, but not so much so. It’s a great chili sauce by itself, but on these Legend Larry’s Sweet Thai Chili wings it’s perfect.

Go make some wings! It’s not that hard to do! My go-to method is to air-fry them. A little seasoning first. Air-fried to perfection. Fantastic aroma as they cook. Crispy skin. Juicy meat. Tender. Ready for a sauce. Air-fried wings can hold up to being tossed with sauce, so that’s what I do. If they were deep-fried with a batter I wouldn’t abuse them like that. I’d gently brush the sauce on. Or serve it on the side, for dipping.

Hooters Medium Buffalo Wings (Copycat Recipe)

This is it. The mountaintop. The best. Some of my all-time favorite restaurant chain wings, made at home. This Hooters medium Buffalo wings copycat recipe was so good that my stomach is growling while I’m writing this post. The flashbacks are making me smile. And hungry. These wings have the perfect breading, the perfect ‘bite’. They’re cooked perfectly. The sauce is spicy, but not too spicy. It’s buttery. Buttery-finger-licking-good. I could eat a mountain of these wings.

Less Heat But Oh So Good

These copycat recipe Hooters medium Buffalo wings are the kind you can serve to a crowd and serve proudly. Everyone will enjoy them. There’s not enough heat to really scare anyone off. Serve them with Ranch or blue cheese dressing in case people want to cool off a bit. Sure, add some carrot sticks and celery too. Personally, I don’t go for the ‘garden salad’ additions. I’m here for the wings.

I used Frank’s RedHot Original Cayenne Pepper Hot Sauce to make the sauce for these wings. It’s hard to stray from the original when making Buffalo-style wings. I do admit to using Crystal Hot Sauce from time-to-time, though. It’s got the right heat with a little Louisiana-twist.

Hooters Medium Buffalo Wings (Copycat Recipe)

Instructions

For the Medium Buffalo Wing Sauce

  • Make the sauce by placing all of the ingredients into a small saucepan over medium low heat.
  • Stir again before tossing with the wings.

For the Wings

  • Combine the flour, salt, cayenne and paprika in a large bowl.
  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the flour mixture and turn to coat well. Transfer to a plate and place in the fridge for 30 minutes.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.
  • Transfer wings to a large bowl. Drizzle with the sauce and toss gently to coat. Serve with blue cheese or ranch dressing. Click here for our guide on how to sauce your wings.

Brrrrrrrr!

Put any leftover sauce in an air-tight container and keep it in the fridge until the next time you make wings. When it’s time to sauce your wings don’t just pour that cold sauce over them. You’ve spent all that times getting your wings perfect. Crispy skin. Perfect coating. Hot. No matter how you cooked them, you devoted time to making sure they are spot-on delicious. Do not ruin them by adding a cold sauce. First, obviously, it’ll make them cold. In an instant. And secondly, and just as important, cold sauce will make that crunchy skin un-crunchy even quicker than a hot sauce.

So bring your sauce to at least room temperature before using it. If you want, warm it on the stovetop. I’m not a fan of using a microwave to warm sauces, but you can do that if you want.

Hooters Medium Wings

Hooters is where my wing addiction started. These Hooters medium wings (deep fried!) are as close to the real thing as you can get. Lightly crunchy, super tasty breading with a just-spicy-enough Buffalo wing sauce. No pain from the heat here, just great wings. This is not a copycat recipe. These wings are made with the same breading and sauce you can order online or pick up in the retail section at any Hooters. Get some, make these wings, and be happy!

Great Wings Without All The Heat

I can fry 5-6 Hooters medium wings at a time in a Fry Daddy fryer. It makes for some perfect wings. Only downside is that you can’t select the cook temperature, so I end up cooking my wings a bit longer since the oil is around 325 F-350 F. Still it makes for great wings in no time with a lot less oil than if I’d used my big restaurant-style fryer!

If you like to serve your Hooters medium wings with carrots and celery on the side, I recommend that you take a vegetable peeler to remove the outer strings. The celery is oh so much more tender without those pesky things!

For the wings

  • 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock
  • Hooters Wing Breading
  • Oil for frying
  • Hooters Medium Wing sauce
  • dressing Ranch or blue cheese, for dipping
  • carrot sticks for serving
  • celery sticks for serving (note: I like to shave my celery with a vegetable peeler first)

Instructions

  • Place wings in a large resealable container or baggie.
  • Add half the bag of breading. Seal and shake vigorously to coat the wings. Add more breading if needed to ensure that the wings are well coated.
  • Place the wings in the fridge for 30 minutes.
  • Add enough oil to a deep fryer or Dutch oven to cook the wings. Bring to 350 F.
  • Working in batches if needed, fry the wings 8-10 minutes or until golden brown.
  • Transfer the wings to a paper towel-lined plate or wire rack to drain while cooking the remaining wings.
  • Transfer wings to a resealable container and add half a jar of the wing sauce.
  • Serve with dressing and carrots and celery.

Notes

Note: If your wing sauce is refrigerated, place into a microwavable bowl and microwave for 20 seconds to melt.

Chipotle Barbecue Wings

These chipotle barbecue wings are proof of two things. One, Tabasco Chipotle Sauce is absolutely the tastiest, smoky pepper sauce you can find. And two, with just two ingredients you can make one of the best wing sauces you’ve had. Mild on the heat side, and full-power on the taste side, I could not have been happier with these wings.

The Easiest Sauce You’ll Ever Make

The sauce on these chipotle barbecue wings is definitely not ‘just’ for wings. Oh me, is it ever good on grilled or smoked ribs. Ditto smoked pulled pork or brisket. And grilled chicken? Yeah, great there too. It has the perfect consistency to stick to anything you put it on without being too thick that it is gloppy. You can adjust the spicy level by using more or less of the Tabasco sauce. I found a 50/50 ratio to be perfect, giving me a little heat and a lot of flavor at the same time.

I used Sweet Baby Ray’s Barbecue Sauce in this recipe. Kraft Original Slow-Simmered BBQ Barbecue Sauce would be another great choice. You don’t want to grab something that is going to fight the pepper sauce. Just a good old school tomato-based sauce will do just fine.

June Moon Parmesan Garlic Wings

I devoured these June Moon Parmesan garlic wing sauce wings in no time at all. The sauce is super creamy delicious. I found myself licking my fingers, wanting more and more sauce. This sauce screams fresh, like all of the sauces from June Moon. You’ll swear that the Parmesan cheese was grated just minutes ago. You’ll think that the oregano, basil, thyme and other herbs were just picked and chopped, and the lemon was just squeezed. And the garlic… oh my… just minced!

As much as I loved these June Moon Parmesan garlic wings, I think the sauce could find itself in many other dishes. First, it’d make for one heck of a salad dressing. Sure, it’s a pretty thick sauce, but it’s so packed with flavor that you wouldn’t have to use much.

Wing It Sweet ‘N Tangy Wings

It’s not unusual for me to open some wing sauce, make a batch or two of wings with it, and put the half-full bottle back into the fridge for wings for some later day. Well, I made some Wing It Sweet ‘N Tangy wings and let me tell you, the bottle is getting finished before I move on. This sauce is so dang good no way do I want it sitting around. It’d be rude. Sweet thanks to molasses, tangy thanks to mustard and vinegary, this sauce seems BBQ-like but with so many twists and turns that it’s definitely different and outrageously good. This is easily one of my favorite sauces of any kind.

These Wing It Sweet ‘N Tangy wings had a slight hint of heat to them. Not much. And a little Asian-inspiration from soy sauce. Put any leftover sauce in an air-tight container and keep it in the fridge until the next time you make wings. When it’s time to sauce your wings don’t just pour that cold sauce over them. You’ve spent all that times getting your wings perfect. Crispy skin. Perfect coating. Hot. No matter how you cooked them, you devoted time to making sure they are spot-on delicious. Do not ruin them by adding a cold sauce. First, obviously, it’ll make them cold. In an instant. And secondly, and just as important, cold sauce will make that crunchy skin un-crunchy even quicker than a hot sauce.

So bring your sauce to at least room temperature before using it. If you want, warm it on the stovetop. I’m not a fan of using a microwave to warm sauces, but you can do that if you want.

Lawry’s Spicy Buffalo Dry Wings

Any seasoning that is ‘normally’ used for adding flavor to wings that will eventually end up being sauced can be used to make what are called ‘dry’ wings. I’m a huge fan of dry wings and rank them up there with any sauced wings. These Lawry’s spicy Buffalo dry wings bring classic Buffalo wing flavor with a really nice amount of spicy kick. These are finger-lickingly good wings.

What Dry Wings Should Be

Lawry’s spicy Buffalo dry wings might make you forget about saucing your next batch of wings. Yeah, you can still sauce them. But try them without first and if you haven’t already, you’ll come over to the ‘dry side’. These wings are packed with great flavor. And the added beauty of dry wings is that the skin stays nice and crispy crunchy! Woo hoo!

I like to air fry my dry wings. I season them upfront. Then I cook them. Then I season them again, hot out of the air fryer. Then I plate them. And then I season them again. Yep, three times. Three times the flavor. Three times the enjoyment!

You have to take care of your dry seasonings. In return, they’ll take care of you by always being ready the next time you need them! Protect seasonings from the four main enemies of flavor: heat, light, air, and moisture. Never store them above the stove or oven, where steam and temperature swings cause caking and quick degradation. If you have a problem with high humidity causing your dry seasonings to cake, try adding a silica gel packet to the containers to remove moisture.

Spicy Sweet and Sour Wings

These spicy sweet and sour wings are proof that it really doesn’t take a pantry full of ingredients to make a fantastic wing sauce. It truly doesn’t get any easier than this. Just open two bottles, pour into a bowl and mix. That’s it. And the cool part is that you get to decide how sweet you want it to be. Or how spicy. It’s impossible to mess up this sauce.

Sweet And Sour Needed Some Heat

I opted for Crystal Hot sauce in my spicy sweet and sour wings sauce. It’s got great flavor and just the right heat level for me. Sure, I’ve got hotter hot sauces around. If I was craving hotter wings, I would’ve used them. And if I’m more on the even milder side, I’ve got sauces for that too.

  • 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock

For the sauce

  • Heat the oil in a small saucepan over medium heat.
  • Add the garlic and saute for 1 minute.
  • Add the butter and stir until melted.
  • Add the remaining ingredients. Stir until well blended.
  • Remove from heat and keep at room temperature while your wings cook.
  • Stir just before using.
