Kentuckyaki Sauce Wings

I had no idea. None. I picked up a bottle of Kentuckyaki sauce at the Kentucky Artisan Center because it seemed and looked different. Unique. I was worried it might be too bourbon-y. Would I like it on wings? Well I gotta say, this sauce makes for some of the best wings I’ve ever had. Slightly sweet. A little hint of teriyaki. Garlic and ginger. Sounded Asian-inspired, but with a Kentucky twist: a splash of bourbon. And just the right amount, too. This is the perfect sauce, and Kentuckyaki sauce wings are the perfect wings! Shout out to the fine folks at Bourbon Barrel foods. Great job!

A Great Sauce For Other Dishes

You can sure bet that this sauce is great on a whole lot of other things. I’d tell you what, but honestly, I’m going to use the entire bottle making Kentuckyaki sauce wings. And next time I’m on I-75 in the area of Berea, KY, I’m going to stop at the artisan center again and pick up some more. And I’m going to make more of these wings. I always stop there when I’m in the area. They always have unique foods and crafts. And a great little café too!

Go Easy, My Friend

I’m always leery of tossing deep-fried wings in sauce. You have to be gentle or that crunchy coating you worked so hard to get comes flying off. I recommend either drizzling the wings first and gently stirring with a spatula or brushing the sauce on. You can also just serve the sauce on the side for dipping.

Kentuckyaki Sauce Wings

For the sauce

  • Heat 2-3" of oil in a deep-fryer or Dutch oven. While it's warming up, make the sauce.
  • In a medium sauce pan over medium-high heat, add the Kentuckyaki sauce, pineapple juice, brown sugar and hot sauce. Stir.
  • In a small glass or bowl, mix the corn starch and water together. I like to use a fork for this. Make sure you get them well-combined.
  • Let the sauce come to a boil. Whisk in the cornstarch mixture. Continue whisking while the sauce thickens, another 2 minutes.
  • Remove from heat and let sit while you make the wings. Note: If the sauce gets too thick as it sets, whisk in a teaspoon or two of warm water to thin it.

For the wings

  • Place the flour in a large bowl. Stir in the salt and pepper.
  • Working in batches if needed, add the wings to the flour and coat well. Turn them several times, making sure you get the wings covered in flour.
  • Shake off any excess flour and add to the hot oil. Deep fry 7-10 minutes or until the wings hit 165 F. Remove to a paper towel-lined plate or wire rack over a baking sheet to drain.
  • Transfer wings to a large bowl. Drizzle with the sauce. Using a spatula, turn the wings to coat well.
  • Remove wings to a platter and serve.

Notes

Serve with your favorite dipping sauce on the side, if desired.

Kirkwood Buffalo Style Chicken Wings

I’m a fresh wing kinda guy. Usually. Sometimes I don’t have time to prepare wings from scratch. Or worse, I can’t find fresh wings in my grocery store. Or I just want to try something new. I was in Aldi the other day, picking up fresh wings (they have great fresh wings). I decided to check out the freezer cases before I headed to the checkout. And there they were. Kirkwood Buffalo style chicken wings. They looked good. I bought them. And I made them. And you know what? They were good!

Actual Wings. No Weird Stuff.

I’ve purchased some weird looking frozen wings. They were pre-battered, like these. But they didn’t look like wings. Kirkwood Buffalo style chicken wings are pre-battered. And they look like wings. Because they are actual wings. They’re sauced just right, in a sauce with good Buffalo flavor and a hint of heat. They’re meaty. I liked them. A lot.

Seven Servings. LOL.

The 22 ounce bag of wings I bought said it was 7 servings. Maybe somewhere in an alternate universe of really tiny people. Not me. I’d call them 4 servings at most. If you’re having a big party and need a bunch of wings, these are going to go over great. Just make sure you buy more than you think you’ll need. They’re good and people will want more. You bet I did.

I baked my wings on a silicone mat. I tried what the instructions on the bag stated and sprayed a baking pan with non-stick spray, but found that the wings still stuck. The silicone mat was much better.

I like to use these little dipping cups for my wing dipping sauce. These Buffalo wings are great with a little blue cheese or ranch dressing!

Kirkwood Buffalo Style Chicken Wings

  • Preheat oven to 400 F.
  • If you have a silicone baking mat, line a baking sheet with the mat and add the wings. If you do not have a silicone baking mat, liberally spray a baking sheet with non-stick spray and add the wings. I prefer to start with the bone-side of the wings down (for flats). For the drums it doesn't matter.
  • Bake for 15 minutes. Gently turn the wings. I use a fork or rubber spatula for this. I've found that tongs will tend to tear the coating/skin if the wings stick any.
  • Bake another 10-15 minutes or until turning lightly golden in color and the wings internal temperature is 165 F.
  • Let the wings rest for 5 minutes before serving. They will still be piping hot so be careful!

I know I’ve got a great wing sauce when I consider getting a spoon and just eating it right out of the pan. These Korean BBQ wings were fantastic, thanks to a delicious sauce that packs just the right amount of heat. And it’s the perfect, spot-on consistency to boot. There were darned good wings.

Asian-Inspired Wing Greatness

I made the sauce exactly as you see below. You’ll notice that it does call for a good amount of sesame oil. If you find sesame oil a bit strong you might want to start with half the amount listed and taste to see if you want more. I went full-bore and loved it.

The sauce for these Korean BBQ wings isn’t just great on wings, either. I strongly recommend you at least double the recipe. You’ll want some sauce on hand to brush (or dip) grilled chicken. It’s also fantastic on smoked or grilled ribs.

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

Mambo Wings

It’s amazing how many great chicken wing recipes there are. Everything from the mild to the sweet to the volcanic hot. That’s why I love them, I can have a different flavor every day. Well, almost every day. I don’t actually eat wings every day, although I’m sure I could and never ever get bored with them.

I recently stumbled upon Mambo sauce (among many other great recipes) on a blog by Levy Restaurants, a family of different restaurants around the US. So, I thought “Now, here’s something different. A tomato-based wing sauce with Asian flavors. I gotta try it!” So I did, and boy, was I happy that I did.

Sweet Heat Perfection

Mambo sauce, like many great wing sauces, is a combination of sweet (a little pineapple and sugar) and acid (white vinegar and hot sauce), and the best part, a bit of heat (thank you Frank’s RedHot!). You’ll start out thinking you’re having a teriyaki-inspired wing, and finish up thinking you had a Buffalo wing. It’s great, like a journey of flavors.

According to the Levy Restaurant’s blog, Mambo sauce is also great on fries. I can definitely see that. And I will also try it as a steak marinade.

Mango Barbecue Wings

Ahhhhhh. Yum. And easy. These mango barbecue wings hit the spot. Just the right amount of tropical fruitiness. Just the right hint of barbecue sauce. Now, if I wanted to, I could make it more fruity. Or use a totally different barbecue sauce and come up with a new tasting wing. That’s the beauty of this recipe.

Fruity BBQ Greatness

I went with a pretty tame sauce for the BBQ part of these mango barbecue wings. I wanted a hint of smokiness, with just a little spiciness. Next time, I may go for a hotter version, but add more Mango nectar so I still get that fruity flavor. You can also make this sauce using other juices, such as orange, pineapple or grape.

Uh oh. The folks over at Old Bay have done it now. Wasn’t it enough that I was already addicted to Old Bay seasoning? Now they have a hot sauce too. Oh, yes! Glorious Old Bay flavors in a sauce! That means that I can make the most amazing Buffalo wings day after day! Lightly spicy, wonderfully tasty, these Old Bay Buffalo wings are the wings dreams are made of!

Be Still My Old Bay-Loving Heart!

When you make the sauce for these Old Bay hot sauce Buffalo wings you have to be mindful of two things: don’t have the heat too high and don’t cook it too long. You want just the slightest simmer. Enough to melt the butter, warm things up, and dissolve the seasonings. If you have the heat too high, or cook the sauce too long, the sauce will separate. A little separation is normal, you can whisk the ingredients and they’ll come back together. But if you overheat or overcook, it won’t get that nice consistency no matter how much you whisk.

Orange Soda Wings

Orange soda wings are a great example of how you should never think that something sounds weird and will taste even weirder. I thought that and I was wrong. I found these wings to be fantastic. The sauce is perfect. Think traditional Buffalo wing sauce, but with a bit of sweetness from honey, and a wonderful light hint of citrus. The soda cooks down and thickens, making sure that every drop sticks to the wings. Every bite is delicious. I was so pleasantly surprised!

I think the orange soda wings sauce would be great on something other than wings too. Grilled chicken breasts for sure. Grilled pork chops definitely. Smoked ribs too!

Oven-Baked Buffalo Wings

I didn’t go into making these oven-baked Buffalo wings with the highest level of optimism. I’m not usually a fan of baked wings. It’s really a texture thing for me. They get dried out. Or the skin isn’t quite like I like. Maybe I’m too picky. Well, even picky me really liked these wings. You can’t beat them for crispy skin, moist meat and great flavor. And boy, talk about a great way to make a big batch of wings with just a bit of effort! These are great for the big game or your next party. Or just sitting on the sofa and eating a big ole batch of wings by yourself.

Oven-Baked Buffalo Wings

A Great Sauce

The sauce for these oven-baked Buffalo wings is pretty much your standard Buffalo sauce. Usually you’ll find honey or brown sugar being used to sweeten the sauce. This one uses molasses. It’s what really makes this sauce great. Any time a recipe calls for something to make it sweet, consider molasses. It adds more than just sweet, it adds flavor.

A Few Key Notes

To help these wings come out perfectly each and every time, I’ve found two things are key. First, make sure your wings are dry before adding the baking powder mixture. I don’t mean sorta dry. I mean dry dry. If you start adding the baking powder and you get a dough-like mix, your wings aren’t dry enough.

Next, make sure you get a nice even coating of the non-stick spray onto the foil. Don’t go crazy with it. Don’t create an oil slick. Just get it nice and even. I’ve not had a single wing stick with this approach. No one wants to serve wings that have been torn to bits by struggling to get them un-stuck from the foil.

  • Preheat your oven to 250 F.
  • Line a large baking sheet with foil.
  • Lightly spray a wire rack with non-stick spray and place on the baking sheet.
  • Pat the wings dry and place into a large bowl.
  • Combine the baking powder and black pepper. Sprinkle half of the mixture over the wings. Using your hands, mix and coat the wings.
  • Sprinkle the wings with the remaining baking powder mixture and again mix and coat using your hands.
  • Transfer the wings to the baking rack.
  • Bake on the lowest rack in the oven for 30 minutes.
  • While the wings are cooking, make the sauce (see below).
  • Turn the oven temperature up to 425 F and move the baking sheet to the top rack in your oven. Bake for 15 minutes.
  • Using a tong, flip the wings and bake another 15 minutes.
  • Remove wings and transfer to a large bowl. Drizzle with the sauce and toss to coat.
  • Serve.

Peach Apricot Chile Wings

I had been jonesin’ for these peach apricot chile wings from the moment I ran across the original recipe. Not because I’m a big fan of apricots, mind you, but because I knew that the combination of sweet peach and apricot would go perfectly with spicy chile sauce. Heck, I think the sauce even changed my mind about apricots!

A Wonderful Taste Combination

I cooked these peach apricot chile wings on my Weber charcoal grill using the Vortex insert, which gives me that great crunchy skin and fantastic grilled flavor without a lot of effort. In fact, just about no effort whatsoever.

Usually I toss my wings with sauce after they are cooked, but this time I brushed some of the sauce onto the wings just before removing them from the grill. The sauce ‘set up’ a bit, making for the best sticky yummy wings you could imagine. I also served a bit extra of the sauce on the side for dipping.

Pepper Jelly Barbecue Wings

It’s rare when my wife says that she really loves a wing sauce. Her tastes are pretty picky (nothing wrong with that!), whereas mine run from the hot to the sweet and anything in between. These pepper jelly barbecue wings made us both very happy. They aren’t very spicy. They aren’t very sweet. They’re just right. And definitely finger-licking good.

Any Sauce On Wings Is A Wing Sauce, Right?

I’m not quite sure when a barbecue sauce becomes a wing sauce. Maybe it’s just a simple matter of putting it on wings and boom! It’s a wing sauce! I brushed the wings with the pepper jelly barbecue wing sauce just before they were done. That gave the sauce some time to set up on the wings. You could just as easily tossed the wings in the sauce instead.

I know some folks aren’t fans of liquid smoke. This sauce is much better with it. If you don’t want to use it, just add some adobo sauce (from a can of chipotles). That’ll add a bit of heat too.

Pepper Jelly Barbecue Wings

I brushed the wings with the pepper jelly barbecue wing sauce just before they were done.

For the wings

  • 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock
  • sauce from below

For the sauce

  • Heat the oil in a medium saucepan over medium heat.
  • Add the onion. Sauté for about 10 minutes or until softened and lightly browned.
  • Add the garlic and chili sauce. Stir and cook another minute.
  • Add remaining ingredients. I recommend using all of the liquid smoke, but you can start with half and taste to see if it's to your liking.

For the wings

Serve with your favorite dipping sauce on the side, if desired.
