It pays to branch out when looking for new wing sauces. Make your own. Buy the national brands. Try a few local ones too. And absolutely, positively make sure you seek out great wing joints that also sell their sauces. The best sauces often come from smaller market restaurants and bars. They pay attention to taste and quality. They have to. There’s a lot of competition out there. You gotta make good stuff to stand out and succeed. And that’s how I came to find The Dirty Buffalo, a more-than-just-a-wing-joint around Norfolk, Chesapeake and Virginia Beach in Virginia. So I ordered a huge bunch of their sauces. Darned near everything they make. And oh, was I excited when they arrived and I made my first batch of wings: The Dirty Buffalo Hot Buffalo wings. This (and the rest I got from them) is one fantastically great sauce. THIS is why you seek these places out.

Deep-Fried For Wing Perfection

I started out with my favorite deep-fried wings. You can make any wings you like. Just don’t go seasoning them so heavy that you’re going to bury the flavor and heat from these The Dirty Buffalo hot Buffalo wings. The sauce is the winner here. A big winner.

Great Heat. Great Flavor.

The balance between heat and flavor is perfect in this sauce. This is easily one of the best kicked-up Buffalo wing sauces I’ve had. Traditional flavor, perfect consistency and the right amount of heat. I loved it. I’m glad I picked it first from my big box of bottled sauces. This is one great start on my journey through the sauces from The Dirty Buffalo.

Remember that if you are using a refrigerated sauce on your hot wings, make sure you let the sauce come to room temperature before using it. Nothing is sadder than a cold sauce on a hot wing.

  • Combine the flour, salt, cayenne and paprika in a large bowl.
  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the flour mixture and turn to coat well. Transfer to a plate and place in the fridge for 30 minutes.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.

The Dirty Buffalo Medium Buffalo Wings

I like to kick back after a long day of work and just relax and enjoy. Same with my wings. I like to kick back and relax and enjoy every bite. They don’t have to be crazy spicy. They don’t have to be too saucy. But, they have to be enjoyable. Like these The Dirty Buffalo medium Buffalo wings. This sauce isn’t the kind that’s going to hurt. It has just a nice little kick to it. And it’s not lacking in classic flavor. Not at all. Whether I’m having my wings after work or at lunch, or just snacking, these are a great way to have a great day. This is one enjoyable sauce.

I used my air fryer to make my standard batch of air fryer wings then sauced them. I could’ve gone deep-fried. Or grilled. Or baked. Doesn’t really matter. The Dirty Buffalo Buffalo Soldier Wings

It’s comforting to know that there’s someone out there looking out for the rest of us. They toil and toil, night and day, making sure we all get the greatest wing sauces ever. At least one of them is at The Dirty Buffalo, a southern Virginia regional sports pub that clearly is devoted to great food and in particular, wings. Their Buffalo Soldier wing sauce is just one example of the results of a devotion to great-tasting sauces. I couldn’t get enough of my homemade wings tossed in this sauce.

Jerk. And Right Kind of Jerk.

The Dirty Buffalo Buffalo Soldier wing sauce hits you with a decent island-inspired jerk flavor. And a good dose of heat, too. Neither is overwhelming. I love jerk flavors, I often make jerk chicken on my charcoal grill. But it can be too much for me. It’s the allspice that can do me. But not in this sauce. It has just the perfect amount. Enough (along with other ingredients) to give me that jerk flavor without being too much jerk.

I kept my wings simple. I was after the sauce. Just my simple air fryer wings. You can use any plain wings you want. Just don’t use anything that is heavily spiced or flavored. You don’t want the wings to fight with the sauce.

I love this sauce. It’s finger-licking good. Just like every single other sauce I’ve had from The Dirty Buffalo. Jump over to their site and order some of them. Or rather, all of them.

I was more than looking forward to some The Dirty Buffalo mild Buffalo wings. I ordered a big mix of sauces from the Virginia-based more-than-a-wing-joint. The first that I tried, the hot Buffalo version, was a huge win. Great flavor and heat. And I didn’t sit around counting the days until I made some wings using the mild Buffalo sauce. I counted the seconds.

The Dirty Buffalo Spicy BBQ Wings

I’m a big fan of wings tossed in BBQ sauce. Really, they’re not much different than most wing sauces so why not? And there’s an amazing variety of BBQ sauces to be found at your local grocery store. Sometimes wing sauces (at least a good variety of them) can be harder to find. The Dirty Buffalo Spicy BBQ wings live up to their name. A great fairly traditional BBQ lightly sweet sauce, with just the right amount of heat. Nothing over-the-top crazy spicy here, just a nice gentle heat. And yes, you can definitely use this sauce on ribs. Or burgers. Or even dipping those boneless things they call wings!

Any Kind Of Wing. Only One Sauce.

For my The Dirty Buffalo Spicy BBQ wings I decided to make deep-fried wings. A fairly light crunchy coating makes for a great way to capture all that delicious sauce. First time I had them, I drizzled the wings with sauce and tossed them gently to coat. Second time I served the sauce on the side for dunking the wings instead. Why? Because no matter how gentle you are tossing your deep-fried wings, you’re going to knock off some of that delicious crunchiness. Dip them instead and you won’t lose a thing.

The Dirty Buffalo Margarita Buffalo Wings

The fine folks over at The Dirty Buffalo come up with some mighty great wing sauces. I ordered a ton of them to enjoy at home. Unfortunately, I’m a bit far from Virginia Beach and thereabouts so I can’t just swing by one of their restaurants and grab some grub there. Sadly, this is the last bottle of sauce I had on hand. But, oh did I ever save a great one to go out on. The Dirty Buffalo Margarita Buffalo wings are different in a very good way. Kinda taco-sauce like but not like if you went to Taco Bell, grabbed a bunch of sauce packs and drizzled them over your wings. Much better than that. There’s a good hint of lime. And just a kiss of cilantro. Like taco sauce elevated. All that with a good healthy dose of spiciness.

Don’t Hide The Sauce

You can make your wings however you prefer for The Dirty Buffalo Margarita Buffalo wings. I decided to air fry mine. No matter which way you go, I suggest you don’t over-season your wings. Go light. Maybe just salt and pepper. At most. You don’t want something that’ll fight this wing sauce. You want to get the true flavor that was intended by the creators. It’s true, I kept some Ranch dressing on hand but honestly, I didn’t need it. I should’ve kept it in the fridge. These wings don’t need it. The flavor and heat are spot on great. So go to The Dirty Buffalo’s site and order up some of their sauces (and seasonings). This sauce, and all the rest, do not disappoint. In fact, they amaze!

The Dirty Buffalo Hot Honey Wings

I took a few days break from spicy wings. I’m back now. Thanks to these The Dirty Buffalo Hot Honey wings. Basically a sweet Buffalo-style sauce, this sauce holds on to your wings, tingles your tongue and makes you sweat a bit. With just the right amount of sweetness, you won’t confused these with dessert wings. They bring the heat and sweet.

The Dirty Buffalo Teriyaki Glaze Wings

I’m wrapping up my journey through the wing sauces I ordered from The Dirty Buffalo, a regional wing and more joint in south eastern Virginia. Oh, trust me, I’ll be ordering more of their sauces. And seasonings. For now, I’m glad I ended up on what I think is the highest note: The Dirty Buffalo Teriyaki Glaze wings. This wing sauce was my favorite. And it was hard to say that, because so many of them have been amazing. But this one really struck a chord with me. The perfect ‘umami’ flavor. Salty, sweet and lightly funky. I could not get enough of this sauce.

Just make some wings. Seriously. Whatever gets you to tasting this sauce the quickest. I used my air fryer to make my standard batch of air fryer wings then sauced them. You can make The Dirty Buffalo Teriyaki Glaze wings any way you want. Just don’t use anything that might overpower the sauce. Don’t go crazy with any seasoning. The sauce is a winner, don’t hide it.

Yes, I licked my fingers while eating these wings. And yes I wished I’d gotten more sauce on them.

I Shoulda Bought More

I think this sauce would be fantastic in a stir-fry. Or nuggets. Anything. It’s delicious and perfectly balanced. I definitely should’ve ordered more bottles. Well, that’s ok because I can jump online and order some more, along with all of their other great flavors!

  • Lightly spray the basket of your air fryer with non-stick spray. Preheat per manufacturer's recommendation to 350 F.
  • Lightly salt the wings on all sides.
  • Add the wings to the basket (be careful it's hot!).
  • Cook wings for 12 minutes.
  • Flip the wings and cook another 12 minutes.
  • Increase the air fryer temperature to 400 F and cook another 6 minutes.

  • Remove wings from the bowl and serve immediately.

Notes

Note: If your wing sauce is refrigerated, set it out on the countertop before starting the wings so that it warms up a bit. You don’t want to put cold sauce on hot wings.
Note: The full 30 minute cook time is for large, meaty wings. If your wings are a bit thinner (er… scrawny) back the times down to 10/10/4 minutes instead of 12/12/6 minutes.

The Dirty Buffalo Strawbenero BBQ Wings

Wow. I am not really a fan of starting a post with ‘wow’. But I have no choice when it comes to The Dirty Buffalo Strawbenero BBQ wings. That first taste was a big ‘wow’ moment. I’ve used fruit-flavored sauces on my wings before. Blueberry. Blackberry. Even watermelon. But I had never had one that was infused with strawberry flavors. And most of the fruit sauces were sweeter, with no heat. Although this sauce is slightly sweet, it brings a little heat too. And the first amount of strawberry flavor. The idea of strawberry-flavored wings may sound odd to you at first, but believe me, they’re nothing but a big ‘wow’.

Deliciously Fruity

I fried up a batch of wings my usual way. Light on the flour, light on the seasoning. Fried to crispy perfection. Then I tossed them (gently) in The Dirty Buffalo Strawbenero BBQ wing sauce. The sauce has the aroma of fresh strawberries. It’s rather pleasant. That first taste brings strawberry first. A little sweetness. And just a little kick from habanero. The heat offsets the sweetness perfectly. This sauce would be perfect on anything that requires a BBQ sauce. Ribs for sure. Pulled pork? Absolutely. Brisket? Perfect.

For the Wings

  • Combine the flour, salt, cayenne and paprika in a large bowl.
  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the flour mixture and turn to coat well. Transfer to a plate and place in the fridge for 30 minutes.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.
  • Transfer wings to a large bowl. Drizzle with the sauce and toss gently to coat. Serve with blue cheese or ranch dressing. Click here for our guide on how to sauce your wings.

Notes

If you prefer to air fry your wings, use my extra-crispy air fryer wing recipe to cook the wings then sauce with the Dirty Buffalo sauce when done.
If you prefer to bake your wings, use my oven-baked wing recipe and substitute the Dirty Buffalo sauce for the sauce in the recipe.

The Dirty Buffalo Spicy Garlic Ranch Wings

I enjoy a great plate of wings. Who doesn’t? The kind where I take a bite and just say “Oh that’s good.”. No analysis. No checklist. Just enjoy the moment. That’s what I did with these The Dirty Buffalo Spicy Garlic Ranch wings. Instead of trying to describe the sauce right off the bat, I just enjoyed my lunch. And boy did I. You know you’ve had great wings when your thought after the last bite is “I can’t wait to have those again.”.

It’s About The Sauce

I didn’t make any fancy fru-fru wings. Just some simple air fryer wings. I had tunnel vision. I wanted to get to that sauce! The Dirty Buffalo spicy garlic Ranch wings more than hit the spot. They were nicely spicy. They have a great kick to them. Not overwhelmingly so, but very enjoyable. The sauce is like a Buffalo Ranch sauce. Kind of a creamy Buffalo sauce really. All with a hint of garlic. Not a ‘ward off the vampires’ amount of garlic. Just right.

I’d eat wings tossed in this sauce all day long. Sometimes I use a lot of sauce. Some times I use less. Either way, they’re fantastic!
