Whew. Spicy. This here is some spicy wing sauce for sure. They weren’t a kiddin’ around at the Wing Palace (home of Palace Sauces) when they named it, that’s for sure. Like all the other Palace Sauces, Palace Sauce Torch wing sauce has the right consistency, the right flavor. And in this case, a lot of heat.

I think I may have overdone it here recently. I’ve been eating a lot of really, really spicy wings. Ya know, the kind that make your eyes water. Time for a welcome break. Time for some great tasting Buffalo-inspired wings that don’t burn off the roof of my mouth. Thanks to the fine folks at B-Dubs (uh, that’s Buffalo Wild Wings in case you aren’t up on the lingo), I got just what I wanted in their not-so-much heat Buffalo wing sauce.

Carolina Wings

I’ve always been a fan of Carolina BBQ sauces. And although there are lots of variations from region-to-region, they all have vinegar in common. These Carolina wings packed that great vinegar punch, and then some. I found myself not able to get enough of the sauce on these wings. I’m quite sure I’ll end up using this exact recipe on more than wings. And I almost found that odd because usually, there is a such thing as too much vinegar for me. Red wine vinegar is a little smoother. More… delicate? Normally I’d find it in my salad dressings or in a sauce for red meat. Now, I find it in my wing sauce… to stay!

Carolina Wings

The Perfect Heat

These Carolina wings are a bit spicy, but they have the right amount of spiciness in my opinion. I like a little kick in just about everything I eat, but that doesn’t mean I need to be in pain and not able to taste my meal. The balance between the heat and sweetness is necessary, and the sauce on these wings has achieved that balance spot-on. It’s fantastic stuff.

If you want your sauce a little less spicy you can cut back on the red pepper flake. There really isn’t that much of it to begin with. I would not reduce the amount of adobo sauce, though. It not only adds heat but it also adds that wonderful smoked jalapeno flavor. You don’t want to change that.

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

Fire-Eater Wings

These fire-eater chicken wings from Steven Raichlen’s The Barbecue! Bible are absolutely amazing (as are the other recipes in the 575 page book). Yes, they have some kick, but it’s not overwhelming at all. They’re perfect. I plan on using the rub recipe on whole roasted chickens and turkey from my Big Easy, it’s just that good.

Great Flavor In Every Bite

I cooked the wings for about 30 minutes in my Char-Broil Big Easy, then I tossed them onto a hot grill for a few minutes to crisp up the skin. You can skip that final step and still enjoy really fantastic wings.

I served my Fired-Eater wings with plenty of Ranch dressing for dipping. But you can skip that dippin’ and just enjoy the tremendous wing flavors as they are!

Perfect on wings and lots of other things, like nuggets, chicken sandwiches, burgers you name it. Frank’s RedHot Buffalo ‘N Ranch Thick Sauce wings sauce combines a low-heat Buffalo sauce with, you guessed it, Ranch dressing. This sauce isn’t going to scare grandma off with heat. After completely destroying a batch of wings covered in Frank’s RedHot Original Thick Hot Sauce the other day (in absolutely no time at all I might add) I rushed to grab another bottle in the line of thick wing sauces. This time I tried Frank’s RedHot Buffalo ‘N BBQ Thick Sauce wings and man, was I ever blown away.

Great expectations

After the original sauce my expectations were high, perhaps too high, I thought. But oh no, this sauce blew me away and then some. Just the right mix of traditional Buffalo wing flavor and BBQ (with just a bit of smokiness). And thick. But not too thick. I was very happy with this sauce. I see why everyone puts this sh#t on everything!

Fiery Catalina Wings

Despite how simple the sauce on these fiery Catalina wings is to make, it absolutely blew us away! We loved it! A tad bit of sweetness, a tad bit of tanginess, and a good bit of heat. Of course, you can adjust the heat to your liking, which is why making your own chicken wing sauce is so much more fun than using a sauce out of a bottle. Add a bit more of this. Add a bit less of that. Experiment. Or don’t. These are some mighty tasty wings no matter what!

Fiery Catalina Wings

So Different And So Good

I cook a lot of wings using lots of different sauces, but there’s no doubt that fiery Catalina wings will be common in our house. Everything we need to make them is on-hand, so I can throw together the sauce in no time with no hassle. Perfect.

This sauce is also the perfect consistency for wings. Not too thick that it’s ‘gloppy’ and not too thin that it creates a sauce ‘lake’ on your plate.

No Fru-Fru-ness

If your grocery stores sells fancy Catalina salad dressing, skip it. No need to use the expensive stuff in the sauce for these wings. I’m not saying don’t use a good dressing. I’m saying that the store-brand version is perfect.

If your dressing (or hot sauce) is refrigerated, make sure you let it come to room temperature before mixing things and tossing wings with it. You do not want to put a cold sauce on hot wings. That’s a great way to make them less-great. I’m about great wings here. So let that stuff get warm first.

Ok, time to fess up. If I was forced to choose my favorite sauce at BW3s Buffalo Wild Wings Spicy Garlic sauce would be it. The BW3 website says the sauce is ‘spicy and garlicky’ and that’s exactly what this copycat of the restaurant sauce is. Same great flavors, same great heat. This copycat recipe of Buffalo Wild Wings spicy garlic wings is lick-your-fingers good. And ask for seconds! Oh wait, you’re at home… just go make more!

Nice Heat With Plenty Of Garlic

I so love this copycat recipe of the Buffalo Wild Wings spicy garlic wings sauce. It’s still like a ‘normal’ Buffalo sauce, but with a nice twist making it just different enough but still familiar. The sauce keeps for a bit, so I didn’t hesitate to double the recipe. This sauce is good on grilled chicken or pork wings too.

I’m Dunkin’ It

Now I like saucing my wings just like anyone else. In fact, I wrote a guide on it. Depending on how you cook your wings, you might want to change up how you sauce them. And sometimes, I don’t sauce them directly. I like to put the sauce in little cups and serve it on the side. That way I can get as little or as much sauce in each bite as I want.

Serving the sauce on the side is also a great way to experience many sauces at once. Just put a different one in each cup. Great for parties too!

  • 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock

For the Buffalo Wild Wings Spicy Garlic Sauce

  • Combine all but the yolk, water and cornstarch in a medium saucepan over medium-high heat. Bring to a boil and reduce to a simmer.
  • Simmer for 5 minutes then remove from heat and let cool for 10 minutes.
  • Whisk together the egg yolk and water. Whisk in the cornstarch until dissolved.
  • Slowly whisk the mixture into the saucepan.

Notes

Serve with your favorite dipping sauce on the side, if desired.
