Honey Hot Sauce Wings

My wife and I recently visited The Island, located in Pigeon Forge Tennessee. One of the stores we happily stopped by was the Savannah Bee Company. As soon as we walked in the door the lovely aroma of honey hit us. The store was full of great things, from honey tastings to skin care products…. lots of things bee-related! My wife made a bee-line (you’re welcome for that one!) to the stuffed toys. Odd? I know! Me? Honey hot sauce. Not odd! I had wings on the brain as usual. So I grabbed a bottle and started dreaming of making honey hot sauce wings as soon as I got home. And when I did, I was rewarded with delightfully sweet wings with a wonderful kick from scotch bonnet peppers. There’s the perfect balance here. These are fantastic wings!

Butter. Or Not.

I like to mix a little melted butter in with whichever hot sauce I’m using to make wings. Like these Honey hot sauce wings. My two ingredient wing sauce has served me well over the years. But, your tastes might be a little different. Heck, some people just go straight up with the hot sauce on their wings. You might want more butter. I dunno. So here’s what I suggest: start by just heating the hot sauce a bit. You don’t want to put cold sauce on a wing anyways. Taste it. Now, if you want, add a tablespoon of unsalted butter and stir. Taste. Good? Stop. Want more butter? Keep going. You’ll find that perfect balance that works for you. Just remember for the next time you make these great wings!

Honey Cholula Wings

This Cholula Original Hot Sauce-based wing sauce is the perfect sauce for chicken wings. A little sweet, a little heat. As much as I like traditional Buffalo wing flavors, honey Cholula wings are a welcome change. The hot sauce does not overwhelm, and that’s just what I was looking for. Well that and some sweetness.

The Perfect Sweet Heat

Sure, you can use other hot sauces when you make honey Cholula wings. I really like Cholula for the flavor and the amount of heat. It’s spicy, but not too spicy. It’s not screaming hot. I think it’s a great middle-of-the-road hot sauce and a pleasure to eat!

In A Hurry? Don’t Worry

If you’re in a hurry you can skip the marinade. Just cook the wings, and while they’re cooking, make the sauce. Keep the sauce warm until the wings are done. If you end up with leftover sauce, just make sure you set it out 30 minutes or so before you start the wings so it starts to soften. You can also microwave it for 10-15 seconds.

Honey Chipotle Wing Sauce

I first made this honey chipotle wing sauce for deep-fried chicken tenders. It was so good that I knew I had to make a bigger batch and use it on wings next. This is easily one of my favorite homemade wing sauces. It has just the right amount of sweetness. From honey. Yummy honey. There’s just a little bit of heat and smokiness. Chipotle chili pepper is great in a sauce. It adds that bit of a kick from jalapenos. And it adds the flavor and aroma of the smoke used to smoke the jalapenos. It’s great stuff and it’s what really makes this sauce fantastic.

“Oh My Goodness” Good

You can make this honey chipotle wing sauce as thick or as thin as you want. The longer you simmer it, the thicker it gets. It also likes to thicken up a bit as it cools. I’ve been known to add more honey. That’ll thicken it up a bit while of course adding a bit more sweetness.

Harissa Wings

After making roasted harissa cauliflower the other day (my first encounter with harissa) I knew after the first bite that the next thing I was going to make with the spicy red pepper paste would be Harissa wings. There was no doubt in my mind that I was in for a wonderful treat. You get a nice kick, but don’t be afraid. Harissa is not crazy spicy, not at all. It has a wonderful earthy flavor to it. I could eat it all day. On wings I could eat it all week.

Great Mediterranean-Inspired Flavors

The Harissa sauce for making harissa wings can be found in the Mediterranean section of your local grocery store. I haven’t tried making it home yet, but I will. The consistency reminds me a bit of hummus, though it’s certainly not hummus. But, oh…. it just hit me… harissa sure would be great in hummus! I’m off to try that now!

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

Geezer Wing Sauce

There’s probably a story behind where this Geezer Wing sauce got its name. I don’t know the history. But what I do know is that this is one fantastic take on a classic Buffalo wing sauce. This sauce is absolutely packed with flavor. There’s a lot of great stuff in it, along with a good bit of heat. Not too much, but you’re gonna notice it.

Stir It, Stir It Good

Butter likes to separate in Buffalo wing sauces as it sits. So before you use this Geezer wing sauce on your just-cooked wings, give it a good stir. Get that butter good and mixed in.

More Heat

If you like your wings hotter, use your favorite hotter hot sauce. Adding a bit more cayenne or red pepper flakes will kick it up some more too. Just don’t add anything that’ll hide the great flavors in this sauce. It’s a real winner.

Enchilada Wings

Oh yum! Mexican-inspired chicken wings with kicked up easy Ranch dressing! I loved these enchilada chicken wings so much I had to make them two days in a row. The wings by themselves are fantastic. You could serve them dry, without the sauce but the sauce will remind you of traditional wing sauce with a great south-of-the-border twist.

Great Seasoning Makes For Great Wings

I prefer to make my own taco seasoning mix, but you can of course use store-bought taco seasoning. For these enchilada chicken wings you’ll want to use a seasoning that is fairly fine in texture. You don’t want any big chunks of spice on your wings. First, it might burn when you cook the wings. Second, no one wants to bite into a big chunk of… .something. If you have to, just put the spices into a mortar and pestle and give it a few good grinds to make it finer. I also like to use an old coffee grinder to grind my spices for moments like this.

Deep-Fried Dry Wings

Oh how I do love dry wings. Normally, that means ‘just’ seasoning wings hot off the grill or out of the air-fryer. This time I decided to up my game and try deep-fried dry wings. There’s nothing fancy or complicated going on here. Just a simple coating with tons of flavor, fried until crispy golden, and tossed in more seasoning. Every bite is full of flavor. I love these wings.

I like to keep my deep-fried dry wings as simple as possible. Most of the time I’m making these for lunch so I don’t have a lot of time for fru-fru batters or complicated techniques. But that doesn’t mean I don’t want great wings. If I’m making wings you can bet they’re going to be great.

Have It Your Way

You can use just about any seasoning you want for these wings. It doesn’t have to be a wing seasoning either. Burger seasonings, chicken, you name it, they all work here. As long as you like the seasoning, you’ll like the wings!

Deep-Fried Dry Wings

Instructions

For the coating

  • Place the ingredients in a bowl or sealable container. Cover and shake to combine or whisk.
  • Keep in an airtight container until ready to use.

For the wings

  • Place wings in a resealable container or baggie.
  • Add a tablespoon of the coating. Seal and shake to coat. If you want a thicker batter, add more coating and shake again.
  • Heat 3" of oil to 350 F in a deep fryer or Dutch oven.
  • Add the wings and fry for 8-10 minutes or until golden brown and the wings are done. Remove to a paper towel-lined plate to dry.
  • Transfer the wings to a bowl and sprinkle with additional wing seasoning. Toss or stir to coat.
  • Serve immediately.

Notes

I prefer to season my wings immediately after cooking them. The seasoning will stick to the surface of the hot wings better than if you wait until they cool off.

Deep-Fried Dill Pickle Wings

Dill pickle. More dill pickle. And then, yes, even more dill pickle! These deep-fried dill-pickle wings satisfied my dill pickle craving in four ways! A wonderfully-seasoned fried wing coated in flour and of course, dill pickle seasoning. Sprinkled with more seasoning hot out of the fryer. A little cool dill pickle dipping sauce. And of course, a few dill pickle slices. These are my kind of dill-icious wings!

Light On The Batter, Heavy On The Flavor

I didn’t go crazy with the batter on these deep-fried dill pickle wings. Just enough to get a good little crunch in every bite. And lots of dill flavor. I seasoned the flour heavily. I wasn’t shy at all. Experience has taught me that more is always better when it comes to seasoning flour. After all, these aren’t called deep-fried flour wings. So load up on the dill pickle yumminess!

  • Combine all ingredients. Refrigerate until ready to use.

For the wings

  • Combine the flour and seasoning in a large bowl.
  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the flour mixture and turn to coat well. Transfer to a plate and place in the fridge for 30 minutes.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.
  • Remove wings to a bowl and sprinkle with more of the seasoning. Toss to coat.
  • Serve.

Notes

For even more dill flavor, season the naked wings with the dill pickle mix and let set it at room temperature for 30 minutes before battering and frying.

Crispy Air Fryer Parmesan Wings

Well, here I go again. Another wing variation that I just cannot get enough of. Give me an excuse to use a lot of Parmesan and I’m going to go all-in. And that’s what I did with these crispy air fryer Parmesan wings. Perfectly crunchy bite-thru skin. Like crazy perfect. Great by itself, but add an easy garlic-flavored Parmesan topping and I’m going full bulldog on it. I loved these wings. They are perfect!

Oh So Cheesy!

The original recipe for these crispy air fryer Parmesan wings called for adding chives. I love chives. Chives would’ve been great on these wings. But sadly, no chives were to be found near me. So I went with just a little parsley, mostly for color. I was ok without the chives since I was in town for the Parmesan!

Nice and Crispy

You can use the approach in this recipe for making crispy skin on any air fryer wing recipe. Whether you are using a store-bought seasoning or just salt and pepper, add a bit of baking soda before cooking the wings.

  • Combine all ingredients.

For the wings

  • Lightly spray your air fryer basket with non-stick spray. Preheat per manufacturer's recommendation to 400 F.
  • Place wings in a large resealable baggie or container.
  • Combine the baking powder, salt and pepper and add to the bag.
  • Seal and shake to coat.
  • Add to the air fryer basket and cook for 10 minutes.
  • Flip the wings and cook another 10 minutes.
  • Remove wings from the air fryer and place in a large bowl.
  • Drizzle with the melted butter and toss gently to coat.
  • Sprinkle with about 2/3rds of the garlic parmesan mix. Toss gently to coat.
  • Transfer to a serving platter and sprinkle with remaining garlic parmesan mix, garnish with parsley, and serve.

I personally feel like more garlic parmesan mix is better so I almost doubled it.

Copycat Plucker’s Medium Buffalo Wings

It’s a tremendous understatement to say that I love Plucker’s wing sauces. I’ve tried many of their bottled sauces and they are all absolutely fantastic. I devoured my last bottle of medium Buffalo sauce, so I had to resort to making a copycat Plucker’s medium Buffalo wings sauce. Oh, and all was right in the world again! The perfect amount of heat, just enough to wake me up but not so much to make me cry. Wonderful traditional wing flavor. These are the wings that are destined to disappear in no time.

Perfect Heat and Flavor

I cut the recipe down so I could enjoy a small batch of copycat Plucker’s medium Buffalo wings for my lunch. No point in heating up my huge restaurant-style deep fryer for just a handful of wings. So, I used my Fry Daddy fryer instead. This little fryer gets a workout in my house. It’s the perfect size for a small batch of wings.

I usually reach for the Frank’s RedHot Original Cayenne Pepper Hot Sauce when I make anything Buffalo-style. And sometimes I’ll go for Crystal Hot Sauce, which has a wonderful Louisiana-inspired flavor. You want a traditional cayenne sauce, and not something flavored like a habanero mango hot sauce!
