Twice-Fried Air Fryer Wings

What started out as an experiment turned out to be some of the best wings I’ve made. These twice-fried air fryer wings have tremendous flavor. More than just if I’d just seasoned some wings and tossed them into the fryer. No sauce at first. An initial cool and an overnight stay in the fridge turns out almost like dry-brining the wings. The meat has much more flavor. The texture is still great. The skin is still crunchy. Saucing them after the second fry is optional in my opinion. They’re great without a sauce.

More Flavor. More Better.

I recommend that you go heavy with the seasoning for the first fry of these twice-fried air fryer wings. That flavor will ‘soak’ in overnight in the fridge. You don’t need to season them again after that. You can add some after the last fry if you want. And you can add sauce at that time too, if you wish.

Instructions

  • Lightly spray the basket of your air fryer with non-stick spray. Preheat per manufacturer's recommendation.
  • Toss the wing flats and drumettes with the seasoning.
  • Add the wings to the basket (be careful it’s hot!). If you have trouble fitting them without overlapping, stand the drumettes along the sides of the basket.
  • Cook at 360 F for 12 minutes.
  • Carefully flip the wings (rotate the drumettes if they are standing) and cook another 12 minutes again at 360 F.
  • Flip the wings one last time. Cook another 6 minutes at 400 F.
  • Remove wings and let them cool completely. Place into a resealable container and place into the refrigerator overnight.
  • Preheat your air fryer per manufacturer's recommendation to 400 F. While the air fryer is heating remove the wings from the fridge.
  • Add wings to air fryer basket and cook 10-15 minutes or until hot.

I eat my share of wings. And then some. Usually, that means picking up a family pack of 3-4 pounds of fresh wings at the grocery store and cooking them up in whatever way I want. But, I also always keep some frozen, pre-made wings on hand for ‘wing emergencies’. And because, well, I like them. Crunchy Battered Yumminess

Tyson Caribbean Style crispy wings are a variety of wing pieces that are seasoned and battered. Some pieces are big, some are small and some are in-between. All you have to do is toss them into the air fryer or oven for a little bit. They come out hot and crispy. They have a hint of spiciness to them, with a slight hint of island-inspired flavors. The seasoning is not overwhelming. It’s very nice and right down the middle of the road as far as not being too strong. You could easily serve these wings to a crowd for the big game, though you’d probably want to make them in the oven since you can only do a small amount at a time in the air fryer.

A Little Extra Cook Time

I like to cook these wings a few more minutes longer than the bag states for the normal cooking time. It could just be my air fryer or oven. But I do like crunchier wings, and that extra time gets me to wing happiness.

Not Just For Football Games

You can easily cook up a batch of these wings and serve them with your favorite sides for a meal. Don’t just think of them as handheld goodies for the big game. They’re great any time! So make some Caribbean rice and maybe some black beans and enjoy!

  • Ranch dressing optional, for serving. Or use your favorite

Instructions

For the air fryer

  • Lightly spray your air fryer basket with non-stick spray. Preheat your air fryer to 360 F per the manufacturer's instructions.
  • Add the wing pieces and cook for 12-14 minutes. Note: I prefer 16 minutes. I recommend checking them after 12 or so minutes to see if you are happy with the color of the wings and remove them before 16 minutes if desired.
  • Remove wings and let cool for 2 minutes before serving.

For the oven

  • Preheat oven to 400 F. Line a baking sheet with aluminum foil.
  • Add wings and cook for 10 minutes. Flip and cook another 10-15 minutes.

Notes

Da Kine Hawaiian Original Dry Rub Seasoning Wings

The best things about dry wings are the super-crunchy skin and the wonderful combination of flavors. Although you can get great flavor in a wet wing, the skin doesn’t like to stay crunchy too long in the sauce. About half the wings I make are dry. Just like with wet wings, the combinations are almost endless. Today I made some Da Kine Hawaiian Original Dry Rub Seasoning wings in my air fryer. They were truly enjoyable.

Da Kine Hawaiian Original Dry Rub is a wonderful combination of saltiness along with hints of garlic, lemon pepper and coffee. Yep, coffee. It’s that essence of coffee that really adds amazing depth to these wings. I couldn’t get enough of the seasoning. I liked it so much that I seasoned my wings three times. Once before cooking. Again after cooking. And then again after plating.

You can make dry wings using any technique you like. Just grab a bottle of seasoning and got nuts with it!

  • Flip the wings one last time. Increase the temperature to 390 F and cook another 6 minutes (4 minutes for smaller wings).
  • Remove wings to a bowl and sprinkle with more of the seasoning. Toss to coat.
  • Serve.

Kentucky Kernel Seasoned Flour Chicken Wings

There are those that would argue that these Kentucky Kernel Seasoned Flour chicken wings are ‘just’ fried chicken. Yep, they are. They’re right. Well, not about the ‘just’ part though. These wings are delicious no matter what you call them. To ‘Buffalo-ize’ them I serve them with some sauce on the side for dunking. There, now we’re all happy!

Through Thick Or Thin

Many Buffalo wings are battered and fried. Some have a thick coating. Some thin. These Kentucky Kernel Seasoned chicken wings are somewhere in the middle. They’re not overly battered so you might call them grandma’s fried chicken. But they aren’t so lightly battered that you’d call them traditional Buffalo wings either . Yes, I know, some folks don’t batter their Buffalo wings… but some do!

These wings have a wonder flavor. The seasoning in the batter is perfect. Not spicy, just tasty. Great just as they are, right out of the fryer. Even better, I think, dunked in Buffalo wing sauce. Not tossed in it, though. Tossing the chicken in sauce knocks off that crunchy batter and makes it soggy. So I go for the dunk!

Oh and yes, you can make these wings instead, if you prefer. I went for the deep-fry because that’s what I prefer!

  • Dunk the wings in the milk. Get them well-coated then shake off any excess.
  • Add the wings to the fry mix and turn to coat well. I like to press the wings into the mix several times to make sure I don't get any 'bald spots'.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.
  • Serve.

Serve with your favorite dipping sauce or wing sauce on the side, if desired.
I like to put my milk in a short glass and then dunk the wings into it. You can also add it to a bowl and just roll the wings around to get them well-coated.
Sure, you can bake your wings instead of deep-frying them! Just follow the instructions on the package.

Orange Sesame Wings

We love chicken wings with Asian-inspired flavors. We tend to favor the sweeter sauces versus the super hot and spicy. These orange sesame wings were absolutely incredible. As simple as they are, using easily-found ingredients, we could not stop commenting about how great they were while we devoured them. There’s a slight sweet orange citrus flavor and a good amount of sesame.

I sometimes find sesame-infused flavors to be easily overpowering, but not in this case. The orange marmalade cools it perfectly. And if you do want a bit of heat to offset the sweetness, add a few pinches of red pepper flake to the sauce.

Two Ingredient Wing Sauce

I am not a hot sauce aficionado. I know what the Scoville scale is, and I know that in general, the smaller the pepper the hotter it is. And there ends my hot sauce knowledge. But I do know what I like, and fortunately there are hundreds and hundreds of hot sauces on the market. All screaming ‘put me on wings’. It can’t get any easier to take that delicious hot sauce and turn it into an ever more delicious wing sauce using my two ingredient wing sauce technique.

Your Heat Your Way

I tend to lean towards the fruit-based hot sauces, and ones that aren’t super-duper hot. They make for the perfect wing sauces. I usually make them using the ‘hot’ technique listed in the steps in my two ingredient wing sauce recipe below. For that spice level I use equal amounts of butter and hot sauce. You can vary the ratio to suit your liking and the sauce you’re using. I’m kind of a butter-a-holic, so I’m happy with more of it rather than less!

Teriyaki Dry Wings

Man, these Teriyaki dry wings were so good. They disappeared in no time at all. It’s amazing the great flavors you can get with so few ingredients and in no time at all. You can’t beat these wings. The star of the show is the dipping sauce. If you’ve never had dry wings now is the time to try them. Having the sauce on the side means you get to enjoy the best of both worlds. Nicely spiced, tasty dry wings and a great sauce.

I used my Char-Broil The Big Easy TRU-Infrared Oil-less Turkey Fryer to cook Teriyaki wings, but you can use a regular grill or even bake them in the oven. Or however you want to cook them. Just serve them while they’re still hot and you’ll enjoy some of the best wings around!

The air fryer is my go-to tool for making fantastic dry wings. They’re so simple, so easy, but oh so delicious. Today, I made a little batch of Sweet Peeper air fryer dry wings for my lunch. Spicy Buffalo Ranch Wings

I’m always in the mood for a big ole batch of chicken wings. They don’t always have to be spicy, and they don’t always have to be traditional. But the other day I was craving that great Buffalo-wing flavor. With a twist. So I fired up my grill and made a few spicy Buffalo Ranch wings. These wings have just the right amount of heat. I thoroughly enjoyed my spicy Buffalo Ranch wings. They really hit the spot. The sauce is the right consistency, the right spiciness. I think the sauce is perfect for a wing party. It’s a nice change from ‘just’ straight-up Buffalo wings.

I used Crystal hot sauce when I made this sauce. It’s definitely one of my go-to, super-tasty, just nicely spicy hot sauces.

Ramen-Seasoned Wings

I’ve come across recipes for Ramen-crusted chicken wings on the internet, but never really got into the idea. But I did get into the idea of dusting some mighty fine cooked wings with Ramen seasoning (you know, the little spice packets from the noodle packages) and serving them with an out-of-this-world peanut dipping sauce. And I didn’t leave off the noodles, nope! A quick fry in a pan with a little oil, and boom! Crunchy wing topping! These Ramen-seasoned wings with peanut dipping sauce disappeared in no time!

If you really love Ramen seasoning don’t be afraid to double the amount of seasoning used. I always have Ramen seasoning on hand because I like to crunch up the noodles and fry them for topping salads. More is better on these Ramen-seasoned wings with peanut dipping sauce.
