Salt and Pepper Wings

Oh my goodness. I’m a big-time chicken wing fan. Any time, anywhere, I’ll eat wings. With darn near anything on them. But sesame oil infused with garlic, onion and jalapeno? I mean, it sounded good but not something I’d ever had on wings. And wow! Was I ever surprised as to just how great these salt and pepper wings were.

Oh you get the salt and lots of black pepper, but then you get this wonderful Asian-inspired flavor that is impossible to stop eating. The sauce is the perfect balance between sharp sesame oil, spicy pepper and garlic and onion. No one flavor overpowers the rest. It’s very, very good.

Next time I fry a chicken I’m coating it in the same sauce as I used for these salt and pepper wings. And next time I make these salt and pepper wings I might double the sauce because it’s seriously addictingly good.

I like to make my spice, rub and seasoning mixes in big batches and keep them in large bottles with easy-to-pour shaker lids.

Plucker’s Baker’s Gold Wings

Apparently, some of the staff working at Plucker’s came up with the recipe for Baker’s Gold wing sauce. Well, hats off to them for coming up with something totally different! Baker’s Gold is (I think!) a combination of two great BBQ sauces: a smoky ketchup-based sauce like a KC BBQ sauce, and a spicy mustard vinegar-based sauce, such as you’d find in the Carolinas. Heck, why make two different batches of wings with two different BBQ sauces when you can have them both in a single one! Boom! And put it on wings?!? Crazy smart! Brilliant even! Plucker’s Baker’s Gold wings are fantastic!

I picked up eighteen different bottles of wing sauce from Plucker’s. It’s a wing restaurant based out of Austin, Texas. Every single sauce, like the sauce on these Plucker’s Baker’s Gold wings, has been fantastic. So many different exciting flavors. I’d better get to making more wings!

What Are You Waiting For?

Go make some wings! It’s not that hard to do! My go-to method is to air-fry them. A little seasoning first. Air-fried to perfection. Fantastic aroma as they cook. Crispy skin. Juicy meat. Tender. Ready for a sauce. Air-fried wings can hold up to being tossed with sauce, so that’s what I do. If they were deep-fried with a batter I wouldn’t abuse them like that. I’d gently brush the sauce on. Or serve it on the side, for sipping.

Buffalo Wild Wings Sweet BBQ Wings

Sometimes BBQ-flavored wing sauces are too sweet for me. Or too BBQ-y. Not Buffalo Wild Wings Sweet BBQ wing sauce. I thought that this sauce was a spot-on BBQ sauce. Not only great on wings, either. I’d put this sauce on burgers, ribs, smoked chicken and even my crazy yummy pulled pork.

Outdoor BBQ Flavor on Wings

One of the nice things about Buffalo Wild Wings Sweet BBQ wing sauce, besides the great taste, is the consistency. This sauce isn’t too thin, so you don’t have to worry about it running off your wings or whatever you have it slathered on. No one wants a sauce lake on their plate. And it’s not too thick. No one wants gloppy sauce that can also be used as spackle. Nope, this sauce is just right.

Ranch Wings

I recently spent a few days in lovely Pittsburgh, Pennsylvania while attending a conference. I made sure I had my ‘to-eat’ list down before leaving, because one thing you can be sure of finding in Pittsburgh: good food. At the top of my list was dry Ranch chicken wings.

No, not dry like ‘ewww, this meat is dry’. Dry as in the wings aren’t tossed in sauce after being cooked. Instead they are dusted with seasoning. The end result is almost like roasted chicken, but with much more pronounced flavors. Now that we are back home, I had to make some of the favorites that I devoured in Pittsburgh, like these wings, which I first experienced in our hotel bar.

Sweet Baby Ray’s Garlic Parmesan Wings

I’ve always been happy with everything from Sweet Baby Ray’s. So I had pretty high hopes (and standards) for the newly-released Sweet Baby Ray’s Garlic Parmesan wing sauce. I knew I didn’t have to be worried I’d just wasted some hard-earned bucks on a sauce I wouldn’t like. And I knew it’d be loaded with garlic, but not too much. I knew it’d have hints of Parmesan. And I knew it’d be the perfect consistency. So, no surprises here. This is a great sauce. Sweet Baby Ray’s garlic Parmesan wings lived up to all of my hopes.

You Can See The Garlic. And Lots Of It!

Sweet Baby Ray’s Garlic Parmesan wing sauce is great on grilled whole chicken or pieces, too. And you can use it as a marinade. Or even a salad dressing. It’s a very versatile sauce. It really shines on wings, though. It’s a finger-licking experience and that’s what makes me happy and coming back to SBR’s sauces again and again! They don’t mess around over there at SBR. These Sweet Baby Ray’s garlic Parmesan wings are further proof of that!

Just Make Some Wings

You don’t have to get fancy making wings with this sauce. In fact, I recommend that you don’t. You want the wings to be the ‘canvas’ for the sauce. You don’t want them to ‘fight’ it. So don’t use some overly-seasoning wings that’ll do everything BUT complement the garlic parmesan greatness. If you season them, go with salt and pepper. That’s it. That’s all that’s needed.

Orange Wings

The idea for these orange chicken wings came to me quite easily. I had made a big, huge batch of orange chicken on my Char-Broil Big Easy and had a good amount of orange chicken sauce leftover.  Any time I have leftover sauce I think wings. The sauce has the perfect citrus flavor, with just a bit of heat and just a bit of sweetness. The perfect balance of flavors, making every wing a great taste experience. I loved it and could actually just drink the sauce.

I recommend only using fresh oranges for these orange chicken wings. After zesting one orange, juice it and then juice a few others until you get 3 cups. In a pinch, or when oranges aren’t in season, use a good quality orange juice. You want get that extra punch you get from the zest, but you’ll still end up with fantastic wings.

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

Orange Wings

This sauce has the perfect citrus flavor, with just a bit of heat and just a bit of sweetness.

For the wings

  • 3-4 pounds chicken wings flats and drumettes separated flats and drumettes separated, tips saved to make stock

For the sauce (makes enough sauce for 2-3 batches of wings)

Instructions

For the sauce

  • Saute the garlic in the oil in a medium saucepan for 2-3 minutes.
  • Add the remaining ingredients except for the cornstarch and water.
  • Stir and bring to a simmer and let simmer for 20 minutes, stirring occasionally.
  • Stir together the cornstarch and water.
  • Slowly whisk into the sauce. Bring to a slow boil while still stirring, then remove from heat.
  • Sauce should be nice and thick but not gloppy. Add a bit of water if it's too thick.

Blonde Beard’s Holy Hell Wings

I was afraid when I sauced up some hot-out-of-the-deep-fryer wings with Blonde Beard’s Holy Hell wing sauce. Cayenne and scotch bonnet peppers ain’t something to sneeze at. You gotta be careful. Now, I got the heat, oh yes, but the flavor! Oh my! This is one of the tastiest (and pretty dang hot) wing sauces I’ve ever had. Buttery, peppery, it’s just one killer sauce. I highly recommend this sauce to any Buffalo wing sauce lover.

Alabama White Sauce BBQ Wings

Alabama white sauce is the kind of BBQ sauce that I thought was a bit odd at first. I love mayonnaise, but in a BBQ sauce? Huh? Vinegar, yeah, I get that. But the mayonnaise threw me, even though I’m a mayo-holic. But like a good lil trooper, I tried it and boy did I love it. Do love it. I’ve made my own a few times, but I recently discovered Duke’s Alabama style white southern dipping sauce and it’s one that I really really like, so that’s what I put on my Alabama white sauce BBQ wings!

I like my Alabama white sauce BBQ wings just lightly sauced. Too much and I start to think I’m having potato salad. Or a creamy macaroni salad. G Hughes Sugar Free Sweet Honey Wings

It seems that, often, you can tell how many carbohydrates there are in a store-bought wing sauce based on just how yummy it is. Those sweet sauces don’t usually come for ‘free’. G Hughes Sugar Free Sweet Honey wing sauce is turning that idea around. Usually, sugar-free sauces are taste-free to boot, but not in this case. This sauce is packed with sweet honey flavor. And sometimes that sugar free stuff is a bit thin. Nope, not in this case either. This is a just-right-consistency sauce. No lakes of sauce at the bottom of my wing plate. This is a great finger-licking sauce. If the bottle didn’t say ‘sugar free’ I would’ve never even thought about it.

I was surprised by how good G Hughes Sugar Free Sweet Honey wing sauce was since I’d been burned by sugar free sauces before. I’m happy with this sauce, very happy, and I look forward to trying all of the other sauces from G Hughes, from wing sauces to BBQ sauces. I probably owe them an apology for doubting them.
