One of the smartest things I ever did was order a bunch of sauces and seasonings from Da Kine Hawaiian. In particular, I love their BBQ sauces. On wings. Yeah, they’d be great on ribs, burgers. The stuff you’d normally put BBQ sauce onto. Me, I’m all about wings. And BBQ sauce and wings are meant for each other. Especially when it’s Da Kine Hawaiian Spicy BBQ sauce wings. These are great wings. Really great. The sauce is slightly smoky. Slightly sweet. And there’s a hint of pineapple sauce. That makes this sauce so you good you’ll want to drink it out of the bottle. It’s great stuff. Get some!
Stop Reading. Go Make Wings.
So just make yourself some wings and sauce them up. No need to get fancy here, unless you want to. The wings can be as simple as salt and pepper and 20ish minutes in an air fryer. Or a little more, like battered and deep-fried until golden brown. Whatever works for you. Just get some sauce and get to eatin’! Da Kine Spicy BBQ Sauce wings will not disappoint you. Unless you didn’t buy enough sauce. Trust me. That’s disappointing.
When I ordered a bunch of sauces and seasonings from Da Kine Hawaiian I seriously had no idea what I was in for. Sure, everything sounded great from the descriptions and the pictures made me drool, but would the products back it up? Well, now that I’m on my second bottle of their BBQ sauce, I can say that these guys got it going on. The first thing I made, BBQ sauce wings, were fantastic. And these Da Kine Hawaiian Smoky BBQ sauce wings are just as fantastic. Maybe more fantastic. Coffee and pineapple combine in a slightly sweet and smoky sauce that is perfect on wings. And I know it’ll be fantastic on burgers and ribs too! And more!
Not That Sauce
There are tons and tons of BBQ sauces in your local grocery store. Smoky ones even. Well, this isn’t any of those. This sauce has amazing flavors. Hints of things unexpected. Delicious. And on wings? Yowsa! Da Kine Hawaiian Smoky BBQ sauce wings are something special. Just make some wings. Doesn’t really matter how you do it, and sauce them. And enjoy!
I can say without hesitation that this is my favorite bottle BBQ sauce.
Brrrrrrr
If you’re grabbing a bottle of the sauce out of the fridge (Da Kine or any other brand!), ready to sauce your wings, don’t. Don’t put that cold sauce on your hot, cooked wings. No. Set that sauce out for an hour before serving so it comes to room temperature. No hot wing deserves a cold sauce. Ever.
Wowsa. I really wasn’t expecting that these crispy wings using a griddle would be so tasty, so moist, and so tender. Really, I’m not sure what I expected. Not greatness, that’s for sure. But I really enjoyed them. This was my first time using my outdoor griddle for wings, and I can definitely say it won’t be the last. Not even close. What a great way to make fantastic wings, with minimal fuss, and great results.
Any Griddle Will Do
I decided to make these crispy wings using a griddle using a griddle insert on my large gas grill. I could’ve used one on a charcoal grill. Or a dedicated griddle. Or even a cast iron pan on the grill would work. Heck, any place where you can heat up a bit of oil and fry some wings will produce the same great results. I’m sure I’ll try these on my griddle inside too. The only downside to making them indoors is that they will splatter a bit.
An All-Around Great Approach
The overnight dry brine of the wings is what gives them that crunchy skin. And it also imparts a lot of flavor. Don’t cut corners on it. You can use the same dry brining for cooking wings in a variety of ways, too. Not just on a griddle. These are great baked in an oven, grilled, or in an air-fryer. It’s a solid approach that won’t let you down.

Sprinkle the wings with salt, baking powder and garlic powder. Toss to coat.
Place in the fridge (uncovered!) overnight.
Heat your griddle over medium heat.
Drizzle the wings with 1 tablespoon of the oil and toss to coat.
Add the wings to the griddle, being careful of the oil splattering.
Cook the wings 20-30 minutes, flipping often, until the skin starts to darken. If the wings get too dry add a bit more oil, again watching out for splatter.
You want to cook the wings to at least 165 F. For the best results, though, and the crunchiest skin, cook them to 195 F or even a bit higher.
Remove wings and toss with your favorite seasoning add back to the griddle, turning once, for 3 minutes total.
My wife and I recently visited The Island, located in Pigeon Forge Tennessee. One of the stores we happily stopped by was the Savannah Bee Company. As soon as we walked in the door the lovely aroma of honey hit us. The store was full of great things, from honey tastings to skin care products…. lots of things bee-related! My wife made a bee-line (you’re welcome for that one!) to the stuffed toys. Odd? I know! Me? Honey hot sauce. Not odd! I had wings on the brain as usual. So I grabbed a bottle and started dreaming of making honey hot sauce wings as soon as I got home. And when I did, I was rewarded with delightfully sweet wings with a wonderful kick from scotch bonnet peppers. There’s the perfect balance here. These are fantastic wings!
Butter. Or Not.
I like to mix a little melted butter in with whichever hot sauce I’m using to make wings. Like these Honey hot sauce wings. My two ingredient wing sauce has served me well over the years. But, your tastes might be a little different. Heck, some people just go straight up with the hot sauce on their wings. You might want more butter. I dunno. So here’s what I suggest: start by just heating the hot sauce a bit. You don’t want to put cold sauce on a wing anyways. Taste it. Now, if you want, add a tablespoon of unsalted butter and stir. Taste. Good? Stop. Want more butter? Keep going. You’ll find that perfect balance that works for you. Just remember for the next time you make these great wings!
Note: The first time you make the sauce for the wings, I suggest you start with less butter (perhaps half). You might want the sauce to be spicier. You can always add more butter if you want to tame it down a bit.
To make the sauce, combine the butter and hot sauce in a small saucepan over medium heat. Stir until melted. Keep warm until ready to use.
Creamy, yummy, great. With a hint of soy sauce. These Catalina wings more than hit the spot. I was amazed by how much I loved the flavor combination. Kinda like an Asian-inspired BBQ sauce. Easy as heck to make, too. If you’re looking for a simple wing sauce recipe that can be made from ingredients you already have in your fridge and pantry, this is it. It’s the only one you’ll need!
Make More
The sauce on these Catalina wings is great for more than wings. Slather it on grilled chicken breasts. On fried chicken sandwiches. Dip your nuggets in it. Brush it on ribs. It’s a great all-around sauce that has great flavor and the perfect consistency for just about any application.
You can make a spicy version of the sauce by simply stirring in some hot sauce or cayenne pepper. For a somewhat fancier version, try spicy soy sauce instead. It can be a little hard to find. Try your local Asian market or online if you can’t find it in your usual grocery store.
If you’re having trouble getting the onion powder to dissolve when stirring, just use a whisk. In a minute or two it’ll disappear into the sauce and you’re good-to-go!
No Fru-Fru Catalina Required
This recipe calls for Catalina salad dressing. You can make your own or buy it, like I did. There’s no reason to break the bank with it either. Just grab a bottle of Catalina. Name-brand, generic, store-brand, doesn’t matter.

If you have leftover sauce, just store it in a covered container in the fridge. When you’re ready to use it let it set out on the countertop for a good 30 minutes ahead of time. You do not want to put a cold sauce on hot wings. Ever!
I’ve been wanting to make these crispy Buffalo wings using a gas grill for a while. It’s not that I don’t make wings on a grill often. I do. But I use a thing called a Vortex BBQ and I make them on my charcoal grill. It helps me get amazingly crispy skin using very high temperatures. That’s not what I’m doing here, though. I wanted to prove that I can make fantastically crunchy skin wings without my Vortex, without charcoal. All on my gas grill. And boy did I. These great wings take just little effort, just a little time, and come out fantastic.
It’s Super Easy
There are just two simple steps to making crispy Buffalo wings using a gas grill. First, you need to air dry the wings coated in seasoned baking powder (not baking soda) overnight in a fridge on a wire rack. This helps dry out the skin, making it easier to get it crispy later. And second, when it comes time to cook the wings, make sure you have your grill set up for direct and indirect cooking. You want one side super hot while leaving the gas off on the other side. That leaves you a less hot zone, called indirect grilling, to cook your wings without worrying about burning them. The high heat circulates around the wings helps crisp up the skin.
Place the wings in a large bowl or resealable container.
Combine the baking powder and Cajun seasoning.
Sprinkle half of the seasoning mix over the wings. Using your hands, toss the wings to coat.
Add the remaining seasoning and repeat.
Transfer the wings to a wire rack over a baking sheet. Place in the fridge 12 hours or overnight to dry out the skin.
Fire up your gas grill for two zone cooking. On one side, have the burners turned as high as they will go. This will be the direct heat zone. Leave the other side unlit. This will be the indirect heat zone, where you'll cook the wings. Give the grill plenty of time to preheat. You want maximum heat over the direct zone.
Place the wings on the indirect heat side of the grill.
Cook until the wings are lightly browned and crispy, usually 45 minutes. Check them after 30 minutes since cook times will vary depending on your grill and conditions (wind can make them take longer).
I admit it, I do eat my share of chicken wings. Most of the time that means picking up a family pack of 3-4 pounds of fresh wings at the grocery store and cooking them up. Fried, baked, grilled… any way I want. I also always keep some wings on hand in the freezer. Why? Because, well, I like them and they are quick and easy. I picked up a bag of these Tyson Smoked crispy wings and made them the other day in my air fryer. And ya know, for fast already-made wings, they were pretty good!
Crunchy Battered Yumminess
Tyson smoked crispy wings are a variety of wing pieces that are “smoked” and battered. Some pieces are bigger than others. Some are meatier than others. Cooking them involves tossing them into the air fryer or oven for a little bit. That’s it. They come out hot and crispy. Like really hot. So be careful with them until they cool a bit.
You can sauce the wings after you heat them or leave them un-sauced. They’re smaller wings, usually, making them easy to dunk in your favorite sauce or dressing. You could easily make these wings for a crowd, though you’d probably want to make them in the oven since you can only do a small amount at a time in the air fryer.
A Little Extra Cook Time
I like to cook these wings a few more minutes longer than the bag states. It could just be my air fryer or oven. I do like crunchier wings. That extra time gets me to crunchy wing happiness.

Instructions
For the air fryer
Lightly spray your air fryer basket with non-stick spray. Preheat your air fryer to 360 F per the manufacturer's instructions.
Add the wing pieces and cook for 12-14 minutes. Note: I prefer 16 minutes. I recommend checking them after 12 or so minutes to see if you are happy with the color of the wings and remove them before 16 minutes if desired.
Remove wings and let cool for 2 minutes before serving.
For the oven
Preheat oven to 400 F. Line a baking sheet with aluminum foil.
Add wings and cook for 10 minutes. Flip and cook another 10-15 minutes.
I had no idea really how much I’d enjoy these baked Thousand Island wings. I kind of have a thing about baked wings to begin with. And the ingredients for sauce, although each yummy on its own, seemed like one of most unusual combinations I’d ever seen. Well, let me tell you folks. You need to make these. And not like next month. Not even next week. Today. Now.
Yummy Sauce. Big Time Yummy.
Thousand Island dressing. Apricot preserves. Onion soup mix. Huh? But you know what, the sauce is AMAZING! I could drink this stuff. Literally. Heck I don’t even really like apricots and I would go for adding more to this sauce. It’s like the whole world turned on its side and my eyes (and mouth!) opened to great new flavors! I’ll definitely be making these baked Thousand Island wings again and soon.
Great Baked Wings???
I don’t usually like baked wings not because of how they taste but the texture is sometimes just not there for me. I like a clean bite-thru skin. I want a bit of color. And a bit of crunch. I actually got all those things with these wings.
If you’re looking to impress a crowd with super-flavorful wings that aren’t the usual Buffalo-flavored kind, make these and impress everyone!

Instructions
Preheat oven to 350 F.
In a medium bowl, whisk together the dressing, preserves and onion soup mix until well combined and smooth.
Lightly spray a baking dish with non-stick spray. I found that a glass dish seems to work best.
Arrange the wings along the bottom of the pan. Do not let them touch or overlap.
Pour the sauce over the wings. Get it spread out evenly.
Cover the dish with aluminum foil and bake for 30 minutes.
Remove the foil (but do not discard!). Return the pan to the oven and bake another 30 minutes.
Remove wings from oven and serve hot.
Optional: Spray the foil with non-stick spray on one side and transfer to a baking sheet. Transfer the cooked wings to the foil and place the pan under the broiler for 2-4 minutes (keep an eye on it!) to brown the wings and give them a bit of a crunch.

The Search…
I am always on a quest for the next best wing cooking idea. Recently, I discovered the best way for making crispy wings on the Char-Broil Big Easy, which came out fantastic. But, I was still looking for the best way to get crispy wings on my charcoal grill. That’s when I discovered the Vortex and Vortex chicken wings are amazing. The Vortex is an insert for your grill that let’s you concentrate the charcoal heat, making for an incredibly hot fire. As you can see below, the wings ring the Vortex, getting super hot and in just a while, crispy. And it couldn’t get any easier.
Best Thing Ever…
I couldn’t be more happy with my Vortex purchase. I purchased the small-sized model, which works fantastic on my old 18″ Weber kettle and 22″ Weber Performer grills. But, a larger model is available for the 22″-26″ cookers.
Since I originally posting this recipe, I’ve made wings on my Vortex hundreds of times. I’ve found that rotating the lid isn’t so critical (specially when cooking on a smaller grill such as the Jumbo Joe). For a little smoky flavor, throw a nice chunk of your favorite wood (I like hickory or cherry) over the Vortex about 5-10 minutes before you put your wings on. You don’t want ‘raw’ smoke on your wings, so let the wood smolder a bit first.
Oh man. My goodness. You talk about great tasting wings. These arbol chili and garlic wings were different and very, very tasty. The sauce is a wonderful blend of chiles, garlic and just enough jalapeno to give it a mild kick. A great kick. And oh such a great flavor. Southwestern-inspired, I would almost call this sauce an enchilada or taco sauce. And it’s fantastic on wings.
Perfect Heat
I mix the sauce with a little butter. Honestly, though, you can just drizzle it on your wings directly without it. Arbol chili and garlic wings are great either way. If it’s your first time making them I’d suggest you start out slow. Try the sauce right out of the bottle. Then try it with a little melted butter. See what you think. I like the taste of butter and a great hot sauce. You might want more hot sauce. Or more butter. Either way, you’ll end up with great wings in the end.
