Shore Lunch Spicy Cajun Style Wings

I like grabbing a breading box out of my pantry and making deep-fried wings. It’s easy. And luckily, there are several really tasty breading brands on the market. One of my favorites is Shore Lunch. And in particular, their Cajun-flavored breading. I know, the box says ‘fish breading’. You can ignore that. I did, and I used it to make some wings! Crunchy and flavorful, you’ll quickly realize that the box doesn’t have to say ‘chicken’ to be great for chicken!

Today, I wanted something with a bit more kick. So I ’embellished’ the breading and made some Shore Lunch Spicy Cajun Style wings. Same great flavor as the original, but with some heat. Oh yeah, these are my kind of easy wings!

No Sauce Required

These Shore Lunch Spicy Cajun Style wings don’t require a sauce. They’re great just as they are, right out of the deep fryer! But, if you’re craving a little sauce, a little something more, serve them with some Buffalo sauce on the side. Or your favorite dressing. But honestly, the wings are so good without it you won’t miss it if you just eat them ‘naked’.

Ingredients

For the wings

Instructions

  • Add enough oil to a deep fryer or Dutch oven to cook the wings. Bring to 350 F.
  • Rinse wings and pat dry. Transfer to a large bowl.
  • Place breading mix into a large resealable baggie and add the cayenne. Seal and shake. Work in batches if you don't have a large enough bag.
  • Crack the eggs into a small bowl and beat lightly.
  • Working in batches, coat the wings in the eggs then place into the bag. Seal and shake to coat.
  • Fry wings 8-10 minutes or until 180 F internal temperature. Remove to a wire rack or paper towel-lined plate to drain.
  • Remove to a paper towel-lined plate then to a wire rack to cool slightly.

Kinder’s Buttery Buffalo Party Wings

Remember as a kid how happy you were if you got a gold star at school? I don’t remember getting many, but when I did, I was happy. I’d give Kinder’s Buttery Buffalo Party wings a gold star. Most frozen, pre-battered wings haven’t made me happy. These did a pretty good job of it. The batter was tasty and a little crunchy. As a bonus, they come with a good Buffalo wing sauce, perfect for dipping, tossing or drizzling. Were they the best wings I’ve ever had? No, but for what they are, they were pretty darned good and worthy of a gold star!

Grab A Few Bags For A Crowd

I put a good hurt on my bag of Kinder’s Buttery Buffalo party wings. I got two servings out of a bag. Now, I wasn’t having them as an appetizer, so in the ‘real world’ you could probably feed 4 from a bag. So if you’re planning on feeding a party of people, grab a few bags.

I made my wings in an air-fryer. I think that the air fryer always gives me the best crunchy wing. Well, unless I want to get my deep-fryer out that is. For a crowd, I’d use the oven instead since I can cook a whole lot more at once.

The sauce that comes with these wings is frozen in a bag, like gravy for some turkey roasts. You just dunk it in some hot water before serving. It’s not bad actually. I would recommend serving it on the side so people can dunk their wings. Tossing batter-coated wings in sauce makes them soggy and quick. Plus, some folks might not want a sauce.

  • Drizzle the wings with the sauce and toss to coat.
  • Serve.

For the oven

  • Preheat oven to 425 F.
  • Line a baking sheet with aluminum foil.
  • Add wings and cook for 20-24 minutes,, turning after 10 minutes.
  • Meanwhile, remove the sauce packet and place in a cup or bowl of hot water.
  • Remove wings and place in a bowl.
  • Drizzle the wings with the sauce and toss to coat.

A delicious chicken wing and a good BBQ sauce make for a great combination. A store-bought sauce doesn’t have to say ‘wing sauce’ on the label for me to put it on my wings. Darn near anything will do. Especially when it’s as good as these Traeger Grills Sweet and Heat BBQ sauce wings! Great traditional smoky BBQ sauce flavor in a tomato-based sauce. A hint of heat. And a bit of sweet. The perfect balance. This is one finger-licking good sauce that is perfect on a wing!

Batter Up!

I deep-fried my Traeger Grills Sweet and Heat BBQ sauce wings. Nothing fancy. But I wanted a good, crunchy coating on my wings. Not fried naked. And almost like grandma’s fried chicken. Just not as thick a batter. That crunchy outside was perfect for the sauce. It hid in the nooks and crannies. With every bite I was guaranteed to get sweet heat deliciousness. That’s what I was after. That’s what I got!

You can, of course, cook your wings any way you like! Just get them good and coated in the sauce before serving!

Braswell’s Spicy Hot Wing Sauce Wings

I could wings using a lot of different techniques and tools, but the air fryer is probably most common just because it’s fast and easy and is perfect for making a batch of wings just for myself. It’s as simple as seasoning them, cooking them, and saucing them. Today I made a batch of Braswell’s Spicy Hot Wing Sauce wings. Kind of a traditional Buffalo wing sauce, it made for the perfect lunchtime wings. A little kick. Tremendous flavor. What more could I ask for?

Fantastic seasoning with a wonderful slightly different taste. The heat level isn’t very high. I’d call them sorta spicy. Spicy-ish? Depends on your level of heat tolerance, though. Some might say they’re quite spicy. So if you’re serving these to your pals, ya might want to give them a heads up first!

Easy Steakhouse Wings

I actually surprised myself. I was not expecting to fall in love with these easy steakhouse wings. Heck, I thought they’d be too ‘steak-saucy’. You know, like that time as a kid when you dumped half a bottle of steak sauce on your steak at Howard Johnsons. Ok, maybe that was just me. But still, too much steak sauce is…. too much… for me. But not here. I loved these wings. I went light on the sauce and the flavor came out perfect.

I made a batch of my standard air-fried wings when I made some easy steakhouse wings for lunch. You can also toss them into the oven at 400 F for 30-40 minutes. Or deep fry them. Whatever you want. The key here is to make wings that aren’t going to ‘fight’ the steak sauce. No fancy seasonings. Keep it simple. Salt and pepper is all you need. Just like cooking a steak, fancy is not required.

Zatarain’s New Orleans Style Hot and Spicy Chicken Wings

This right here is why I go down the aisle of my local grocery store where they have the chicken fry mixes. There’s usually quite a few of them, and I like to try them all. There are hot ones. Mild ones. A few crunchy ones. Even extra crunchy. All sorts of them. So I always grab some. And I go home and make some wings! Today I made some Zatarain’s New Orleans Style Hot and Spicy Chicken wings. It’s the perfect batter. The kind that sticks to my wings. And it’s nicely crunchy but without being too much so. It’s spicy, but definitely not too spicy. This is my kind of wing mix!

Sauce. On The Side.

Sure, you bet, I could eat this Zatarain’s New Orleans Style Hot and Spicy chicken wings straight up. Naked. Without any sauce. And I have and they are darned good. But I can also sauce things up a bit. But on the side. I am not a fan of saucing deep-fried battered wings, in most cases at least. You go to tossing those wings in sauce and two bad things happen. First, that crunchy, delicious batter starts flying off. That’s not good at all. Second, what batter is left gets soggy. And that’s not good either. So I pour my sauce in a little ole cup on the side, perfect for dipping or drizzling right before I take a bite! Perfect!

  • Heat 2-3" of oil in a deep fryer or Dutch oven to 350 F. While the oil is heating, prepare the wings.
  • Combine the 2 1/2 tablespoons of mix and water in a small bowl. I like to use a whisk to get the mix well distributed.
  • Place the 1/4 cup of mix in a flat bowl such as a small salad bowl.
  • Working in batches as needed, first coat the wings in the wet mix. Get them all good and wet on all sides.
  • Transfer the wings to the dry mix and roll them around, pressing lightly, to coat completely. Add more mix if you need it. Don't be shy!
  • Fry the wings 8-12 minutes or until they reach 165 F. Remove to a paper towel-lined plate to drain.
  • Serve with your favorite sauce for dipping.

Notes

I recommend dipping your wings in sauce instead of tossing them in the sauce. Tossing will knock off that beautiful crunchy batter!

Chili Maple Wings

Hot Ones hot sauces makes a number of tremendously tasty hot sauces. They aren’t all over-the-top spicy, either. More, they concentrate on flavor over heat. I am addicted to their chili maple hot sauce. It has a low eat level. It’s a little sweet thanks to maple syrup, which also adds an amazing flavor. The spiciness comes from Fresno chilis. With just the right amount of vinegar, this sauce makes for tremendous chili maple wings!

While my wings are cooking up, I like to just mix a little hot sauce with butter. That’s it. It’s the world easiest wing sauce. With such a wide selection of hot sauces available, it’s the best way to make totally different-tasting wings every day of the week! These chili maple wings are a great example! I made mine the ‘mild way’ but all variations are great!

Kirkwood Honey BBQ Chicken Wings

I’m a fresh wing kinda guy. Usually. Sometimes I don’t have time to prepare wings from scratch. Or worse, I can’t find fresh wings in my grocery store. Or I just want to try something new. I was in Aldi the other day, picking up fresh wings (they have great fresh wings). I decided to check out the freezer cases before I headed to the checkout. And there they were. Kirkwood Honey BBQ chicken wings (and Buffalo style wings, too!). They looked good. I bought them. And I made them. And you know what? They were good!

Actual Wings. No Weird Stuff.

I’ve purchased some weird looking frozen wings. They were pre-battered, like these. But they didn’t look like wings. Kirkwood Honey BBQ chicken wings are pre-battered. And they look like wings. Because they are actual wings. They’re sauced just right, in a sauce with good BBQ flavor and a hint of sweetness. They’re meaty. I liked them. A lot.

These wings are sauced. A lot. No searching for sauce on these. It’s everywhere. So grab a pile of napkins!

Seven Servings. LOL.

The 22 ounce bag of wings I bought said it was 7 servings. Maybe somewhere in an alternate universe of really tiny people. Not me. I’d call them 4 servings at most. If you’re having a big party and need a bunch of wings, these are going to go over great. Just make sure you buy more than you think you’ll need. They’re good and people will want more. You bet I did.

I baked my wings on a silicone mat. I tried what the instructions on the bag stated and sprayed a baking pan with non-stick spray, but found that the wings still stuck. The silicone mat was much better.

I like to use these little dipping cups for my wing dipping sauce. These Buffalo wings are great with a little blue cheese or ranch dressing!

  • Preheat oven to 400 F.
  • If you have a silicone baking mat, line a baking sheet with the mat and add the wings. If you do not have a silicone baking mat, liberally spray a baking sheet with non-stick spray and add the wings. I prefer to start with the bone-side of the wings down (for flats). For the drums it doesn't matter.
  • Bake for 15 minutes. Gently turn the wings. I use a fork or rubber spatula for this. I've found that tongs will tend to tear the coating/skin if the wings stick any.
  • Bake another 10-15 minutes or until turning lightly golden in color and the wings internal temperature is 165 F.
  • Let the wings rest for 5 minutes before serving. They will still be piping hot so be careful!

How To Cook Frozen Wings in an Air Fryer

I’m not particular when it comes to cooking my chicken wings. Baked, deep-fried, grilled, it makes no difference to me. As long as I’m eating wings I’m one happy guy! During the week, though, if I want wings for lunch I gotta go with a technique that gets wings done with minimum fuss so I can get back to work. That usually means air frying them. I prefer to start with fresh wings, but sometimes they just can’t be found, so I grab some out of the freezer. This is my go-to method. This is how to cook frozen wings in an air fryer.

How To Cook Frozen Wings in an Air Fryer

It’s really easy

This is not a complicated process. There’s nothing fancy about cooking frozen wings in an air fryer. No defrosting. Just cook them up a bit, season them, finish the cooking and sauce them. I sometimes also add more seasoning at the end.

Wing selection

Frozen wings come ‘pumped’. That means they are injected with a broth-like solution that plumps them up and keeps them juicy after cooking. Most frozen turkeys come the same way so don’t let the words ‘contains chicken broth’ scare you off.

I prefer sections when I buy frozen wings. Drumettes and flats, separated. Whole wings are fine, but they’re a bit harder to put into a small air fryer without them overlapping. You don’t want your wings to overlap, you want nice even cooking.

Seasoning

I like to season my wings with a light hand at first. I don’t want the seasoning to burn in the air fryer. So I add a little after the wings have cooked just a bit. When they are done I can add more, along with sauce if I’m using it.

I usually use salt and pepper for my seasoning, but I like store-bought ones too. If I want to make a mix at home, my fire-eater seasoning is my favorite.

Do not add the seasoning when the wings are still fully frozen. It’ll just roll right off the wings.

Saucing

You can use any sauce you want, of course. For homemade Buffalo-style sauces, I’m a big fan of my copycat’s of Hooter’s medium and hot wing sauces.

Dipping

Blue cheese dressing or my copycat of Wingstop’s ranch dressing make for great dipping sauces for your air-fried wings.

Cleaning up

I wipe my air fryer basket out after each ‘fry’. Every few cooks I’ll put the basket into the dishwasher for a good cleaning. But, I never put it directly into the dishwasher without wiping it out first. I don’t want all of that chicken grease in my dishwasher or my pipes. Check your air fryer’s cleaning recommendations for further information about cleaning your particular model.

It’s also easy to make great wings in a convection oven!

  • Preheat your air fryer to 400 F.
  • Add wings to the fryer basket and cook for 10 minutes. Do not overlap the wings. Try to not let them touch each other or the sides of the basket so that they cook evenly.
  • Use tongs to remove the wings to a bowl. Sprinkle with your wing seasoning and toss to coat.
  • Return to the air fryer and continue cooking another 10 minutes or until the wings are golden brown.
  • Remove from the air fryer. Toss with more seasoning and/or sauce and serve.

Notes

Do not thaw the wings ahead of time. You will cook them directly from the freezer.
