Jalapeno Buffalo Cheddar Wings

Messy. Very messy. And very good. Normally, I don’t drown my wings in sauce, but this time I had no choice. There was no turning back. These jalapeno Buffalo cheddar wings are so darn crazy good that I was going all-in like never before. I’m not sure why I was surprised. The sauce contains all of my favorite things. But yeah, they’re messy. And quite spicy, too. I could not stop eating them despite the mess and heat. And when I took that last bite I was sad. I really wanted more!

Jalapeno Buffalo Cheddar Wings

Worth The Mess

The sauce on these jalapeno Buffalo cheddar wings is also great on hot dogs and hamburgers. That’s a good thing since the recipe below makes more than you’ll need for a family pack of wings. I’ve found that the sauce is actually better the next day, so plan ahead and let it ‘get happy’ overnight in the fridge before using it.

You can make the sauce nice and smooth (like I did, for wings) or keep it a bit chunky for something like hot dogs or burgers. Just don’t process it as much in your blender or food processor. And remember, you can always process it more, but you can’t process it less so keep an eye on it!

Feeling Kinda Wimpy?

Hey nothing wrong with not wanting a lot of heat. There’s plenty of it in this sauce. But if you’re feeling like maybe you want a little less burn, you can substitute roasted green chiles for the jalapenos. That’s a start.

There’s not a lot you can do to cut back on the heat from the hot sauce. Why? Because it’s hot sauce. My only recommendation is to have a nice big bowl of ranch or blue cheese salad dressing nearby. I use these little condiment cups for that. They’re perfect for wing dunking!

Sweet Baby Ray’s Sweet Teriyaki Wings

Oh, deliciously sweet, sticky, Asian-inspired wing, how do I love you!? I looked like a bulldog with a pork chop when I started chowing down on some Sweet Baby Ray’s Sweet Teriyaki wings. Heck, you’d think I hadn’t eaten in a week. I couldn’t help myself. Yeah, there are a ton of things you can use SBRs sauce (and marinade) on, but for me, wings is it. Done.

So Sweet And So Good

Sweet Baby Ray’s Sweet Teriyaki wing sauce doesn’t pack any heat. It’s sweet, just like the name says. But, if you’re looking for that extra little something, a little kick, add some hot sauce. I wouldn’t go crazy with it though. This sauce is perfect as it is and a welcomed change from Buffalo-style wing sauces.

Remember that if you have to refrigerate your open bottle of wing sauce to let it sit out on the counter for at least 30 minutes before using. You don’t want to ‘shock’ hot, just-cooked wings with a cold sauce.

Buffalo Wild Wings Thai Curry Wings

I’m not required to pick a favorite, but this is my favorite wing sauce from Buffalo Wild Wings. The right amount of spiciness, a hint of coconut and a bit of curry. I could drink this sauce right out of the bottle. Buffalo Wild Wings Thai Curry wing sauce is fantastic on wings, and it’s also great on ribs, chicken sandwiches, and it makes a great sauce for dipping chicken nuggets.

Harissa Wings

After making roasted harissa cauliflower the other day (my first encounter with harissa) I knew after the first bite that the next thing I was going to make with the spicy red pepper paste would be Harissa wings. There was no doubt in my mind that I was in for a wonderful treat. You get a nice kick, but don’t be afraid. Harissa is not crazy spicy, not at all. It has a wonderful earthy flavor to it. I could eat it all day. On wings I could eat it all week.

Great Mediterranean-Inspired Flavors

The Harissa sauce for making harissa wings can be found in the Mediterranean section of your local grocery store. I haven’t tried making it home yet, but I will. The consistency reminds me a bit of hummus, though it’s certainly not hummus. But, oh…. it just hit me… harissa sure would be great in hummus! I’m off to try that now!

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

Honey Old Bay Wings

My addiction to Old Bay seasoning began long ago, in crab and shrimp boils. And as often as possible, I still feed my addiction. Now, though, I also get my fix with chicken wings. These honey Old Bay wings not only have that great seafood seasoning flavor, they have a bit of sweetness too. And a bit of heat. Not a lot, but just a hint. Nothing to overpower the main reason I made these wings: Old Bay flavor. I’m a big time Old Bay addict and I’m ok admitting it.

I think these are amazingly-good wings. No, they aren’t complicated. Not even close. They use ingredients you very likely have on-hand. And it requires almost no time at all to make. That’s just an all-around win in my book!

Honey Old Bay Wings

The Perfect Wings?

My favorite variation on these honey Old Bay wings is to leave out the cayenne pepper and substitute Mike’s Hot Honey for ‘regular’ honey instead. Mike’s Hot Honey is just that: hot danged honey! It’s creamy smooth and packs a serious kick. It’s not for the faint of heart, so if you’re a bit worried about the heat, try adding just a bit of it to your ‘regular’ honey and give it a taste.

Chipotle pepper powder is also a great substitute for the cayenne. It still adds a little heat. But it also adds a little smokiness. Heck, it is ground smoked dried jalapenos, after all!

No Heat Zone

Yep, you bet, you can leave out the cayenne pepper. There’s really not that much of it in the sauce but ‘not a lot’ can be subjective. If you want, just don’t even add it. Or add less.

Gold Fever Wings

Mustard. Chicken wings. I had no idea. Sure, I like mustard. On sandwiches, or hot dogs. Or burgers. But, wings? My beloved chicken wings? Yes. Oh yes. Gold Fever chicken wings have quickly rocketed to the top of the ‘chicken wings that we want regularly’ list around here. My wife absolutely loves them. Garlic Parmesan Wings

These savory garlic Parmesan chicken wings were just absolutely fantastic. Nutty Parmesan cheese pairs well with earthy garlic. For me, just a little bit of cool Ranch dressing for dipping is all that is required. I want to enjoy the flavor of the wings, so I just dip a bit, if at all. The sauce is mighty finger-licking good. And it’s loaded with garlic, my favorite.

Great Wings. Very Great Wings.

I cooked these garlic Parmesan wings on my Weber charcoal grill using the Vortex, which gives me that great crunchy skin and fantastic grilled flavor without a lot of effort. In fact, just about no effort whatsoever. It takes about 45 minutes for me to get the charcoal in the Vortex good and hot. Then it takes about another 45 minutes to cook the wings. The wings take on a great hint of charcoal flavor to boot, which is a nice change from deep-fried or even air-fried wings.

SouthHouse Spicy Ranch Wings

This is why you should not scroll through your Facebook feed too fast if it’s like mine and is full of food-related posts and ads. I don’t usually pay attention to ads but a recent one from SouthHouse, a sports bar and restaurant in Philadelphia caught my eye. I saw bottles of wing sauces and they all looked fantastic. They’re made in-house and sounded great, so I ordered a bottle of each flavor, including Spicy Ranch, to try out.

What’s The First Word In The Name?

The Spicy Ranch wing sauce is… spicy! That’s why the word ‘spicy’ comes first, I bet! It’s not super-Ranchy, and not buttermilk Ranchy like say, your favorite dressing. But as you can see below, it makes for some awesome-looking wings.

For me the heat in the SouthHouse Spicy Ranch wing sauce is just right. It hit me right up front, but then mellowed out as I went. So it’s not like I was curled up on the floor in a ball. I liked it. And I can use it as a dip for veggies too!

I’m a huge fan of making chicken wings without saucing them in the traditional Buffalo wing manner. I season them and let them marinate for a bit, then cook them. When they are done I toss them with more seasoning and serve them ‘dry’, with a dipping sauce on the side. This time I used Weber Garlic Sriracha Seasoning, which is a little spicy, for some garlic Sriracha dry wings.
