And absolutely, positively make sure you seek out great wing joints that also sell their sauces. The best sauces often come from smaller market restaurants and bars. They pay attention to taste and quality. They have to. There’s a lot of competition out there. You gotta make good stuff to stand out and succeed. And that’s how I came to find The Dirty Buffalo, a more-than-just-a-wing-joint around Norfolk, Chesapeake and Virginia Beach in Virginia. So I ordered a huge bunch of their sauces. Darned near everything they make. And oh, was I excited when they arrived and I made my first batch of wings: The Dirty Buffalo Hot Buffalo wings. This (and the rest I got from them) is one fantastically great sauce. THIS is why you seek these places out.

Deep-Fried For Wing Perfection

I started out with my favorite deep-fried wings. You can make any wings you like. Just don’t go seasoning them so heavy that you’re going to bury the flavor and heat from these The Dirty Buffalo hot Buffalo wings. The sauce is the winner here. A big winner.

Great Heat. Great Flavor.

The balance between heat and flavor is perfect in this sauce. This is easily one of the best kicked-up Buffalo wing sauces I’ve had. Traditional flavor, perfect consistency and the right amount of heat. I loved it. I’m glad I picked it first from my big box of bottled sauces. This is one great start on my journey through the sauces from The Dirty Buffalo.

Remember that if you are using a refrigerated sauce on your hot wings, make sure you let the sauce come to room temperature before using it. Nothing is sadder than a cold sauce on a hot wing.

  • Combine the flour, salt, cayenne and paprika in a large bowl.
  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the flour mixture and turn to coat well. Transfer to a plate and place in the fridge for 30 minutes.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.

I took a few days break from spicy wings. I’m back now. Thanks to these The Dirty Buffalo Hot Honey wings. Basically a sweet Buffalo-style sauce, this sauce holds on to your wings, tingles your tongue and makes you sweat a bit. With just the right amount of sweetness, you won’t confused these with dessert wings. They bring the heat and sweet.

I Went With Air Fryer Wings. Again…

I used my air fryer to make my standard batch of air fryer wings then sauced them well. You can make The Dirty Buffalo Hot Honey wings any way you want. Deep fried. Baked. Air fried. Convention oven. Grilled. It doesn’t really matter. And honestly, you could make yourself a good old crispy fried chicken sandwich too and pour this sauce all over it. This sauce is great on anything. Use it as a dipping sauce for chicken nuggets. Deep-fried onion rings. Anything you have lying around, grab it. Sauce it or dip it. And wait for a nice sweet kick to follow!

  • Cook wings for 12 minutes.
  • Flip the wings and cook another 12 minutes.
  • Increase the air fryer temperature to 400 F and cook another 6 minutes.

The Dirty Buffalo Spicy BBQ Wings

I’m a big fan of wings tossed in BBQ sauce. Really, they’re not much different than most wing sauces so why not? And there’s an amazing variety of BBQ sauces to be found at your local grocery store. Sometimes wing sauces (at least a good variety of them) can be harder to find. The Dirty Buffalo Spicy BBQ wings live up to their name. A great fairly traditional BBQ lightly sweet sauce, with just the right amount of heat. Nothing over-the-top crazy spicy here, just a nice gentle heat. And yes, you can definitely use this sauce on ribs. Or burgers. Or even dipping those boneless things they call wings!

Any Kind Of Wing. Only One Sauce.

For my The Dirty Buffalo Spicy BBQ wings I decided to make deep-fried wings. A fairly light crunchy coating makes for a great way to capture all that delicious sauce. First time I had them, I drizzled the wings with sauce and tossed them gently to coat. Second time I served the sauce on the side for dunking the wings instead. Why? Because no matter how gentle you are tossing your deep-fried wings, you’re going to knock off some of that delicious crunchiness. Dip them instead and you won’t lose a thing.

I like to kick back after a long day of work and just relax and enjoy. Same with my wings. I like to kick back and relax and enjoy every bite. They don’t have to be crazy spicy. It has just a nice little kick to it. And it’s not lacking in classic flavor. Not at all. La Preferida Extra Hot Wings

You can’t go wrong with a batch of La Preferida extra hot wings. The sauce is what I would call your pretty much standard Buffalo wing sauce. With a good kick. Seasoned perfectly. To be truthful, with a trusted name like La Preferida on the label, I was expecting a little something different. A twist. A little special seasoning. That didn’t happen. But, these are still good wings. If you’re in the market for a good Buffalo wing sauce, this is a great choice.

A Rarity?

I found a bottle of La Preferida extra hot wing sauce at a specialty grocery store in Cincinnati. I can’t find it online anywhere. Heck, I even tried contacting the company to see what the deal is and why I can’t find it anywhere. I wanted to make more La Preferida extra hot wings. I do love a good Buffalo wing sauce and this is up there with all the big names in wing sauces.

Kirkwood Honey BBQ Chicken Wings

I’m a fresh wing kinda guy. Usually. Sometimes I don’t have time to prepare wings from scratch. Or worse, I can’t find fresh wings in my grocery store. Or I just want to try something new. I was in Aldi the other day, picking up fresh wings (they have great fresh wings). I decided to check out the freezer cases before I headed to the checkout. And there they were. Kirkwood Honey BBQ chicken wings (and Buffalo style wings, too!). They looked good. I bought them. And I made them. And you know what? They were good!

Actual Wings. No Weird Stuff.

I’ve purchased some weird looking frozen wings. They were pre-battered, like these. But they didn’t look like wings. Kirkwood Honey BBQ chicken wings are pre-battered. And they look like wings. Because they are actual wings. They’re sauced just right, in a sauce with good BBQ flavor and a hint of sweetness. They’re meaty. I liked them. A lot.

These wings are sauced. A lot. No searching for sauce on these. It’s everywhere. So grab a pile of napkins!

Seven Servings. LOL.

The 22 ounce bag of wings I bought said it was 7 servings. Maybe somewhere in an alternate universe of really tiny people. Not me. I’d call them 4 servings at most. If you’re having a big party and need a bunch of wings, these are going to go over great. Just make sure you buy more than you think you’ll need. They’re good and people will want more. You bet I did.

I baked my wings on a silicone mat. I tried what the instructions on the bag stated and sprayed a baking pan with non-stick spray, but found that the wings still stuck. The silicone mat was much better.

Kirkwood Honey BBQ Chicken Wings

  • Preheat oven to 400 F.
  • If you have a silicone baking mat, line a baking sheet with the mat and add the wings. If you do not have a silicone baking mat, liberally spray a baking sheet with non-stick spray and add the wings. I prefer to start with the bone-side of the wings down (for flats). For the drums it doesn't matter.
  • Bake for 15 minutes. Gently turn the wings. I use a fork or rubber spatula for this. I've found that tongs will tend to tear the coating/skin if the wings stick any.
  • Bake another 10-15 minutes or until turning lightly golden in color and the wings internal temperature is 165 F.
  • Let the wings rest for 5 minutes before serving. They will still be piping hot so be careful!

Kinder’s Habanero Pineapple Air Fryer Dry Wings

These Kinder’s Habanero Pineapple air fryer dry wings are kinda different. The seasoning has a bit of a sweetness to it. A bit of tropical flavor. Oh then comes the heat. Good heat. A nice stingy heat. Each bite is a ‘welcome to the islands’ kiss. With a rough edge to it. These are great dry wings that are a bit different than the dry wings you usually get or make.

I like to double-season my Kinder’s Habanero Pineapple air fryer dry wings. First, I give my fresh wings a bit of a seasoning before going into the air fryer. It’s like a dry marinade in a way. You can even let the wings set for up to 2 hours, absorbing that flavor, before cooking. Then, after they come out of the fryer all golden brown with crispy skin, I toss them in more seasoning. While they are still hot. That’s when the oils are still on the surface of the wings, ready and willing to take on more seasoning. That’s when you hit them with more. Oh yeah!

  • Season the wings with the seasoning mix.
  • Preheat your air fryer to 350 F.
  • Working in batches if needed, air fry the wings for 12 minutes.
  • Flip the wings and air fry another 12 minutes.
  • Turn the air fryer temperature to 400 F and fry another 6 minutes or until the wings are golden brown.
  • Remove the wings and toss in more seasoning.

Notes

I prefer to season my wings immediately after cooking them. The seasoning will stick to the surface of the hot wings better than if you wait until they cool off.

Holy Garlic Dry Wings

The fine folks over at Fire and Smoke Society ain’t messin’ around. When they say that this all-purpose blend is blessed by Garlic Lovers you know they’re telling the truth. But these Holy Garlic dry wings aren’t just about garlic. Charcoal, chiles, brown sugar and plenty of ground black pepper join the party to make for a fantastic seasoning for wings, be they dry or wet. Me, I went dry so I could enjoy every bite of chicken and the seasoning without ‘fighting’ a sauce.

My Holy Garlic dry wings were made in an air fryer. You can cook them any way you want, just don’t be shy with the spices. I put a little of the delicious seasoning on the wings before cooking the wings. Then when they were cooked to perfection, I went to town with some more seasoning. The wonderful aroma of garlic filled the house. It was time to chow down on some delicious wings! And I did!

Kinder’s Gold BBQ Sauce Wings

It didn’t take me long to realize that if the label says ‘Kinder’s‘, it’s going to be great. Seasoning, sauces, it doesn’t matter what it is, I’m going to love it. That’s why I knew these Kinder’s Gold BBQ sauce wings would be great. Long before I even took that first bite, I knew I was in for something good. Sweet and tangy, the lightly smoky sauce is a wonderful combination of mustard, tomato and vinegar. There’s a lot going on in this sauce, and it’s all good.

Some gold BBQ sauces are a little too ‘gold’ for me. They’re too mustardy. Not this one. This sauce is perfectly balanced. I think of a wonderful marriage between a North Carolina mustard sauce and a KC tomato-based sauce with every bite. Kinder’s Gold BBQ sauce wings are a great thing.

I never go to the grocery store and browse the BBQ sauce aisle thinking just ‘BBQ’. I know that any sauce is going to be great on wings too. So sure, this is a great sauce on ribs. Or burgers. Or anything grilled. But it’s also amazing on wings. Give it a shot!
