Spicy Herb and Garlic Wings

I’m not sure what happened. Something came over me when I was making the sauce for these spicy herb and garlic wings. The aroma was crazy good. My mouth was watering. I was so anxious to try it on wings. Though I admit to having quite a few ‘samples’ of the sauce as the wings cooked…. This stuff is great. Savory, herby, garlicky with just the perfect amount of heat. All thanks to a package of soup mix from Lipton. Who would’ve thought?

My Goodness Are These Wings Ever Addicting

There’s absolutely nothing I’d change about these spicy herb and garlic wings. I really liked them. If you aren’t a fan of heat, you can definitely leave out the cayenne. But I liked it. It’s not overpowering by any stretch. And of course you can add more, or use less.

Spicy Sweet and Sour Wings

These spicy sweet and sour wings are proof that it really doesn’t take a pantry full of ingredients to make a fantastic wing sauce. It truly doesn’t get any easier than this. Just open two bottles, pour into a bowl and mix. That’s it. And the cool part is that you get to decide how sweet you want it to be. Or how spicy. It’s impossible to mess up this sauce.

I opted for Crystal Hot sauce in my spicy sweet and sour wings sauce. It’s got great flavor and just the right heat level for me. Sure, I’ve got hotter hot sauces around. If I was craving hotter wings, I would’ve used them. And if I’m more on the even milder side, I’ve got sauces for that too.

Spicy Sweet and Sour Wings

  • Heat the oil in a small saucepan over medium heat.
  • Add the garlic and saute for 1 minute.
  • Add the butter and stir until melted.
  • Add the remaining ingredients. Stir until well blended.
  • Remove from heat and keep at room temperature while your wings cook.

Spicy Mango Wings

Let’s all head to the islands and enjoy some delicious tropical-inspired wings! These spicy mango wings bring a little fruitiness, a little sweetness and as little or as much heat as you want! The sauce is the perfect consistency for wing-sticking enjoyment. I couldn’t find fresh habaneros in our market, so I used a good few shakes of habanero hot sauce instead. It hits my palate up front, then comes the fruity sweetness and all is good in the world again.

Spicy Mango Wings

Fresh ‘n Fruity. And Spicy.

I used frozen mango chunks when I made these spicy mango wings. They’re always in season! They’re easier to deal with than a fresh mango and always perfectly ripe. It’s nice to keep them on hand for recipes like this and anything else that calls for mango.

The sauce on these wings is also great on grilled or smoke ribs. Or slather it on grilled chicken.

  • 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock

For the sauce

  • 1 medium mango skinned, cubed
  • 3 habanero peppers stems removed (or use habanero hot sauce, to taste)
  • 2 cloves garlic minced
  • ½ teaspoon paprika
  • ¼ cup apple cider vinegar
  • 2 tablespoons lime juice
  • ¼ cup honey

Instructions

For the sauce

  • Place all ingredients into a food process or blender. Process until smooth.
  • Transfer the mix to a sauce pan over medium heat. Bring to a slow simmer and continue simmering while stirring often until thickened.
  • Reduce heat and keep warm until ready to use. Stir before adding to wings.

Sweet and Sour Spicy Wings

A friend of mine sent me this recipe for sweet and sour spicy wings. The recipe has been in his family for years and years and is always a big hit. You know it’s good if you end up making it over and over. This is one great wing sauce. And truthfully, it’d make for a great BBQ sauce too. It’s a bit sweet. It’s a bit sour. And it’s a bit spicy. All in perfect balance. This is a great, finger-licking good sauce that you’ll want to make again and again.

Flavor Perfection

A lot of my favorite flavors are in this sauce. Including celery salt. Anything with celery salt in it is going to make me happy. But it’s not overpowering. Like the other seasonings, it’s there and you taste it. It contributes to the overall flavor. It’s just one of the things that make these sweet and sour spicy wings so great.

Bring The Heat. Or Don’t.

You can decide how this sauce ends up being. Just adjust the hot sauce amount. If you’re not a fan of spicy start with 2 tablespoons first. Don’t worry, it won’t be crazy hot. Taste it. Add more if you want more of a kick.

Just remember, you can’t take it back out once you add it.

I do sometimes post some fairly spicy homemade wing sauces here on For The Wing. This isn’t one of them. I think these sweet and tangy Heinz 57 wings would be great to serve at a party or picnic or family get-together. No one’s gonna scream that they are spicy. But they will tell you they loved them.

But…. You could kick them up a bit if you want. They are on the sweet side. A bit. And just barely tangy. No reason you couldn’t sneak a little hot sauce in there. Maybe make a special batch for yourself and your heat-loving friends.

Sweet and Tangy Heinz 57 Wings

  • Combine the steak sauce and honey in a small saucepan over low heat.
  • Keep warm until ready to use.

For the wings

  • Combine the flour and seasoning in a large bowl.
  • Rinse the wings. Drain well but do not dry the wings.
  • Add the wings to the flour mixture and turn to coat well. Transfer to a plate and place in the fridge for 30 minutes.
  • Heat 3" of oil in a Dutch oven or deep fryer to 350 F.
  • Working in batches if necessary, fry the wings 8-10 minutes or until they reach 165 F. Transfer to a rack over a baking sheet or a paper towel-lined plate to drain.

Texa-Lina Chicken Wings

Could this be the last wing post here on For The Wing? Have I reached the top? The pinnacle of wing equivalent of Mt Everest? Is there no place to go from here? Well, let me tell you fellow wing-lovers, it’s close. Darned close. Because these Texa-Lina chicken wings are fantastic. I mean super-fantastic. This sauce is nothing but perfect. Oh yeah, there’s a bit of sweet. And there’s a bit of heat. With the perfect consistency. It’s a combination of Texas-style and Carolina-style BBQ sauces, all in a sauce that makes wings dance!

Steven Raichlen For The Win

The idea behind this sauce came from Steven Raichlen’s book, Barbecue Sauces, Rubs, and Marinades. It’s packed with great recipes, as you can imagine. Over 200 of them. So it makes sense that these Texa-Lina chicken wings were so good. The sauce is amazing. It started out as a vinegar and ketchup BBQ sauce and ended up on my wings. And that’s right where it belongs! Ok, it would be great on ribs and pulled pork and anything else, too!

I went with air-fried wings. Doesn’t really matter how you decide to cook your wings. I have a full guide for using pretty much any device you can imagine to make great wings, over and over. Check it out!

Texa-Lina Chicken Wings

For the sauce (makes enough for two batches of wings)

Instructions

For the sauce

  • Place all ingredients in a saucepan over medium heat.
  • Stir often until the mixture comes to a boil.
  • Reduce the heat to a simmer.
  • Continue stirring until the sauce thickens.
  • Keep warm until ready to use.

For the wings

  • Lightly spray the basket of your air fryer with non-stick spray. Preheat per manufacturer’s recommendation.
  • Combine the baking powder and wing seasoning and sprinkle over the wings. Toss to coat well.
  • Add the wings to the basket (be careful it’s hot!). If you have trouble fitting them without overlapping, stand the drumettes along the sides of the basket.
  • Cook at 360 F for 12 minutes for large wings, 10 minutes for smaller ones.
  • Carefully flip the wings (rotate the drumettes if they are standing) and cook another 12 minutes again (10 minutes for smaller wings) at 375 F.
  • Flip the wings one last time. Increase the temperature to 390 F and cook another 6 minutes (4 minutes for smaller wings).

I love traditional Buffalo-style chicken wings. And I love traditional barbecued chicken slathered in sauce. So why not combine my two loves into a single bite? Tangy Wings

Oh my goodness do I ever love this tangy wing sauce. Simple, no-frills ingredients go together in no time. The result is a kicked-up Buffalo wing sauce. Just the right amount of kick. Not too much vinegar. And the perfect consistency. The sauce sticks to the wings without being gloppy. This sauce is different in a lot of good ways. Make a double batch, you’ll need it!

Tangy Wings

No Frills. But Oh What A Thrill!

If you want your tangy wing sauce to have a bit more kick you can add a few pinches of cayenne. Or a few good shakes of hot sauce. But don’t go crazy with the heat. This sauce is pretty perfect as it is. It already gets a bit of heat from the Buffalo sauce. You could of course just use a hotter Buffalo sauce if you want!

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

Wicked Sticky Wings

Warning: The term ‘sticky’ is a tremendous understatement when it comes to describing these Wicked Sticky wings. Think sticky molasses, and then think stickier. Don’t spill the sauce (like someone I know might have done) or you will be cleaning counter tops and sinks and what-not for days. Trust me. Now, on to the wings…

These wings are crazy good. Wicked heat. Sticky sweet. I made them crispy style on my Char-Broil Big Easy, but you can make them anyway you like, from smoking them to deep frying them. It’s the sauce that shines here, and boy is it messy great. Wicked sticky wings are called that for a reason.

Sticky Really Doesn’t Describe It

I went simple with the dipping sauce for these wicked sticky wings. Just straight-out-of-the-bottle chilled Ranch dressing. Nothing fancy, just something to offset the kick of the sauce just a bit.

  • Remove from heat and let cool COMPLETELY before using. Even better, cover and refrigerate overnight. This will help the sauce stay sticky and thick.

Orange Wings

The idea for these orange chicken wings came to me quite easily. I had made a big, huge batch of orange chicken on my Char-Broil Big Easy and had a good amount of orange chicken sauce leftover.  Any time I have leftover sauce I think wings. The sauce has the perfect citrus flavor, with just a bit of heat and just a bit of sweetness. The perfect balance of flavors, making every wing a great taste experience. I loved it and could actually just drink the sauce.

I recommend only using fresh oranges for these orange chicken wings. After zesting one orange, juice it and then juice a few others until you get 3 cups. In a pinch, or when oranges aren’t in season, use a good quality orange juice. You want get that extra punch you get from the zest, but you’ll still end up with fantastic wings.

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

For the sauce

  • Saute the garlic in the oil in a medium saucepan for 2-3 minutes.
  • Add the remaining ingredients except for the cornstarch and water. Stir and bring to a simmer and let simmer for 20 minutes, stirring occasionally.
  • Stir together the cornstarch and water. Slowly whisk into the sauce. Bring to a slow boil while still stirring, then remove from heat. Sauce should be nice and thick but not gloppy. Add a bit of water if it’s too thick.
