How To Make Perfect Wings using a Vortex

I cook up a LOT of chicken wings. Sometimes I make them in the deep fryer, sometimes on the charcoal grill, sometimes on the gas grill, sometimes on the smoker, and often on the Char-Broil Big Easy. I love them any way, any time. One of my favorite ways to prepare wings is using a Vortex on my charcoal grill. This simple device gets your grill screamin’ hot, perfect for making those great crispy wings we all love. So grab a Vortex and read on! This is how to make perfect wings using a Vortex!

The Search…

I am always on a quest for the next best wing cooking idea. Recently, I discovered the best way for making crispy wings on the Char-Broil Big Easy, which came out fantastic. But, I was still looking for the best way to get crispy wings on my charcoal grill. That’s when I discovered the Vortex and Vortex chicken wings are amazing. The Vortex is an insert for your grill that let’s you concentrate the charcoal heat, making for an incredibly hot fire. As you can see below, the wings ring the Vortex, getting super hot and in just a while, crispy. And it couldn’t get any easier.

Best Thing Ever…

I couldn’t be more happy with my Vortex purchase. I purchased the small-sized model, which works fantastic on my old 18″ Weber kettle and 22″ Weber Performer grills. But, a larger model is available for the 22″-26″ cookers.

Since I originally posting this recipe, I’ve made wings on my Vortex hundreds of times. I’ve found that rotating the lid isn’t so critical (specially when cooking on a smaller grill such as the Jumbo Joe). For a little smoky flavor, throw a nice chunk of your favorite wood (I like hickory or cherry) over the Vortex about 5 minutes before you put your wings on.

Perfect Wings using a Vortex

Perfect wings every time.

Instructions

  • Place the wings into a large resealable container or baggie.
  • Add the oil and seasoning. Seal and shake to coat well.
  • Refrigerate for 3 hours.
  • Place the Vortex into the center of your grill. Open the bottom vents on your grill by 1/3, while keeping the top vent open completely.
  • Light a charcoal chimney full of charcoal. Alternatively, you can fill your Vortex with charcoal and light them inside the unit.
  • Let the charcoal get fully ashed over then add to the Vortex.
  • Add the chicken as shown in the picture above. For the flats have the skin side up, and for the drumettes keep the meaty part away from the fire.
  • Close the grill and cook for 15 minutes.
  • Rotate the lid 90 degrees and cook for another 15 minutes.
  • Flip the wings. Rotate another 90 degrees and cook 15 more minutes.
  • Check if the wings are as crispy as you like. If not, rotate another 90 degrees and cook another 15 minutes.

Notes

I’ve not found that rotating the grill has an affect on how great this wings turn out. So don’t sweat it if you forget to do it.

Buffalo Wild Wings Salt and Vinegar Dry Wings

The bottle says right on it, in big letters, ‘Salt and Vinegar’. It’s no fib, either. No false advertising there. Nothing but truth. Buffalo Wild Wings Salt and Vinegar wing seasoning brings the salt and vinegar. Don’t open it and stick your nose in and take a big whiff unless you’re prepared for the vinegar, because it’s coming.

The Perfect Combination of Salt and Vinegar

I usually only season my dry wings after cooking. But for extra flavor, try tossing the raw wings with a few tablespoons of vegetable oil and then season well. Cook as desired, then season more just before serving.

This is my first time using a seasoning from Buffalo Wild Wings. I loved the flavor for sure. Good thing I bought a bottle of each of their available flavors to try!

Remember that if you have to refrigerate your open bottle of wing sauce to let it sit out on the counter for at least 30 minutes before using. You don’t want to ‘shock’ hot, just-cooked wings with a cold sauce.

Buffalo Wild Wings Lemon Pepper Wing Sauce Wings

It says it right there on the label of Buffalo Wild Wings Lemon Pepper wing sauce: “with Bright Citrus”. What does that mean, you might ask? It means when you take that first bite of wings tossed in the sauce you’ll get a big ole hit of lemon citrus. There’s no missing it. No mistaking it. It’s citrus and it’s citrus big time. Oh, there’s pepper too, but the citrus is up front and jumps out first. I found this to be a different, tasty sauce. And somewhat unexpected.

Delightfully Citrusy

You won’t confuse Buffalo Wild Wings Lemon Pepper wing sauce with their wing seasoning that I use to make tremendous dry wings. The citrus flavor really distinguishes it from anything else I’ve tried. I can see it being excellent on grilled chicken breasts or fish, and as a marinade for either.

Buffalo Wild Wings Jammin’ Jalapeno Wing Sauce Wings

Where have I been that I haven’t tried Buffalo Wild Wings Jammin’ Jalapeno wing sauce? I mean, dang I love this sauce! Just a bit spicy (perfectly so). A hint of lime (but not too lime-y!). And just a bit of Tequila (not much but it adds a little something). I truly enjoyed this sauce, it’s one of my all-time store-bought favorites. If you’re looking for something different, something that stands out from your ‘usual’ Buffalo wing sauce, this sauce is for you.

Great Sauces, Grab yourself Some!

This wing sauce is just one of the sauces I picked up at my local BW3 the other day. I admit it, I backed up the truck and bought one of each. And all of their wing seasonings too. There’s just no point in picking up one or two. There are wings to make. This isn’t the time to dilly dally.

Buffalo Wild Wings Orange Chicken Wing Sauce Wings

My wife and I slipped off to lunch at one of our nearby Buffalo Wild Wing restaurants the other day. I say slipped because well, I might have taken longer than my allotted lunch break time. Oh well! If I get fired it’ll be worth it because our service and wings were delicious! And while we were there I decided to see what new sauces and seasonings there were, and of course, grab a few bottles to take home with me. The first one I had to try was the Buffalo Wild Wings Orange Chicken wing sauce. We both loved this sauce. It’s not overly orange-forward. It’s there, you get the orange flavor and aroma, but it’s not overwhelming. I’d call it a mild orange flavor. Ditto the heat. There, but not overpowering. The sauce is a bit sweet, but again, not too sweet. It’s a nice pleasant sauce that we both found to be quite enjoyable.

A Kiss of Orange

Buffalo Wild Wings Orange Chicken wing sauce is exactly what I expect from BW3s. A great sauce and at a great price. We enjoyed our lunch in the restaurant too. If there’s one near you I encourage you to join their rewards program and pick up some sauces and seasonings the next time you’re there.

Kinder’s Spicy Teriyaki Sauce Wings

Well, I’m up to 4 days in a row now devouring some Kinder’s Spicy Teriyaki sauce wings for lunch. Yeah, you’re probably not supposed to eat wings 4 days in a row. I promise to eat a salad tomorrow (maybe). But I can’t stop myself. I absolutely love the sauce on these wings. I already knew Kinder’s makes a great teriyaki sauce, but now they went and added spicy red jalapeno and ginger and taken this sauce to a place I could only dream of. This is what teriyaki sauce should be.

I absolutely love this sauce.

Just Make Some Wings

It really doesn’t matter what wings you put this sauce on. Fresh-cooked. Frozen. Doesn’t make a difference. Well, it kinda does. Don’t use anything that’s already heavily seasoned. You don’t want anything to fight with this delicious sauce. I made simple air-fryer Kinder’s Spicy Teriyaki sauce wings and I went light on any seasoning I used. I could not get enough of the sauce. And I wanted more. And more.

Wing-Time Mild Buffalo Wing Sauce Wings

The Buffalo-style sauces from Wing-Time have always been a big hit with me. They always have the right heat level, from the hot to these Wing-Time mild Buffalo wing sauce wings. They always have fantastic Buffalo-inspired flavors. That perfect balance of vinegar, butter and spices. Always finger-licking good, I’ve always been a fan. I enjoy my wings tossed in this sauce. Wing Magic Smoky Lime Dry Wings

Dry wings are popular for a reason. There are a lot of great wing seasonings on the market. You don’t have to use them to make dry wings, you can instead use them to season wings before you sauce them. Often, though, I find myself going the dry route so I can enjoy the seasoning without it ‘fighting’ a sauce. Wing Magic Smoky Lime seasoning dry wings are a great reason why I do wings this way. This seasoning has a lightly smoky flavor with a little kick. You bet it’s just the right amount of sweet. And oh, lime! Delicious citrusy lime comes along for a decidedly different taste. Terrapin Ridge Farms Sweet Heat Wing Sauce Wings

This is the second bottle of Terrapin Ridge Farms wing sauce that I’ve tried. The first, Hot Pepper Bacon, was a major hit in my household. But I cannot say it was my favorite…. because Terrapin Ridge Farms Sweet Heat wing sauce is at least as good! This sauce has a hint of mustard flavor, but not too much so that it’s too strong. It’s a little on the sweet side, and I mean that in a good way. The heat level is just perfect for me. Not too spicy, and not too mild.

Terrapin Ridge Farms Sweet Heat wing sauce is a great sauce for wings. I picked up my bottle at a Buc-ee’s in Sevierville, TN, but you can order them online also. I’d definitely suggest you get more than one, and that you get every flavor because I’m a big fan of this company’s sauces. You will be too.

I also cannot wait to try this sauce on grilled ribs or whole chicken.
