Sweet heat. And then some. I should’ve known I’d love these Dragon Fire wings so much that I would want more. Such a simple sauce but oh so addicting. Don’t let the sweetness of that first bite fool you. There’s heat coming and it’s coming fast. No question about it, these are easily one of my favorite wings of all time.

Use Different Preserves For Different Tastes

I used apricot preserves to make the Dragon Fire wings sauce. Peach would also work just fine. You can also substitute for the Sriracha sauce. Any good hot sauce or even Buffalo wing sauce would work just as well.  No matter what you substitute, if anything, you won’t find an easier wing sauce anywhere. Well, ok, you could just open a bottle of sauce and pour it on your wings I guess. That would be easier.

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

Drunken BBQ Wings

I normally roast my wings in my Char-Broil Big Easy or grill them over charcoal, so I was a little skeptical about this recipe for drunken BBQ chicken wings where the wings are slow-cooked in a Dutch oven. But, to my surprise, the final result was incredibly tasty and oh-so-tender. You’ll love the BBQ sauce on these wings. It’s a very traditional ketchup-based sauce with beer added in for a nice change.

Broiler Time

To get a little crisp and color, I put the wings under the broiler for a few minutes after they were completely cooked. You can also cook these wings in a crockpot. You’ll still want to brown them under the broiler a bit before serving. Or better yet, toss them on a hot grill for a bit.

I store my leftover homemade sauces in squeeze bottles. If refrigerated, I set them out an hour before using so they come to room temperature. You don’t want to put cold sauce on hot wings!

Drunken BBQ Wings

Ingredients

For the wings

  • 2-3 pounds chicken wings flats and drumettes separated, tips saved to make stock
  • 1 bottle beer
  • 2 tablespoons your favorite BBQ rub

For the BBQ sauce

Instructions

  • Preheat your oven to 325 F.
  • Cover the bottom of a large Dutch oven with the wings. Sprinkle with the BBQ rub. Add another layer of wings and rub until all of the wings are in the pot.
  • Slowly add the bottle of beer to the pot.
  • Cover the pot with foil (unless yours has a very tight-fitting lid) and add the lid.
  • Place in oven for about an hour or until the chicken is done, but not quite falling off the bone.
  • Meanwhile, make the BBQ sauce by combining the remaining ingredients in a small pot over medium heat. Whisk to combine. Bring to a boil, reduce to a simmer and continue simmering for 10 minutes. Remove from heat until ready to use.
  • Remove pot from oven. Transfer wings to a rack over a baking pan.
  • Baste wings with the sauce. Place under broiler for a few minutes until starting to brown.
  • Flip wings, baste again, and place back under the broiler for a minute.
  • Flip wings one more time, baste, and place under broiler until they are the color you desire.
  • Serve with your favorite dipping sauce.
  • To make these wings in a crockpot, follow the directions above, except layer the wings in the bottom of a crockpot. Cover and cook on low 5-6 hours.

Easy Chili-Ranch Wings

I kinda went into making these easy chili-Ranch wings with low expectations. The recipe seemed pretty simple. But oh, did I ever love them. It helped that I’m a huge chili fan. Just two ingredients, chili powder and flour, made for great crunchy, flavorful wings. A little Ranch dressing on the side for dipping and I was one happy wing-aholic.

I admit it, I added more chili powder than the recipe calls for. I’m not sure you’ll want to do that. Like I said, I love chili flavors. If you’re a fan but not a huge fan, just go with the recipe as it’s written and you’ll have great wings. You can always make them again. I did.

Garlic Parmesan Wings

These savory garlic Parmesan chicken wings were just absolutely fantastic. Nutty Parmesan cheese pairs well with earthy garlic. For me, just a little bit of cool Ranch dressing for dipping is all that is required. I want to enjoy the flavor of the wings, so I just dip a bit, if at all. The sauce is mighty finger-licking good. And it’s loaded with garlic, my favorite.

Great Wings. Very Great Wings.

I cooked these garlic Parmesan wings on my Weber charcoal grill using the Vortex, which gives me that great crunchy skin and fantastic grilled flavor without a lot of effort. In fact, just about no effort whatsoever. It takes about 45 minutes for me to get the charcoal in the Vortex good and hot. Then it takes about another 45 minutes to cook the wings. The wings take on a great hint of charcoal flavor to boot, which is a nice change from deep-fried or even air-fried wings.

Grippo’s-Crusted Wings

There’s a fine line between fried wings and fried chicken. You know, the fried chicken your grandma would make that is brined in buttermilk, coated in seasoned in flour, and fried to perfection. These Grippo’s-crusted wings come close to crossing that line. But seriously, who cares? They’re just great tasting wings no matter what. You get just the right hint of that Grippo’s BBQ chip flavor. As addicting as the chips are, so are these wings. Just as I can sit down and eat a bag of the chips, I can eat a big batch of these wings just as quickly!

Grippo’s-Crusted Wings

For the wings

  • 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock

For the dredge (makes more than you'll need for 6 servings)

For the Grippo's coating

Instructions

  • Combine all of the dredge ingredients (don't add the chips yet). Store in an air-tight container. You won't need all of it for a batch of wings, so keep the extra on hand for frying wings or chicken pieces.
  • When you are ready to make the wings, place just enough of the dredge into a bowl for the wings. Don't go crazy with it, less is more.
  • Add a good few handfuls of chips (to taste) to a resealable bag. Seal and crush with the edge of your hand. Don't pulverize them, you want some texture, but you don't want any big pieces either. Add to the dredge and mix well.
  • To use, rinse your wings and pat dry. Place into a bowl or pie plate.
  • Sprinkle with coating as desired. Toss or roll to coat.
  • Transfer to the refrigerator for 30 minutes.
  • Sprinkle again with a small amount of coating. Again toss or roll to coat.
  • Return to the fridge for 30 minutes.
  • To fry, bring a few inches of oil to 350 F. Fry wings 9-12 minutes or until done, turning as they cook. Remove to a wire rack or paper towel-lined plate to drain.
  • Serve.

Honey Old Bay Wings

My addiction to Old Bay seasoning began long ago. And as often as possible, I feed my addiction. Seafood and wings are my favorite uses of the classic seasoning. These honey Old Bay wings not only have that great seafood seasoning flavor, they have a bit of sweetness too. And a bit of heat. Not a lot, but just a hint. Nothing to overpower the main reason I made these wings: Old Bay flavor. I’m a big time Old Bay addict and I’m ok admitting it.

The Perfect Wings?

My favorite variation on these honey Old Bay wings is to leave out the cayenne pepper and substitute Mike’s Hot Honey for ‘regular’ honey instead. Mike’s Hot Honey is just that: hot danged honey! It’s creamy smooth and packs a serious kick. It’s not for the faint of heart, so if you’re a bit worried about the heat, try adding just a bit of it to your ‘regular’ honey and give it a taste.

Jalapeno Peach Wings

I think it’s safe to say that I am addicted to chicken wings. They’re one of the most versatile dishes you can make. There are literally thousands of different sauces and seasonings for them. When I walk thru the grocery store I always look to see what is in season. Chances are, whatever it is, it can be made into a wing sauce. These jalapeno peach wings are a great example. That wonderful peach flavor with just a little spicy kick. Add a little sweetness and a nice vinegary snap and you end up with fantastic tasting wings.

  • Place the peaches, jalapenos, onion and ginger into a food processor. Pulse a few times. You want to shred the ingredients but not puree them.
  • Transfer to a saucepan. Add remaining ingredients. Bring to a boil then reduce to a simmer. Continue simmering, stirring occasionally until thickened.

Kirkwood Buffalo Style Chicken Wings

I’m a fresh wing kinda guy. Usually. Sometimes I don’t have time to prepare wings from scratch. Or worse, I can’t find fresh wings in my grocery store. Or I just want to try something new. I was in Aldi the other day, picking up fresh wings (they have great fresh wings). I decided to check out the freezer cases before I headed to the checkout. And there they were. Kirkwood Buffalo style chicken wings. They looked good. I bought them. And I made them. And you know what? They were good!

Actual Wings. No Weird Stuff.

I’ve purchased some weird looking frozen wings. They were pre-battered, like these. But they didn’t look like wings. Kirkwood Buffalo style chicken wings are pre-battered. And they look like wings. Because they are actual wings. They’re sauced just right, in a sauce with good Buffalo flavor and a hint of heat. They’re meaty. I liked them. A lot.

Seven Servings. LOL.

The 22 ounce bag of wings I bought said it was 7 servings. Maybe somewhere in an alternate universe of really tiny people. Not me. I’d call them 4 servings at most. If you’re having a big party and need a bunch of wings, these are going to go over great. Just make sure you buy more than you think you’ll need. They’re good and people will want more. You bet I did.

I baked my wings on a silicone mat. I tried what the instructions on the bag stated and sprayed a baking pan with non-stick spray, but found that the wings still stuck. The silicone mat was much better.

I like to use these little dipping cups for my wing dipping sauce. These Buffalo wings are great with a little blue cheese or ranch dressing!

Kirkwood Buffalo Style Chicken Wings

  • Preheat oven to 400 F.
  • If you have a silicone baking mat, line a baking sheet with the mat and add the wings. If you do not have a silicone baking mat, liberally spray a baking sheet with non-stick spray and add the wings. I prefer to start with the bone-side of the wings down (for flats). For the drums it doesn't matter.
  • Bake for 15 minutes. Gently turn the wings. I use a fork or rubber spatula for this. I've found that tongs will tend to tear the coating/skin if the wings stick any.
  • Bake another 10-15 minutes or until turning lightly golden in color and the wings internal temperature is 165 F.
  • Let the wings rest for 5 minutes before serving. They will still be piping hot so be careful!

I know I’ve got a great wing sauce when I consider getting a spoon and just eating it right out of the pan. These Korean BBQ wings were fantastic, thanks to a delicious sauce that packs just the right amount of heat. And it’s the perfect, spot-on consistency to boot. There were darned good wings.

Asian-Inspired Wing Greatness

I made the sauce exactly as you see below. You’ll notice that it does call for a good amount of sesame oil. If you find sesame oil a bit strong you might want to start with half the amount listed and taste to see if you want more. I went full-bore and loved it.

The sauce for these Korean BBQ wings isn’t just great on wings, either. I strongly recommend you at least double the recipe. You’ll want some sauce on hand to brush (or dip) grilled chicken. It’s also fantastic on smoked or grilled ribs.

Mambo Wings

It’s amazing how many great chicken wing recipes there are. Everything from the mild to the sweet to the volcanic hot. That’s why I love them, I can have a different flavor every day. Well, almost every day. I don’t actually eat wings every day, although I’m sure I could and never ever get bored with them.

I recently stumbled upon Mambo sauce (among many other great recipes) on a blog by Levy Restaurants, a family of different restaurants around the US. So, I thought “Now, here’s something different. A tomato-based wing sauce with Asian flavors. I gotta try it!” So I did, and boy, was I happy that I did.

Sweet Heat Perfection

Mambo sauce, like many great wing sauces, is a combination of sweet (a little pineapple and sugar) and acid (white vinegar and hot sauce), and the best part, a bit of heat (thank you Frank’s RedHot!). You’ll start out thinking you’re having a teriyaki-inspired wing, and finish up thinking you had a Buffalo wing. It’s great, like a journey of flavors.

According to the Levy Restaurant’s blog, Mambo sauce is also great on fries. I can definitely see that. And I will also try it as a steak marinade.
