Easy Buttermilk-Battered Wings

I can’t help it if I’m as addicted to fried chicken wings as I am to fried chicken. Well, technically they’re the same thing, no? The difference for me is that I serve mine with a bowl of Buffalo sauce on the side. That’s how I justify posting these easy buttermilk-battered wings. That and the fact that the coating is out-of-this-world tasty and crunchy. The wings are juicy and flavorful. That’s why I’m here: good wings!

Easy Buttermilk-Battered Wings

Add A Little Classic Flavor

You can make your easy buttermilk-battered wings a bit more Buffalo-style by adding a few good shakes of your favorite Buffalo wing sauce to the buttermilk mixture. You’ll taste that great classic flavor in each bite, whether you serve the wings with more sauce or not.

No Tossing Zone

One thing I do not do with deep-fried wings that have a thicker coating and that is toss them in sauce. As soon as you do that you lose half that crunchiness that you worked so hard to obtain. No, I put the wings into a large bowl and drizzle them with the sauce first. Then I stir them gently using a rubber spatula to coat them.

You can also just do as I did in the picture above: serve with sauce on the side for dipping. Just as good, just as spicy.

Like Your Wings Dry?

I love dry wings. I love seasoning the heck out of my wings and just enjoying the flavor. No sauce. You can do that too with these wings. Just add your favorite dry wing seasoning to the flour mixture (you can leave out the salt and paprika from the recipe) and cook them as stated. When they come out of the fryer, hit those wings with even more seasoning. While they’re still hot. So it sticks. In minutes (after they cool down just a bit) you’ll be enjoying delicious dry wings!

Easy Buttermilk-Battered Wings

Ingredients

Instructions

  • Combine the buttermilk and 1/2 teaspoon salt in a resealable container or a medium bowl.
  • Add the wings and toss to coat.
  • Refrigerate for 30 minutes.
  • Heat 2-3" of oil in a deep-fryer or Dutch oven.
  • In a large bowl, combine the flour, paprika and remaining salt.
  • Remove the wings from the buttermilk mixture and shake off any excess.
  • Transfer to the flour mixture and toss to coat well.
  • Deep fry the wings until done, 8-12 minutes. Transfer to a paper towel-lined plate to drain.
  • Serve hot.

Notes

Serve with your favorite wing sauce on the side, for dipping.

Wingstop Lemon Pepper Wings (Copycat Recipe)

Yowsa. I bit into these copycat Wingstop Lemon Pepper wings thinking that’d be good, sure. But I had no idea how much I’d really like them. Crunchy, crispy skin. Not overly battered. Not too much like grandma’s fried chicken. The sauce, easy as heck to make, did me in. I mean, seriously, it’s just butter and lemon pepper seasoning but it was gooood! I loved it. It’s definitely finger-licking good and then some!

Lemon Pepper And Butter: The Perfect Combination

When I make these copycat Wingstop Lemon Pepper wings again (which will be soon), I’m adding more lemon pepper seasoning. No, this isn’t the first time I’ve used it, but for some reason, I found the combination of the lemony goodness and butter to make for some super-great wings.

How About An Air Fryer?

To make these wings I used my deep-fryer. Ultimately, I think that deep-frying makes for the best wings. But not everyone has a deep-fryer, or wants to go through the trouble of setting one up, or deal with the cleanup. You can make these wings using a air-fryer too. To so, follow my recipe for the best super-crispy air fried wings. As the wings are cooking make the seasoning as below, just combining the butter and lemon pepper seasoning in a small saucepan over medium heat. When the wings are done, remove them from the air fryer to a large bowl. Drizzle with the seasoning mix and turn gently to coat. Serve and devour!

What About Baking Them Instead?

I haven’t forgotten about those that prefer to bake their wings! Much like the air-fried approach, the baked version does not give you that super-crunchy flour-produced texture. But it does give you great, crunchy skin still. And you get the wonderful flavor from the sauce, which is ultimate the real star of the show here. All you have to do is follow my recipe for the best crispy baked wings. Make the seasoning as below while the wings are baking. When the wings are done, remove them from the oven and place in a large bowl. Drizzle with the seasoning mix and turn gently to coat. Serve and enjoy!

Wingstop Lemon Pepper Wings (Copycat Recipe)

Ingredients

For the wings

  • 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock

For the frying

For the dredge

For the seasoning

Instructions

  • Preheat oven to 350 F.
  • Heat 2-3" of oil in a deep fryer or Dutch oven.
  • Prepare the dredge by combining all of the dredge ingredients in a large bowl.
  • Dredge the wings in the flour mixture. Coating well. Shake off any excess.
  • Working in batches if needed, fry the wings for 5-7 minutes or until just golden brown.
  • Transfer the wings to a wire rack.
  • Transfer all of the wings to the oven and finish cooking until golden brown, 15-20 minutes.
  • While the wings are cooking melt the butter in a medium saucepan over medium heat and stir in the seasoning. Keep warm until ready to use.
  • Once the wings are done drizzle them with the butter mixture and toss gently to coat. Click here for our guide on how to sauce your wings.

Wingstop Blue Cheese Dressing (Copycat Recipe)

I’m a fan of dipping wings (especially spicy ones) into a nice cooling dressing. Blue cheese, Ranch, either will do. But, when I go for the blue cheese I am a tad bit picky. I can’t do the big cheese crumbles. I love them on salads, but they aren’t really for wings. For one reason: they fall off. Smaller crumbles stick to the wings and make for a better experience. That’s why I like making this Wingstop blue cheese copycat recipe dressing at home. I can get those crumbles just like I like them.

The Right Crumble

Now as much as I said I like the crumbles in my copycat Wingstop blue cheese dressing to be small and not huge, there’s a limit to it. Too small and you lose that great texture. Sure you’ll still get great blue cheese and Ranch flavors, but that’s about it. So don’t go crazy. We aren’t making blue cheese soup here. We do still want some thickness to it!

It’s Just Not The Time For The Light Stuff

Ok, I get that some folks might want to go the ‘light’ route when they make this dressing. I don’t blame them. But, and hear me out, this isn’t the time for that. Splurge. You’ve got a batch of delicious wings. You want a batch of delicious blue cheese dressing to dunk them in. This really isn’t the best time for compromising. Use real buttermilk and good mayo. Save the light stuff for tomorrow’s salad!
