I could spend hours at Pepper Palace store. In fact, I’ve spent many an hour at Pepper Palace and in several different cities to boot. Of course, the first section I run to is where the wing sauces are. Then I head to the other sauces. BBBQ, dipping… whatever sauces. That’s because just about any sauce can be put on wings. Pepper Palace Sweet But Sassy wings are proof that this sauce is perfect on wings. Lightly sweet and just spicy enough, this chili-sauce-like sauce is a welcome break from traditional wing sauces.

Pepper Palace Sweet But Sassy sauce starts out a bit thin (hey, it was born a dipping sauce), but it’ll set up once it gets on your hot wings. And, nothing wrong with having a little bowl of extra sauce on the side for dipping your wings. Just remember, if your sauce has been refrigerated, let it set out for at least an hour before using. You don’t want to put a cold sauce on hot wings.

- 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock
