Some of these recipes use homemade sauces made completely from scratch, and those are where you can really play around. I’m talking classic Buffalo with melted butter, Frank’s-style hot sauce, garlic, and a splash of vinegar simmered until smooth. There’s a smoked chipotle lime sauce with adobo, honey, and fresh lime zest, a sticky gochujang and brown sugar glaze that caramelizes in the oven, and a habanero mango sauce that is sweet, tropical, and seriously hot. When you make it yourself, you control everything: how much heat, how much tang, how much butter or sweetness to balance it out.

Other recipes on the list keep it simple and lean on store-bought sauces, because sometimes you want amazing wings without a sink full of pans. I have a few favorites I always keep in the fridge for this exact reason.
