- 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock
For the sauce (double the amounts if you like your wings saucy)
For the sauce
Melt the butter in a pan over low heat.
Add the remaining ingredients and whisk well.
Bring to a slow simmer and simmer for 3-5 minutes, whisking often.
Reduce heat to lowest setting and keep warm until ready to use. Whisk just before using to combine the ingredients if they have separated.
