Spicy Mango Wings

For the wings
- 3-4 pounds chicken wings flats and drumettes separated, tips saved to make stock
For the sauce
- 1 medium mango skinned, cubed
- 3 habanero peppers stems removed (or use habanero hot sauce, to taste)
- 2 cloves garlic minced
- ½ teaspoon paprika
- ¼ cup apple cider vinegar
- 2 tablespoons lime juice
- ¼ cup honey
For the sauce
Place all ingredients into a food process or blender. Process until smooth.
Transfer the mix to a sauce pan over medium heat. Bring to a slow simmer and continue simmering while stirring often until thickened.
Reduce heat and keep warm until ready to use. Stir before adding to wings.
